Best Vegan Meatloaf Recipe! (Impossible Burger)

Panko breadcrumbs*

unsweetened vegan plant milk*

tomato paste*

vegan worcestershire sauce*, I

fresh chopped parsley, packed

garlic,

thyme

onion

garlic

salt

black pepper

ketchup*

apple cider vinegar

brown sugar, packed

Preheat oven to 400° Line a 9x13 casserole dish with parchment paper. Set aside.

In a small bowl mix together the breadcrumbs and vegan plant milk. Set aside.

In a large mixing bowl add the rest of ingredients, Now add in the breadcrumb/milk mixture. Mix everything together well.

Add the meatloaf mix on top of the parchment paper and form into a rectangular loaf shape. Bake uncovered for 35 minutes.

While loaf is baking mix the ketchup, brown sugar and vinegar together in a bowl. This is the glaze.

Remove loaf from oven. Spoon glaze evenly over the top and sides of loaf. Return to oven and bake uncovered for an additional 10 minutes. Place on cutting board. Slice and enjoy! Serve with mashed potatoes, peas and a simple green salad! This was delicious, thank you! I’ve tried many vegan meatloaf recipes over the years and this one far outshines all the others! My family really enjoyed and my husband even commented that we should invite his sister over (she claims that she is not a fan of vegan food) and make this for her because there is no way anyone could complain about this meal! I did not use the glaze, but made gravy using “Better Than Boullion No-Beef Base”, mashed potatoes, and green beans.

I had to just say how absolutely delicious this was! Not to mention so simple. I’m always thrilled when my family wholeheartedly enjoys a meal and eats with great enthusiasm. Thanks for sharing!

Best Vegan Meatloaf (Impossible Burger)

Cinnamon baked pears are a beautiful and healthy dessert. Sweet, soft, and covered in delicious cinnamon and chopped walnuts, this recipe is a great fall or Christmas dessert. Vegan, vegetarian, refined sugar-free, and gluten-free.

Easy Cinnamon Baked Pears with Walnuts

pears (I used Bartlett pears

cinnamon

maple syrup

lemon juice

vanilla extract

walnuts (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

Pear Preparation: Cut your pears in half and remove the core using a melon baller or a small spoon. Keep each pear half with the skin side down and place them in a 9×13 baking dish or large baking sheet lined with parchment paper.

Cinnamon Magic: Dust the pear halves evenly with the cinnamon.

Drizzle of Flavor: Mix the maple syrup, lemon juice, and vanilla together and evenly top the pears.

Bake to Perfection: Flip the pears, cut side down, and bake for 20-25 minutes until the pears are fork tender. Once the initial cooking time has expired, carefully remove the pears from the oven, flip cut-side up, sprinkle with the walnuts, and bake for 5-6 minutes.

Serve and Enjoy: These warm, fragrant pears are fantastic on their own, but they’re even better with a scoop of vanilla ice cream (vegan, of course) or a dollop of my homemade whipped cream. Date caramel sauce can also be drizzled for an extra touch of decadence.

I made this to bring to our Christmas family gathering, and it was a hit! I used Bosc pears. Instead of sprinkling them with cinnamon before baking, I added the cinnamon to the walnut topping instead, which I modified by increasing the amount to a half cup and adding a teaspoon of date sugar, a pinch of cinnamon, and a tablespoon of maple syrup so that everything holds together. Yum! Thanks for this easy and delicious recipe, Shane!
