Turkish Mercimek Koftesi is a simple vegetarian lentil meatball recipe that can be enjoyed hot or cold. It's an easy to make appetiser, packed with aromatic spices and herbs, and high in protein and fibre thanks to the lentil content.

tsp peppercorn, ground

tbsp parsley, chopped

Wash the lentils, then

Wash the lentils, then transfer them to a large saucepan and add 5 cups of water. Cook the lentils covered are fully tender (usually around 15-20 minutes).

Taste the mixture and add a little more salt, pepper to taste.

Take a bit of mixture, form it into a long cylinder and place it on a platter. Repeat with the rest of the mixture.

Serve with slices of

Serve with slices of lemon on the side and enjoy!
