Amaretto Peach Cobbler is the ultimate summer dessert. Sweet peaches are tossed in amaretto liqueur and topped with a (grain-free!) almond flour and coconut sugar topping. You would NEVER know this is a healthy dessert recipe!

Amaretto Peach Cobbler

peaches (about 3 lb.)

tapioca starch

amaretto

almond flour

coconut sugar

baking powder

sea salt

vanilla

coconut oil

almonds

preheat oven

prepare the peaches

Thinly slice the peaches (I like to leave the skin on) and put them in a 9x11 inch baking dish. Sprinkle the peaches with the tapioca starch and gently toss to combine. Pour the amaretto over the top.

make the topping

In a medium-sized bowl, mix together all of the cobbler topping ingredients. Drop the dough in 6 pieces on top of the peaches and spread it out a little bit. You still want some peaches peeking out.

bake

Bake in the preheated oven for 20 minutes. Check the cobbler and if it is starting to brown cover it loosely with aluminum foil. Continue to bake for 10 more minutes, or until the cobbler is juicy and bubbling.

let cool

Remove the cobbler from the oven and let it cool for 15 minutes before digging in.

Single Serving Peach Cobbler

Nonstick cooking spray

peach, diced

brown sugar

salt

(25 g) all purpose flour*

cinnamon

neutral oil butter

Prep: 

preheat the oven or toaster oven to 350F. Lightly grease a small oven-safe ramekin or dish with nonstick cooking spray or oil.

Filling: 

add the diced peach, brown sugar, and salt directly to the ramekin and use a spatula to mix well, until the brown sugar has dissolved. Gently press on the peach mixture to pack it down into the ramekin more.

Cobbler: 

in a separate small bowl, add the flour, baking powder, cinnamon, salt, sugar, oil, and non-dairy milk. Mix with a fork or whisk until combined (some small lumps may remain). Use a spatula to pour this mixture over the peaches, spreading it evenly across the top.

Bake: 

bake in the middle rack of the oven for 23-27 minutes, until the cobbler is slightly golden and a toothpick comes out cleanly. Carefully remove from the oven and let sit for 5 or so minutes to cool.

Serve: 

serve warm as-is, or as desired! This recipe is best enjoyed fresh, but leftovers can be covered and stored in the fridge for up to 2 days &#8211; reheat in the microwave or oven.
