Step 1
preheat the oven or toaster oven to 350F. Lightly grease a small oven-safe ramekin or dish with nonstick cooking spray or oil.

add the diced peach, brown sugar, and salt directly to the ramekin and use a spatula to mix well, until the brown sugar has dissolved. Gently press on the peach mixture to pack it down into the ramekin more.
Step 3
in a separate small bowl, add the flour, baking powder, cinnamon, salt, sugar, oil, and non-dairy milk. Mix with a fork or whisk until combined (some small lumps may remain). Use a spatula to pour this mixture over the peaches, spreading it evenly across the top.
Step 4
bake in the middle rack of the oven for 23-27 minutes, until the cobbler is slightly golden and a toothpick comes out cleanly. Carefully remove from the oven and let sit for 5 or so minutes to cool.
Step 5
serve warm as-is, or as desired! This recipe is best enjoyed fresh, but leftovers can be covered and stored in the fridge for up to 2 days – reheat in the microwave or oven.
