Perfect to top your pizza. It's surprisingly easy to make, tastes way better than store-bought. Can be stored in the fridge or freezer so you have it on hand whenever you need vegan pepperoni.&nbsp;Recipe adapted from my Vegan Seitan Steaks, but shout out goes to The Easy Vegan's version for the funniest video.&nbsp;

Easy Vegan Seitan Pepperoni

vital wheat gluten

tomato paste

soy sauce

refined coconut oil, (cooled so that it's solid)

water

whole fennel seeds

garlic powder

smoked paprika

red pepper flakes ((reduce or omit for less spice))

Add several inches of water to a large pot with a steamer basket and bring to a boil.

In the meantime, mix together all of the ingredients in a large bowl. Once the mixture starts to come together, finish mixing by hand, kneading the dough for 2 - 3 minutes to make sure it's combined well. Kneading the seitan will also give the vegan pepperoni a chewier texture.

Divide the dough into two pieces then roll the dough pieces into two logs about 6 inches long each. Roll each log up loosely in a piece of aluminum foil then twist the ends closed. Steam for 30 minutes. Oil may release during steaming and appear in the steamer basket and water, and that's ok. After 30 minutes, remove the logs from the steamer and allow to cool completely in the fridge. The logs will have puffed up in the foil and become tight. Once cooled, remove the foil and they are ready to slice and enjoy as you like.&nbsp;

This tastes great on a pizza when you&#x27;re craving that pepperoni flavor without all the grease.

Get a medium bowl and soak your soy curls in warm water for 10 minutes.  Strain them and then squeeze all the water out of them. Set aside.

In a medium bowl mix your soy curls with 2 TB oil, mix, then add your seasoning and mix. Add another 1 TB oil stir.  Spread this mixture on the cookie sheet and let cook for 8 minutes in a preheated oven.  Then stir the last TB of oil.  It can now sit in the fridge until ready to use or put it on your pizza before baking like you would pepperoni.

These pepperoni pizza tofu crumbles taste like the real thing! They are made with extra-firm tofu, seasonings, and spices. Sprinkle on top of veggie dishes, potatoes, salads, soups, and sandwiches for an authentic pepperoni pizza flavor.

Vegan Pepperoni Pizza Tofu Crumbles

tofu (extra firm)

Tablespoons ketchup

Preheat oven to 375°, prepare baking sheet with parchment paper or a silicone mat.

Press and drain the tofu, pouring off liquid as necessary. This will take about 30 minutes using a tofu press. If pressing between plates with weights, it might take up to one hour.

While the oven is preheating and the tofu is pressing/draining, stir together all other ingredients into a medium-sized bowl.

When the tofu is pressed and drained, hand crumble into small pieces directly into the mixing bowl with the other ingredients. Toss together and stir to evenly coat.

Turn onto a prepared baking sheet. Spread evenly and put it in the preheated oven for a total of 44-50minutes, checking at intervals. (See next instruction.)

After putting the tofu in the oven, set the timer for 20 minutes. Open the oven after the first 20 minutes and turn and stir the tofu, moving the dryer tofu from the outer edges to the center and the moister tofu in the center, out to the edges. Put back into the oven and check again in 20 more minutes. Then at 5 minute increments until it&#39;s done.

You will know when your tofu is done because it will be nicely browned - but not burned.

store

You can keep these pepperoni pizza tofu crumlbes tightly covered in the fridge for up to a week - but I&#39;ve never managed to keep them around that long! If they dry out then refresh with a little veggie broth.

Vegan Pepperoni

oz firm tofu

tbsp smoked paprika

tbsp sugar (I used brown sugar)

fennel seeds

salt

tsp black pepper

tsp liquid smoke

½-1 tsp red pepper flakes

Preheat the oven to 400ºF or 200ºC. Press the tofu while the oven is preheating (just wrap the tofu in a clean towel and apply a steady weight to squeeze out the moisture).

Add all the ingredients to a food processor and pulse until well combined.

Try the mixture and adjust the seasonings if needed. I added ½ tsp of red pepper flakes, but feel free to add more of them if you like your vegan pepperoni really spicy.

Spread the mixture onto a lined baking sheet into an even layer about ¼ or ⅛ inch thick (about 0,3-0,6 cm). 

Bake for 25 to 30 minutes or until golden brown.

Use a circular cookie cutter to cut out your vegan pepperoni and it'll be ready to be added to your vegan pizza. You should bake it for at least another 10 to 15 minutes before eating (it's not ready to eat until you bake it for another 10 to 15 minutes).

If you’re not going to use your vegetarian pepperoni immediately, just let the slices cool and keep them in an airtight container in the fridge for up to 1 week or in the freezer for up to 1 month. If frozen, let them thaw slightly before using them.

Easy Vegan Pepperoni (Step-By-Step Tutorial)

vital wheat gluten (180 g)

water (120 mL)

tomato paste (50 g)

soy sauce (60 mL)

coconut oil* (should be solid, 50 g)

tsp each crushed red pepper flakes, ground mustard seed, smoked paprika, garlic powder

fennel seeds (roughly crushed or chopped)

tsp liquid smoke (5 mL)

Dough: In a large bowl stir together all ingredients until a ball forms. Transfer to a clean surface and knead for about 5 minutes, or until dough is elastic and cohesive (it will still be lumpy, that&#039;s okay!)

Shape: Divide into 2 even pieces, then shape each piece into a log. Each log should be about 1 inch (2.5 cm) thick. Wrap each log tightly in aluminum foil, making sure the foil overlaps so it doesn&#039;t open during cooking, then twist the ends to secure.

Steam: Bring a pot of water with a steamer basket to a boil, then place wrapped pepperoni logs into the basket. Cover and let steam for 45 minutes. (Keep an eye on the water level to make sure water doesn&#039;t all evaporate.)

Cool: Remove pepperoni logs from the basket and gently unwrap. Transfer to the fridge and allow to cool fully, then use a sharp knife to thinly slice each log into pepperoni pieces! Use as you would traditional pepperoni (on pizza, sandwiches, or crackers!)

extra-firm tofu ((organic when possible))

salt black pepper

2-3 tsp crushed red pepper flakes

mustard seeds

fennel seeds ((lightly crushed))

tsp A1 sauce

Cooking spray or olive oil

Wrap tofu in a clean towel and set something heavy on top - like a cast-iron skillet - to press out liquid for 10-15 minutes. Also preheat oven to 400 degrees F (204 C).

Once pressed, cube tofu and add to a food processor along with sea salt, black pepper, red pepper flake, ground mustard, fennel seeds, smoked paprika, garlic powder, coconut sugar, ground anise, and A1 sauce/liquid smoke (optional). Mix/pulse to combine, scraping down sides as needed.

Sample and adjust seasonings as needed, adding more salt for saltiness, red pepper flake for heat, paprika for smokiness, or coconut sugar for sweetness.

Transfer the mixture to a parchment-lined baking sheet (or more baking sheets, as needed, if increasing batch size). Lay a sheet of plastic wrap or parchment paper on top and use your hands to spread into a uniformly thin layer about 1/4th - 1/8th inch thick (see photo). The more even the layer is, the more evenly it will bake. Spritz with a little nonstick spray or gently brush with a bit of oil to help it crisp up.

Bake at 400 degrees for 25 minutes, or until golden brown and slightly dried out. Then use a small or medium circular cookie cutter to cut out “pepperonis” (see photo). Feel free to keep the scrap pieces as well! They're just not as pretty.

At this point, the pepperonis are ready to add to a pizza, where they should bake at least another 10-15 minutes. Time accordingly based on how long your crust takes to bake. You'll know they're ready when they're deep red in color and slightly crisp to the touch.

If you don't want to add them to a pizza right away, simply let them cool, cover, and refrigerate (up to 4 days) or freeze (up to 1 month) for later use. If frozen, let thaw slightly before adding to the pizza to bake.

Place all ingredients in a food processor and process for a couple of minutes.

Your mixture should stick

Your mixture should stick between your fingers when pressed together. If it doesn't add a little more vinegar, 1/2 tsp at a time.

Place the mixture over

Place the mixture over a sheet of parchment paper. Add a layer of cling film on top. (see photos above)

Using a rolling pin,

Using a rolling pin, roll the mixture until you reach your required thickness. Remember this is how thick your pepperoni slices will be.

Remove the cling film

Remove the cling film and bake it in the oven for 15 minutes. You know the mixture is ready when the edges start to brown a little.

Allow it to cool

Allow it to cool for 5 minutes. Using a round and sharp cookie cutter, cut your pepperoni slices from the baked mixture. Your pepperoni slices are now ready to be used. Enjoy!

How to make Vegan Pepperoni

A super simple recipe for vegan pepperoni made with vital wheat gluten and baked in an air fryer or oven. Gorgeous on pizza or sandwiches.

Easy Vegan Pepperoni

g vital wheat gluten

garlic powder ((or granules))

thyme

cayenne pepper

chilli flakes ((or 1/2 teaspoon chilli powder))

ml vegetable stock ((made with 1 vegetable stock cube))

tomato puree

olive oil

In a mixing bowl add the vital wheat gluten, paprika, garlic powder, thyme, cayenne pepper, chilli flakes and salt. Mix well to combine.

In another mixing bowl add the vegetable stock, tomato puree, olive oil and soy sauce. Mix well.

Pour the wet ingredients into the dry ingredients and mix with a spatula or wooden spoon to combine, then knead in the bowl for a couple of minutes (with clean hands). You will feel how elastic it is right away.

Shape and roll into a sausage shape, then roll firmly in non-stick baking paper.

Now roll in tin foil and twist the ends like a cracker.

Pop in the air fryer at 200c/400c for 50 minutes (middle shelf, if you have shelves) or in a preheated oven at 200c/180c fan/400f/gas mark 6 for 50 -55 minutes. (If you are making it for pizza, remember it will be cooked a second time on the pizza, so reduce the cooking time by 10-12 minutes for the original bake)

When it&#39;s ready it should have started to brown on the outside and be firm, yet springy to the touch.

Leave to cool.

Slice and use in a pizza, sandwich, pasta etc.
