Vegan Philly Cheesesteaks made with marinated portobello mushrooms, sautéed onions and peppers, and homemade vegan cheese sauce for a healthier spin on this classic sandwich.

Vegan Philly Cheesecake

hoagie rolls

tbsp. cooking oil, (divided)

portobellos

yellow onion, (thinly sliced)

green bell pepper, (thinly sliced)

poblano pepper, (thinly sliced)

button mushrooms, (sliced)

salt and pepper, (to taste)

tbsp. balsamic vinegar

Worcestershire sauce

Dijon mustard

salt

tsp. steak seasoning, (salt-free)

garlic powder

parsley

butter

tbsp. all-purpose flour

soy milk

Destem and wipe clean the portobellos. Cut them into 1/2&quot; strips and set aside. Whisk together the ingredients for the portobello marinade. Transfer the marinade to a large ziplock bag. Add the portobello strips and shake the bag so that the portobellos are fully submerged. Let marinate while preparing the rest of the sandwiches. 

Preheat the oven to 400 F.&nbsp;

Make the vegan cheese sauce. In a small saucepan over medium heat, melt butter. Add flour, whisking constantly, until a roux has formed. Add milk, 1/4 cup at a time. Continue to whisk constantly. Bring to a boil and cook for about 4-5 minutes until the mixture begins to thicken - it should coat the back of a wooden spoon. Remove from heat and add Mozzarella Cutting Board Shreds, salt, and pepper. Stir in until the cheese has melted. Set aside. 

Heat one tablespoon of oil over medium-low heat in a large skillet. Add onions and sauté for about 5 minutes, until onions are fragrant and translucent. Add peppers and button mushrooms and sauté for an additional 5 minutes until peppers cooked all the way through and slightly charred. Remove from heat and season with salt and pepper. 

Wipe clean the skillet. Add the remaining oil and increase the heat to medium. Add the marinated portobellos along with the marinade and sauté, stirring occasionally, for 3-5 minutes until the portobellos are crispy brown and charred on the outside. 

Assemble the sandwiches by placing 1/4th of the portobellos at the bottom of each hoagie roll. Top the onions/bell pepper mixture and a few dollops of vegan cheese sauce. Place on a baking sheet and bake 5 minutes until the bread is crispy and the cheese sauce is warm and melty. Remove from heat and serve immediately.

In a large skillet, add the minced garlic on medium heat and cook until fragrant; 1-2 minutes.

Add the sliced mushrooms and Beyond Steak Tips. Cook for 5 minutes, stirring as the frozen meat cooks into the mushrooms.

Now, add the soy sauce, vegan Worcestershire sauce, and salt and pepper.

In a separate skillet, on medium heat, add the sliced onions, red bell peppers, and jalapeno slices.

Stir often as the onions/peppers cook through; 5-7 minutes.

Preheat an oven to 400 degrees.

Prepare a baking sheet with parchment paper or a silicone baking mat.

Open the French bread and lay it open-faced on the baking sheet.

For one side of each bread half, add a generous amount of Beyond Steak Tips and mushrooms.

On the other side of each bread half, add half the onion and peppers combination.

If using the vegan cheese, place it on top of the steak tips/mushroom side.

Bake for 15 minutes or until the vegan cheese melts completely.

To serve, add banana peppers and microgreens, if using, and place the sandwich together.

Cut in half. And serve.

Beyond Steak Tips Recipe: Vegan Philly Cheesesteak

These delicious vegan mushroom philly cheesesteak egg rolls are baked or fried to crispy perfection! Stuffed with sautéed mushrooms, peppers, onions, and vegan cheese. The perfect snack or appetizer for any occasion!

Vegan Mushroom Philly Cheesesteak Eggrolls

cremini mushrooms, diced (about 10-12 mushrooms)

onion,

green bell pepper, diced

garlic,

vegan worcestershire sauce (sub soy sauce)

balsamic vinegar

mozzarella cheese

vegan egg roll wraps

Heat the oil in a pan over medium heat. Once hot, add the onions, mushrooms, salt and pepper. Sauté 5 minutes, or until onions are translucent and mushrooms have started to wilt. 

Add the peppers, garlic, worcestershire sauce, and balsamic vinegar. Sauté 5 minutes, or until the green peppers have softened.

Raise heat to medium high and cook until most of the moisture has evaporated, stirring frequently, about 3 minutes. 

Fill and roll the egg rolls. 

Place one egg roll wrap at a time on a clean surface. Scoop ~1 tablespoon of cheese followed by ~2 tablespoons of the vegetable mixture onto the center of the wrap. 

Keep a small bowl of water nearby and use it as “glue” to hold the egg roll wrapper corners together. Use your finger to wet the corners of the egg roll wrapper before rolling. 

Roll the bottom corner up and over the filling, fold in each side, and then roll the rest of the way up. Wrap tightly, pushing out any air bubbles. 

To bake the egg rolls: 

Preheat the oven to 400 degrees. Place egg rolls seam side down on a baking tray lined with parchment paper or a reusable silicone mat. Spray egg rolls with oil and bake for 20 minutes until crispy, flipping halfway through cooking.  

To fry the egg rolls

heat up 1/2 inch of oil in a pan over medium high heat. Once hot, place as many egg rolls that can comfortably fit in the pan seam side down. Cook 1-2 minutes on each side, until golden brown. 

These egg rolls are best enjoyed fresh! Be careful, the cheese on the inside of the egg rolls will be very hot if eaten straight away. Enjoy on their own, or dipped into a vegan cheese sauce.
