Kick start your morning with a giant bowl of Jamaican Banana Porridge completely veganized

Green Banana Porridge (Vegan style)

Green bananas

water

coconut milk (full fat)

vanilla extract

nutmeg

tsp of cinnamon (or 2 cinnamon sticks)

himalayan pink salt

condensed coconut milk (or sweeten to taste(see post

Wash the green bananas to remove any debris.

Cut the tips of each banana and make an incision length ways with a pairing knife. Follow the incision around the banana in a circle so that the peel is removed and discard.

Slice the banana into large discs and put in the blender with the water and puree.

Once pureed pour the liquidised formula into a large sauce and begin to boil then reduce heat while stirring.

Then stir in the coconut milk with the spices, pink salt and vanilla.

Finally pour the desired amount of condensed coconut milk and allow to boil reduce to a simmer and stir to avoid any lumps for a further 5 minutes.

Serve accordingly.

A really simple breakfast porridge made creamy with luscious coconut milk and indulgent with a topping of dark chocolate and nuts.

CREAMY COCONUT MILLET PORRIDGE

millet (rinsed and drained)

salt

coconut milk

dark chocolate shards (to serve)

pistachios (to serve)

maple or rice malt syrup (optional, to serve)

Place millet in a small saucepan on low heat. Toast lightly until dry and a shade darker. Add water and salt. Increase heat to medium and cook for approximately 15 minutes until the grain has puffed up.

Reduce heat to low, add coconut milk and simmer for a few minutes until heated through. Remove from heat, pour in a bowl and top with chocolate, nuts and maple syrup (if desired).

This vegan porridge is the perfect nourishing breakfast - creamy, luscious wheat berry hot cereal topped with an easy 3-minute gingered blueberry sauce!

Vegan Creamy Wheat Berry Porridge with Gingered Blueberry Topping Recipe

hard red winter wheat berries

sea salt

vegan milk

chia seeds

coconut oil

blueberries

maple syrup (or agave nectar)

ginger

lemon juice

coconut milk (for drizzling on top)

Add the wheat berries, water, and salt to a medium saucepan over medium heat. Bring to a boil, cover the pot, turn the heat down, and simmer for 45 minutes, stirring occasionally. Turn the heat off and let the porridge sit for an hour (or overnight).

Stir in the milk, chia seeds, and coconut oil. Bring to a simmer over medium heat, then turn the heat off, cover the pot, and let it sit for 10 minutes before serving.

For the Porridge:

After you add the milk to the porridge, make the blueberry sauce.

To do so, combine all ingredients for the topping in a small saucepan over medium heat. Cover the saucepan, bring it up to a boil, and let it cook for 3 minutes, adjusting the heat down as necessary so it doesn’t boil over.

For the Gingered Blueberry Sauce:

Serve the porridge with the gingered blueberry sauce on top, drizzled with coconut milk.

Vegan Eggnog Porridge (without alcohol) 

porridge oats (make it gluten free if needed!)

cinnamon

Tbsp raw cashews

vanilla powder

clove

maple syrup

plant milk

Place the raw cashews in a bowl and cover with boiling water. Set aside for 20 minutes, then drain and rinse.

Into a medium size sauce pan add the oats, cinnamon and nutmeg, stir to combine and set aside.

In a high-speed blender combine the cashews, vanilla powder, ground clove, maple syrup and plant milk until smooth.

Pour the liquid into the saucepan with the oats - ideally filtering through a tight sieve. You can of course omit the sieve if you don't mind having small bits of cashew nut in your porridge (might give  it a great texture!)

Heat on low/medium heat and stir continuously until the porridge thickens. If it gets too dry, simply add a little more plant milk at a time.

(Optional) Serve topped with more cinnamon &amp; a little maple syrup &amp; enjoy!

Vegan Pumpkin Spice Porridge

rolled oats (60 g)

pumpkin puree (40 g)

plant milk (230 ml) (e.g. coconut milk)

Add your porridge oats to a saucepan over low heat and add in the pumpkin puree. Pour in the coconut milk and stir to combine everything.

Sprinkle in your spices and continue stirring to combine all ingredients evenly throughout the porridge Continuously stir until your porridge begins to thicken.

Add in the maple syrup and remove your porridge from the heat once it&#39;s reached your desired consistency.

Transfer to a breakfast bowl and add the toppings of your choice.

Chocolate Orange Porridge

70 g porridge oats

chocolate

70 ml filtered water

ml plant milk

ml orange juice

Add the porridge oats to a small saucepan over medium heat and stir in the protein powder (or cacao powder).

Pour in the filtered water and stir for about 1.5 minutes, or until the oats begin to slowly soak up the liquid.

Once the porridge starts to become thicker, add in the plant-based milk in small batches until you receive a creamy texture overall.

Remove the porridge from the heat and stir in the freshly squeezed orange juice.

Transfer to a bowl and add your favourite toppings. I love sliced banana, Pip &amp; Nut Chocolate &amp; Orange Almond Butter (yum!), crushed almonds,  and a piece of chocolate.

Vegan Protein Blend Chocolate (I use MyVegan*)

Add all dry ingredients to a saucepan - porridge oats, protein powder, cacao powder and flaxseeds - and stir to combine.

Add the saucepan onto the stove above medium heat and pour in the soy milk. Continuously stir to combine.

Let the porridge cook until it thickens - usually 2-3 minutes - then add the date paste last. Stir again to combine and serve hot with your favourite toppings.
