A high-protein Banana Bread recipe as a healthy post-workout protein breakfast, 100% vegan and gluten-free.

Protein Powder Banana Bread

Mashed Ripe Bananas (about 3 large bananas)

Maple Syrup

Melted Coconut Oil

Oat Flour

Vanilla Pea Protein Powder

Baking Powder

Baking Soda

Cinnamon

Dark Chocolate Chips

Preheat oven to 350°F (180°C). Line a 9 x 5-inch loaf pan with parchment paper and lightly oiled paper with oil spray or coconut oil. Set aside.

Peel, mash the banana into a puree, and measure the amount called by the recipe using a measuring cup.

In a mixing bowl, add mashed banana, maple syrup, melted coconut, and stir to combine.

Stir in the dry ingredients: oat flour, protein powder, baking soda, baking powder, and cinnamon, until just combined. Don&#39;t overmix to avoid gummy bread.

Pour the banana bread into the prepared loaf pan, sprinkle the dark chocolate chips on top, and bake for 35-45 minutes or until golden brown.

This bread remains a bit moist in the center, so it&#39;s normal if you insert a pick in the center and the batter still sticks slightly to it.

Cool it down completely before slicing, it takes about 3 hours on a cooling rack at room temperature.

Store at room temperature for up to 4 days in a sealed box.

Healthy, homemade dark chocolate protein bars!  These no bake Paleo and Vegan protein bars are low in sugar, great for snacking and tasty enough for dessert.

Dark Chocolate Protein Bars (No Bake, Paleo, Vegan)

cacao butter, melted*

sunflower seed butter

water (room temperature)

maple syrup

tsp vanilla extract

Nuzest chocolate pea protein** (45 grams)

cacao powder (20 grams)

salt

chocolate chips

coconut oil

Line an 8" x 4" baking pan with parchment paper (aluminum foil works too).  Set aside.

Combine the melted cacao butter***, sunflower seed butter, water, maple syrup and vanilla.  Whisk until smooth.

Add in the chocolate protein powder, cacao powder and salt.  Mix with a spatula until well combined.

Firmly press the dough into the lined baking pan.

Remove the bars from the freezer and cut into 8 protein bars****

For the chocolate drizzle, melt the chocolate chips and coconut oil in a small sauce pan, over low heat.  Drizzle the melted chocolate over the protein bars.

Place back in the freezer a few minutes for chocolate to fully set.

These chocolate protein bars are great for snacking.  Hope you all love the recipe as much as I do!
