Deliciously fluffy rice protein pancakes - unbelievably both vegan &amp; gluten-free! This is honestly such a simple recipe to create and one of my weekend breakfast favourites!

Rice Protein Pancakes

banana

tbsp coconut yogurt

apple cider vinegar

tbsp rice protein powder

tbso buckwheat flour

coconut oil (for frying)

In a medium size bowl, mash the banana with a fork.

Add 2 Tbsp Alpro Coconut Yogurt into the bowl, as well as 1 tsp Apple Cider Vinegar. Stir to combine all ingredients and set aside for 5 minutes.

Heat a non-stick frying pan over medium-high heat. Add a little coconut oil into the pan.

Add 2 Tbsp of protein powder and 2 Tbsp Buckwheat Flour to the wet ingredients and stir with the fork to combine.

Use a tablespoon to transfer the batter in portion sizes to the pan, shape the pancakes with the back of the spoon.

Gently flip the pancakes once the edges begin to brown (4-5 minutes) and cook on the second side for about 3 minutes.

Serve with your favourite pancake toppings!

Cinnamon Pear Smoothie Bowl

banana (frozen)

pear (chopped)

vanilla protein (from Nutribuddy)

cinnamon

300 ml plant milk (e.g. oat milk)

Place your banana and roughly chopped pear (de-seeded) into a blender.

Pour in the plant milk first, then add in your dry ingredients: breakfast shake and cinnamon.

Blend until smooth, then pour into a travel shaker and get on with your day!

Deliciously creamy chocolate protein smoothie bowl - this is what breakfast dreams are made of! Made in the blender and ready in just 5 minutes or less.

g vegan chocolate protein powder

g porridge oats

g raw cacao powder

g flaxseeds

g chia seeds

240 g plant milk

raspberries

g coconut yogurt

tsp cacao nibs

g Tiger Nut Granola by Erbology

Place the banana in your blender, then add in half of the soy milk, followed by the rest of the smoothie base ingredients. Pour in the second half of the soy milk at the end - starting with a little liquid in the beginning will prevent your protein powder or other dry ingredients from sticking to the bottom of your blender.

Blend until smooth - I usually use the smoothie setting of my blender for about 30 seconds. Let the smoothie sit for 1 minute, then briefly blend again for another 10 and serve.

Add all the toppings to your liking &amp; enjoy immediately!
