This vegan waffle recipe is filled with plenty of pumpkin flavor &amp; warmth from the pumpkin spice mix. One of the best ways to use up any leftover pumpkin puree or may I say a good reason to enjoy more pumpkin!!

Vegan Spiced Pumpkin Waffles

whole wheat pastry flour (OR atta (see notes))

all-purpose flour

cornstarch (OR potato starch)

sugar

baking powder

baking soda

pumpkin puree (homemade

vinegar or lemon juice

Pumpkin spice mix (see notes)

vanilla

Salt

Butter (optional)

Nuts and fruits (optional)

Preheat your waffle maker according to the manufacturer's instructions.

Sift whole wheat pastry flour, all-purpose flour, cornstarch, baking soda, baking powder, and salt in a bowl.

In another bowl whisk in pumpkin puree, sugar, oil, milk, lemon juice, and vanilla extract until mixed well.

The oil should completely blend in and not float on the side or top.

Make a well in the center of dry ingredients and slowly pour the liquid mixture into it.

Whip with a handheld or electric whisk until smooth and lump-free.

You can even stir it with a spatula until smooth.

Stir or whisk only until combined. Do not overmix or you will get gummy waffles.

Once the waffle iron is hot, pour the batter and spread it evenly to fill the cavities.

As all waffle irons are different, cooking time will be as per the manufacturer’s instructions.

Serve warm with toppings of your choice.

We like it with a dollop of butter and some maple syrup.

You may freeze it for later use.

Vegan Pumpkin Waffles

These Vegan Pumpkin Waffles are full of pumpkin spice goodness and are the perfect Fall weekend breakfast! Crispy on the outside and fluffy on the inside. 1 Bowl.

pumpkin

coconut oil

soy milk

all purpose flour

salt

cinnamon

ginger

nutmeg

Preheat your waffle iron.

In a large bowl, whisk together the canned pumpkin, oil, soy milk and sugar until smooth.

Add the flour to the bowl with the wet ingredients, then sprinkle on top of the flour the baking powder, baking soda, salt and spices. Mix with a large spoon until just combined. The batter should be fairly thick, not too runny. If it&#x27;s runny, add a little more flour. If it gets too thick, add a little water.

Spray waffle iron well with oil (unless your waffle iron is non-stick). Pour the recommended amount of batter onto hot waffle iron, and cook until the waffle is golden brown on both sides.

Serve immediately, or keep in a warm oven (200 degrees F) until ready to serve. Top with vegan whipped cream, vegan butter, maple syrup and anything else you desire!

These Vegan Pumpkin Waffles are everything you want in a breakfast! They are full of pumpkin spices, pumpkin puree, made with whole grain oat flour and are gluten-free and oil-free! 

Vegan Pumpkin Waffles (Gluten-free)

flour

(32 grams) tapioca starch

pumpkin pie spice (I use and recommend my homemade blend)

fine sea salt

(300 grams) unsweetened almond milk

(120 grams) pure maple syrup (or agave)

(120 grams) canned pumpkin puree

(64 grams) creamy/drippy roasted almond butter (see notes)

Always use a scale

scale.

I use this waffle maker.

Add the oat flour, starch, baking powder, pumpkin spice and salt to a large bowl and whisk well.

To a small separate bowl, add the milk, syrup, pumpkin and almond butter and whisk until smooth.

Pour the wet over the dry and whisk until smooth but do not overmix. It should be very smooth and pourable.

Now let the batter sit while you heat up your waffle machine. The batter will thicken some as it sits, that is normal for oat based batters, do not add more milk.

I used a 7 inch round waffle maker (linked above) and got 6 large round waffles. Obviously, this will vary if your machine is smaller or bigger. If using the same size as my machine, I like setting 4 best. Once your machine beeps that it is ready and hot, spray with nonstick spray on the top and bottom plates. If you don&#039;t spray, they will stick. Even though it says &quot;nonstick surface&quot;, mine stuck badly without spray. Make sure to spray BOTH top and bottom waffle plates. I believe this happens more with oil-free oat flour waffles. Add about 2/3 cup of batter to the center and lightly spread out to the sides, being careful not to spread it too close to the edge to prevent overflowing.

It will beep when it&#039;s ready. I always let it go about 20 seconds after the beep and then remove. I get the perfect crispy results. They seem soft right at first, but crisp up almost immediately once the air hits them after adding them to a plate. Yours may totally vary if you have a different machine.

These healthy pumpkin waffles are packed with cozy fall flavors &amp; warm spices. They&#39;re perfectly crispy on the outside and fluffy on the inside!

Vegan Pumpkin Waffles (Gluten-Free!)

plant milk

pumpkin puree, canned

Tbsp. ground flaxseed

Tbsp. maple syrup

pure vanilla extract

gluten-free all-purpose flour*

almond flour**

pumpkin pie spice

In a large mixing bowl, combine all wet ingredients. Whisk and set aside.

In a separate bowl, combine all dry ingredients. Stir.

Add dry ingredients to wet ingredients, and whisk until combined. Then set aside and let the mixture rest for a few minutes.

Meanwhile, turn on and preheat your waffle iron to desired setting. (I set mine to about medium or medium-high.)

Using a 1/2-cup measuring cup, scoop out batter and place in the middle of waffle iron. (No need to overfill it - I find it cooks better when I don&#39;t push the batter all the way to the edge.)

Close lid and let cook about 7-8 minutes or until steam has completely stopped. Be sure not to open during cooking!

When fully cooked, carefully remove waffle and continue process with the remaining batter.

Mmmm... absolutely perfect for this first weekend of fall!  Batter was easy to make and waffles turned out awesome.  First waffle I left on a bit too long, but hubby still ate it willingly!😁 I will definitely make these again!  So good!  Thanks for sharing this cozy spiced recipe!!
