vegan sesame noodles

<em>These Spicy Sesame Noodles are creamy, perfectly spiced, and easy to make! A cozy and satisfying vegan dinner that's even better than takeout.</em>

Spicy Sesame Noodles (Ma Jiang Mian)

(300 grams) All-Purpose Flour,

Salt

tbsp Neutral Oil

(140 milliliters) Filtered Water

tbsp Tahini or Sesame Paste

tbsp Smooth Peanut Butter

2-3 tbsp Light Soy Sauce (to taste)

tsp Unseasoned Rice Vinegar

Sugar

Water

tsp Toasted Sesame Oil

Toasted Sesame Seeds

Peanuts

Seedless Cucumber, sliced

Cilantro

Green Onions

Chili Oil, to taste (this is what makes things spicy!)

First, Whisk the Flour and Salt together in a large bowl. Add the Oil to the center of the bowl, and use chopsticks to mix well.

Slowly add the water to the Flour mixture a little at a time, using the chopsticks to mix everything together. Once you can no longer mix the dough with the chopsticks, use your hands to knead the dough and form a ball. It may look slightly lumpy, but that’s okay!

Return the dough ball to the bowl and cover with a damp tea towel; let rest for 20 minutes. The dough will not rise, but will become more elastic and easier to work with.

Divide the dough into 2-4 portions, to make it easier to work with. Flour your surface and use a rolling pin to roll the dough into a thin sheet (about 1 cm or ⅓” thick). Dust the sheet with more flour, flip it, then dust it again.

Re-flour your surface (notice a theme here?), then fold the dough sheet into 3-4 layers. Cut the dough into thin strips (~1/3&#8243;) to create noodles, unfolding the dough to reveal the noodle. Let the noodles rest for another 15 minutes before gently “pulling” the noodles (by holding the ends and “bouncing” them on your floured surface) to stretch them out. This step is optional, but fun!

Dust the noodles with even more flour to prevent sticking, then bring a large pot of water to a boil. Cook the noodles for 3-5 minutes, until tender. You may have to do this in batches, depending on how large your pot is. Serve the noodles immediately &#8211; they’re best when hot!

     Add all of the ingredients except for the hot water to a medium bowl and mix well. Slowly whisk the Hot Water into the sauce, then taste and add any extra ingredients according to your personal preference. Refrigerate any Sauce leftovers for up to one week.

Cook your desired Noodles according to the package instructions, if you are not making them from scratch.

Add the Noodles to a bowl, then toss them with the Sesame Sauce. Top with Cucumber, Green Onion, Cilantro, Toasted Sesame Seeds, Chopped Peanuts, and a hefty drizzle of Chili Oil to finish things off! Serve warm and enjoy.

Made this tonight (didn’t have time to make my own noodles so used soba noodles) and it was delicious!

It is AMAZING!!!! Ahh! I cannot even explain how much I enjoyed this! My mom made her italian inspired with veggies, olive oil, and vegan parmasean! They were both sooo good! You HAVE to try this!

My whole family loved this. The sauce is super yummy. I love the combo of tahini and peanut butter. I  used lo mein noodles and added some steamed broccoli and sliced bell peppers.

This recipe is DELICIOUS! Almost identical and comparable to the ones I've had in Taiwan. I used dry, Taiwanese noodles in a package. I might try some fresh udon noodles next time. Do you know how many calories this is?

Vegan Asian Sesame Noodles. Thick chewy noodles smothered in a sesame soy sauce with yu choy, carrots, green onions and garlic. A delicious meatless side for dinner or lunch. Very easy to make and comes together in less than 20 minutes!

Vegan Asian Sesame Noodles (30-min. Recipe)

carrot

Yu Choy (chopped)

green onion (finely chopped)

garlic

noodles (blanched)

avocado oil

tbsp kecap manis (or sweet soy sauce)

tbsp dark soy sauce

tbsp sesame oil

cornstarch

tbsp Shaoxing Cooking Wine

tbsp white granulated sugar

tbsp sesame seeds (crushed

water (or vegetable broth)

In a small bowl, whisk together your noodle sauce ingredients. Set aside.

In a large pan filled with hot water, bring to boiling point. Add noodles and loosen them. Once loosened (about 30 seconds), strain immediately. Do not boil them or it’ll result in soggy noodles.

In the same pan (make sure it’s dry of water) over medium high heat, add avocado oil, followed by minced garlic and green onions. Cook for 20-30 seconds just until fragrant.

Quickly, add carrots and cook for 2 minutes until soft.

Then toss in chopped yu choy and cook for 30 seconds until it’s just wilted.

Next quickly add noodles and sauce.  Mix everything until combined, a couple minutes, no more and remove off heat. Serve immediately and enjoy!

Sesame Noodles

garlic, rough chopped

ginger, chopped

onion,

soy sauce (Or GF Braggs Liquid Aminos)

tahini paste, or Chinese Sesame Paste

water, more as needed.

rice wine vinegar

sesame oil

maple syrup (or honey)

chili paste

salt and pepper

Cook noodles according to package directions.

At the same time, in a large skillet (or wok) heat oil over medium heat. Add onion, garlic and ginger and the veggies of your choice. Saute, 3-4 minutes, turn heat down to low, and continue cooking until just tender.

At the same time, make the Creamy Sesame Sauce: Place all ingredients in a small bowl and whisk with fork until smooth. If it feels overly thick, thin with water. Taste. Add more chili paste and salt and pepper to taste.

Combine: Once the veggies are tender-crisp, and the noodles are drained, toss them together along with the sauce, coating well. Serve warm.

Garnish with microgreens, scallions, peanuts, or any of the other options.

Great recipe with a nice nutty flavour from the tahini.  We omitted the onion, garlic, honey &amp; chilli, and it still tasted great. Next time for us we will half the quantity of sauce to tone down the flavours of the dish.  Looking forward to trying more of your recipes.

This was delicious.  I tried brown rice noodles for the first time and they did not come out the way I would have preferred.  Next time, I'll use a pasta.  I used green/purple cabbage, carrots, broccoli, peppers, snow peas and added some poached shredded chicken.  All of the vegetables were nice and crunchy and perfect. I made a double batch of dressing which was perfect for us.  The dressing is so delicious.  I had left over dressing and used it on a lettuce salad the next day.  Great recipe and super simple.  Next up,  your Cornbread Casserole.  Can't wait to try it.  Thank you for inspiring me several times a week.

The first time I made this, I found the sauce a bit overwhelming (just used regular tahini and sesame oil, so maybe that had something to do with it). I made it again and halved the amount of sauce with slightly less tahini than the recipe calls for (so that it wasn't as creamy) and it was perfect :) I love how quick and easy it is - great way to use leftover vegetables!

This was very good, very easy. Made it as described this time. So easy to sub in different veggies, noodles, etc, though. The sauce is a total keeper. This one will be in regular rotation, especially when I have odds and ends in the fridge!

This was so yummy! Because I am Korean, I sub'd the chili paste and use gochujang-- I highly recommend trying it!

Took me almost an hour since I'm a slow chopper, I guess.  So easy and delicious.  We had cauliflower, celery, mushrooms and zucchini in ours, topped with shredded carrot and a radish.  It does need the toppings to liven up the color I'd say.  We also had a leftover Peruvian chicken thigh and some fresh tofu chopped up into it too..  Thanks for another winner!

Always an excellent dish.  When we first started making this last year we used soba noodles that are wheat / buckwheat blend.  But since last Fall I have been directed into the "no gluten for you" lane and so we made this with pure buckwheat noodles.  We are omnivores but choose plant based eating about 90% of the time and we so appreciate your site and recipes.

I love this dish, and it's in the rotation for vegetarian dinners.
I like to make extra sauce and marinate tofu in it for over an hour first, then bake it to top this dish.

One of my favorite dishes! Easy, delicious and nutritious. I doubled the sauce (minus 1 Tbs sesame oil, plus 1 Tbs tahini), used leftover veggies in my fridge (eggplant, string beans, purple cabbage, carrot, red pepper) and fresh chow mein noodles, and topped with peanuts and cilantro -Yum!

Oh my goodness so delicious! Perfect sauce for tofu.

Vegan Peanut Sesame Noodle Salad

soy sauce (, use tamari for Glutenfree)

maple syrup or sugar

pad thai noodles

cabbage

red bell pepper

Sesame seeds peanuts

Make the sauce. Add all the ingredients for the sauce in a blender and blend until smooth and set aside. Taste and adjust flavor, salt, sweet, tang

Cook your pasta or noodles according to the instructions on the package if you haven't already. Wash in cold water and set aside.

Chop up your vegetables and set aside.

Add the noodles and vegetables to a large bowl then add in your peanut butter sauce and toss well.

Taste and adjust salt and flavor then top with sesame seeds, roasted peanuts, and green onions and serve.

Another delicious meal! I used coriander (cilantro) as I had no spring onions but that works just as well. Will try it as a hot meal next time.

I made this last night and it's delicious! I just ate leftovers for lunch and they held up really well, which gives it bonus points. I will definitely make this again - it's crisp, fresh and the sauce has a really nice lingering heat.

I made this with Trader Joe's thick Thai Wheat Noodles that I warmed in a pan with some seared, marinated extra firm tofu. The sauce has a great balance of flavors.  This dish is beautiful to look at and delicious to eat.  Will definitely make again.

Another delicious and easy recipe!  This is my 4th salad of yours this week!  It’s been hot here and I wanted to have salads ready just to get out for dinner!  I quadrupled the recipe and soooo glad I did!  YUM!   Another one to go in my regular rotation!  Great to put in lunches.  I airfried some tofu or put on top as well!  So good!
