These tofu banh mi vegan sliders are packed with flavour and a fun twist on the classic banh mi sandwich. They’re great as finger food or appetizers for a party, or as a delicious dinner served with fries or a salad.

Tofu Banh Mi Vegan Sliders

(16 oz) extra-firm tofu (drained and pressed -  1.75)

soy sauce (-  0.20)

water (-  0.00)

maple syrup (-  0.67)

tomato paste (-  0.17)

brown sugar (-  0.09)

garlic (grated

ginger (grated

liquid smoke (-  0.02)

carrots (peeled and julienned –  0.22)

(4 oz) daikon radish (peeled

(240 ml) apple cider or rice vinegar (-  0.96)

sea salt (-  0.09)

white sugar (-  0.12)

aquafaba* (garbanzo cooking liquid -  0.00)

(120 ml) neutral-tasting oil (–  0.40)

sriracha

oil (for frying –  0.10)

vegan slider buns (-  1.45)

cucumber (sliced -  0.38)

green onions

green chili peppers

cilantro (-  0.10)

Slice the tofu into squares to fit the size of your slider buns. You might not be able to get perfect squares for each slider, but that’s ok, you can put a couple of leftover ends together into one slider.

Combine the soy sauce, 3 tablespoons water, maple syrup, tomato paste, brown sugar, garlic, ginger and liquid smoke in a ziplock bag. Taste the marinade and adjust the balance of salty and sweet if necessary. Add the tofu slices and massage it in a bit. Leave to marinate for at least 15 minutes, flipping the bag from time to time.

In a bowl combine the vinegar, ½ cup water, salt and sugar. Add the carrots and radish and leave to pickle for at least 15 minutes (the longer the better).

Put the aquafaba in a tall container and insert an immersion blender. With the blender running, slowly add the neutral oil to make a mayo. Mix in the sriracha and a pinch of salt. Refrigerate until ready to make the sliders.

Heat the 2 tablespoons of oil for frying in a pan over medium-high heat. Remove the tofu from the bag and fry for a couple of minutes on each side until golden and crispy. Remove to a paper towel-lined plate.

Toast the slider buns and slather some sriracha mayo on each side. Top with cucumber slices, fried tofu, pickled veggies, green onion slices, chili pepper slices and fresh cilantro.

Bite into a delicious Vegan Sliders with Portobello Steak and Caramelized Onions. These vegan sliders are filled with marinated portobello steaks and caramelized onions and topped with fresh arugula and basil aioli for a satisfying quick snack or light meal. 

Vegan Sliders with Portobello Steak

portobello mushrooms, (thinly sliced)

white cooking wine

tbsp. balsamic vinegar

garlic powder

olive oil

tsp salt

white onion, (thinly sliced)

slider buns

arugula

Basil Aoili, (recipe follows)

mayonnaise

garlic, (minced)

basil leaves, (minced)

Begin by marinating the portobello. Cut the mushrooms into 1/2&quot; strips and set aside. Mix together the ingredients for the marinade in a flat, shallow dish. Place the portobello strips in the marinade, submerging them completely. Allow mushrooms to marinate for at least 30 minutes.

While the mushrooms marinate, heat one tablespoon of olive oil in a medium sauté pan placed over medium heat. Add sliced onions and reduce heat to low. Saute for 15-20 minutes, stirring frequently, until the onions are golden and caramelized. Remove the onions from heat and set aside.

In a small bowl mix together the ingredients for the basil aioli. Place in the refrigerator until ready to use.

Transfer the portobellos, along with the marinade, into the hot sauté pan. Turn the heat up to medium-high and bring the liquid to a simmer. Heat until the liquid is absorbed and mushrooms are browned and have reduced in size by about 50%.

To assemble the sliders, spread the basil aioli on the bottom side of all four buns. Evenly distribute greens, portobello, and caramelized onions. Top with the other half of the bun and serve immediately.

Southwestern Vegan Sliders

Toppings: lettuce, tomato, onion, avocado, cilantro, cashew cheese, other

In a medium skillet, warm a little water or oil over medium heat.

When hot, add onion; cook for 5-7 minutes, until onions begin to brown. Add garlic, carrots, and bell pepper; cook for 5-7 minutes, until vegetables are tender.

Add corn and seitan grounds; break up the grounds with a wooden spoon. Cook for 5 minutes.

Add tomato paste, water or broth, chili powder, cumin, paprika, and pepper; stir to combine all ingredients. Cook for 5-10 minutes to allow the flavors to combine; add more liquid if needed to achieve desired consistency.

Serve a scoop of the filling on a bun with optional toppings.

Vegan Gyro Sliders with Tzatziki

If your vegan plant-based ground is not defrosted, make sure it is before starting this recipe.In a large bowl, combine you the plant-based ground with all the other burger ingredients. Use your hands or a spoon to fully incorporate.

Form 6 patties ~2.5 inches wide. Flatten slightly and place on a plate to sit for 10-15 minutes.

Warm a large skillet over medium heat with just enough oil to coat the bottom of the pan. Once the pan is warm, add your slider patties.

Cook for 3-5 minutes per side, until crisp and slightly browned. Cover your sliders for at least 2-3 minutes during the cooking process to help the inside cook through.

Assemble your slider. Place the vegan meat on the bottom and top with a slice of red onion. On the top half of the bun add your vegan tzatziki with a sprinkle of feta crumbles. Enjoy your vegan gyro sliders right away!

Vegan Cuban Style Sandwich Sliders

pack 12 vegan slider rolls

vegan cheese

Make the caramelized onions (if using). Heat olive oil in a saucepan or frypan on medium heat and add the sliced onions and salt. Cook stirring occasionally on medium/low heat partially covered until melted and caramelized which could take up to 20 minutes. Set aside.

Butter a 13x9 baking dish (or one that fits the shape of your rolls snugly) and preheat your oven to 350°.

Make the butter and mustard sauce: grate your onions on the small homes side of a box grater or mince finely in a small food processor or by hand and add to the rest of the ingredients and mix together well with a small whisk.

Most slider rolls come in the package not sliced so carefully with a serrated knife, cut the rolls evenly in half. Place the bottom half in the buttered dish and layer with ham, caramelized onions (if using), cheese then pickle slices and end  with the roll tops.

Brush the vegan butter and mustard sauce all over the top with a small pastry brush or spoon and make sure to coat the sides as well. Cover the entire dish with foil and bake for 25 minutes then uncover and bake for five additional minutes to brown the rolls a bit. All ovens vary so it could take more or less time depending on using convection heat and your oven brand. If the cheese doesn’t look melted enough bake for a few more minutes. Cut the sliders out all the way through then serve immediately.
