Start your season baking off with these deliciously spiced vegan snickerdoodles. A soft and chewy cookie with the perfectly crispy outside. Made in just 25 minutes!

Vegan Snickerdoodles

all-purpose flour

cream of tartar

baking soda

baking powder

salt

non-dairy butter, (I use Earth Balance)

sugar

tsp vanilla extract

apple sauce

cinnamon

In a small bowl combine the flour, cream of tartar, baking powder, baking soda, and salt. Set aside. 

In a stand-up mixer beat the non-dairy butter, sugar, and vanilla until light and fluffy, scraping down the sides as necessary. Add the apple sauce and beat to combine. It will look curdled at this point which is fine.

Add the flour mixture in two batches, scraping down the sides in between. Mix until a soft dough has formed. Do not over-mix.

Wrap the dough in plastic wrap and chill for at least 1 hour.

Preheat the oven to 375F. Line two baking sheets with parchment paper and set aside. ​

In a shallow bowl combine the cinnamon and sugar. Roll dough into balls about 1 rounded tablespoon big. Place in the cinnamon sugar mixture and coat completely. Put rolled cookies on the prepared baking sheet and bake for 10-12 minutes. They should look slightly underdone but will continue to harden as they cool.

Let the cookies cool for 5 minutes on the baking sheets before transferring them to a wire cooling rack to cool completely.

Cashew Butter Snickerdoodles

tbsp Ground Flax + 3 tbsp Water

tbsp Unsweetened Plant Milk

tsp Vanilla Extract

tbsp Apple Cider Vinegar

tsp Cream of Tartar

Salt

Preheat the oven to 350F. Prepare the Flax Egg by mixing 1 tbsp of ground flax with 3 tbsp of water in a small bowl. Set aside for 5-10 minutes to thicken.

In the meantime, mix the Spelt Flour, Salt, Baking Powder, and Cream of Tartar with 1 tsp Cinnamon together in a medium bowl.

Add the Cashew Butter, Flax Egg, Vanilla, ACV, Plant Milk, and 3/4 cup Coconut Sugar together in a large bowl. Use an handheld electric mixer to &#8220;cream&#8221; everything together over a medium-low speed for 1-2 minutes.

Add the dry ingredients to the wet and mix well until everything is well incorporated.

Use 2 tbsp of the dough to form your cookies, rolling each one out and flattening into a cookie shape. You may want to oil or grease your hands for this step, as the dough may be sticky.

Mix the remaining Coconut Sugar and Cinnamon in a small bowl, then press the top of each cookie into it before placing onto a lined or greased baking sheet.

Bake for 6-8 minutes. The cookies will be soft when they first come out of the oven, so check their bottoms for done-ness. Let cool on the baking tray for at least 5 minutes before transferring to a baking rack, or enjoying warm.

Would you be able to give both imperial and metric measurements, or have the option to choose between the two (such as used on this blog https://minimalistbaker.com/vegan-peanut-butter-no-bake-cookies/)? In the UK we use a mix and using an online converter is a bit difficult and risky, especially when the weight varies for sugar depending on its type! Thanks :-)

Super easy to make (and I did it without a mixer)! My co-worker has a nut allergy so I did use sunflower butter and I think they taste great. I also did half coconut sugar and half brown sugar. Left them in the oven for about 10 minutes, and when they cooled they were perfect. Have you ever made molasses cookies? I bet you could develop a great recipe for some.

Gluten Free Snickerdoodles

almond flour

Bob's Red Mill tapioca flour

tsp paleo baking powder

tsp sea salt

maple sugar ((or coconut sugar))

ghee, room temperature ((or coconut oil

almond milk ((or other non-dairy milk))

Preheat oven to 375° Fahrenheit and line a baking sheet with parchment paper.

In a large mixing bowl, combine the almond flour, tapioca flour, baking powder, salt and maple sugar.

Using a fork, cut the solid ghee or coconut oil into the the mixture until crumbly. Stir in the almond milk and vanilla until a dough forms.

Mix about 2 tbsp maple sugar and 1 tsp cinnamon in a small bowl or on a plate.

Roll dough into 12 balls, about the size of an oversized golf ball. Roll balls in the cinnamon/sugar mixture and place on lined baking sheet. Use the palm of your hand to flatten the cookies a bit - just a little because they will expand while baking.

Transfer to oven and bake for about 9 minutes. The edges will start to turn golden brown.

Remove from oven and let cool on cookie sheet. Store in an airtight container on the counter.

These Vegan Snickerdoodles are perfectly puffy, soft, and slightly chewy. All you need is 10 simple ingredients and 20 minutes to make. No chilling required!

Prep: Preheat the oven to 375F. Line two baking sheets with parchment paper or silicone baking mats and set aside. Make the topping by mixing the cinnamon and sugar together in a small bowl; set aside.

Cream the Butter: Add the softened butter and sugar to a large bowl. Use a hand mixer or stand mixer to cream the butter and sugar together until smooth, about 1 to 2 minutes. Add the milk and vanilla and mix again until well combined.

Dry Ingredients: Add the flour, cornstarch, cream of tartar, baking soda, salt, and cinnamon to the bowl. Use a spatula to mix the dry ingredients together, then incorporate them into the butter mixture to form a dough. The dough may look slightly dry, but should stick together when you pinch it. If the dough is too dry add more milk in 1 tbsp increments.

Make the Cookies: Use a cookie scoop or tablespoon to divide the dough into 2-tablespoon sized balls. Roll the cookie dough together to form a smooth ball, then roll each ball in the cinnamon sugar topping and place 2 inches apart on the baking sheet. Lightly flatten each cookie dough ball onto the sheet as they will not spread much when baking. (Note: if you want your cookies extra thick, don’t flatten them!)

Bake: Bake for 9 minutes; the cookies will appear puffy and soft. Let the cookies cool on the baking sheet for 10 minutes, then transfer them to a wire rack and let them cool completely.

Storage: Store the cookies in an airtight container at room temperature for up to 5 days. You can also freeze the cookies (or cookie dough!) for up to 2 months.

Preheat oven and grease pan.

Preheat the oven to 375 degrees Fahrenheit. Grease a baking sheet with non-stick cooking spray or line with parchment paper.

Whisk dry ingredients.

In a medium bowl, whisk together the flour, baking powder, ground ginger, and salt. Set aside.

Cream oil and sugar.

In a large bowl, use an electric mixer to cream together the coconut oil, coconut sugar, applesauce, and vanilla extract until smooth and creamy.

In a small bowl, stir together the coconut sugar and ground cinnamon for rolling the cookies.

Scoop cookie dough and roll in sugar.

Use a small cookie scoop to scoop out cookie dough into balls. Roll them in the cinnamon sugar topping and place on the baking sheet 2 inches apart.

Gently flatten cookies.

Use your hands or the back of a spatula to gently flatten the cookies on the baking sheet. This will help them spread while baking.

Bake cookies and let cool.

Bake the cookies for 15-16 minutes or until the tops have started to crack and the edges are set. Let them cool on the baking sheet for 10 minutes before moving to a cooling rack. This helps them set up.

If you want, sprinkle some extra cinnamon sugar on top of the cookies while they&#39;re still warm to give them a sparkly sugar texture.
