TOFU RICOTTA

block (14 ounces.) tofu, soft, firm

yeast

mellow white miso

teaspoon garlic powder

teaspoon onion powder

juice of 1 lemon

To make tofu ricotta, add crumbled tofu, miso, nutritional yeast, garlic powder, onion powder, salt, pepper and lemon to the bowl of food processor or blender and blend until creamy, stopping to scrape down the sides as needed. Taste for spices adding anything you may like.

Store

Leftovers can be kept in the refrigerator, in a covered container, for up to 5 days.

tasty but very strong flavor
i made as the recipe suggested but i found that the miso paste and the nutritional yeast were a bit too much.
i would suggest to start with half the amount and add as you go (;

Here's a tasty Vegan Tofu Ricotta spread we discovered on the menu of a 100yr old rustic lodge in Washington state! (only my wife said mine is better) 🤣

Vegan Tofu Ricotta

oz block extra-firm tofu

onion (or 1/2 shallot)

garlic

Tbs basil

lemon juice

Tbs nutritional yeast

Tbs apple cider vinegar

tsp white miso

tsp salt

kalamata olives

cherry tomatoes

french bread

Press tofu to remove as much moisture as possible

Meanwhile, finely mince onion &amp; garlic and add to a small mixing bowl

Crumble tofu into the bowl and gently mix

Add all the seasonings and flavorings and gently stir to mix thoroughly

Carefully blister tomatoes by adding them to a hot skillet, continuously move them around for about 3-5 minutes or until they begin to blister and/or crack

Spead on slices of toasted french bread and enjoy

I made this recipe. The olives really make the dish. I dribbled balsamic vinegar glaze over the top. My husband and I had it for lunch with a little wine. It was great and filling! Thanks for the bread suggestion!
