Vegan Zuppa Toscana | Olive Garden Copycat

olive oil butter

(400 g) Spicy Vegan Sausage

head garlic, minced (about 10 cloves)

nutritional yeast

yellow onion, finely diced

(1.2 L) water

liquid smoke

russet potatoes (790 g), quartered and thinly sliced

(120 g) chopped kale, stems removed

(235 mL) full-fat oat milk*

Salt and black pepper

Vegan Parmesan, to serve (optional)

Aromatics

Warm the olive oil over medium-high heat in a large dutch oven or heavy-bottomed pot. Add the sausage and cook for 3 minutes, stirring occasionally to break it up. Add the onions along with a pinch of salt and black pepper and cook for 5 minutes, stirring occasionally. Finally, add the garlic and nutritional yeast and sauté for 1 minute, or until fragrant.

Make the Soup: 

add the potatoes, broth, water, and liquid smoke to the pot. Bring to a boil over high heat; reduce the heat to medium-high and boil the soup for 10 to 12 minutes, or until the potatoes are fork tender.

Make it Creamy

Reduce the heat to medium low, but maintain a simmer. Add the kale and oat milk and simmer for 3 to 5 minutes, or until the kale is tender. Turn the heat off and season with additional salt and pepper to taste, if necessary.

Serve

top with vegan parmesan (if desired) and serve warm. Leftovers will keep in the refrigerator for up to 5 days and can be reheated in the microwave or on the stovetop.

Excellent recipe. My family all loved it. Savory and warming on a cold winters day. we made it with vegan sausage and almond milk and liquid aminos instead of vegetable broth. Most store bought vegetable broths have sugar in them.

This is a perfect soup for a weeknight dinner. Super yum, easy to make and doesn't require too many ingredients. I used an Italian-style sausage and the fennel from it added a subtle but lovely touch that really shines against the simple backdrop of the rest of the broth.

So delicious! I cannot get any (good) vegan sausages where I live so I made it with white beans and I used cashew cream, but I think it was still super yummy. Will definitely make this again!

Vegan Zuppa Toscana

This luscious and creamy Vegan Zuppa Toscana recipe is even better than Olive Garden! It’s a rich and comforting soup made with vegan sausage, vegan cream, garlic, kale, and potatoes.

vegan chicken broth (or vegetable broth)

russet potatoes, peeled and cut into 1/2 inch cubes (about 4 cups)

kale, ribs removed (about 1 bunch)

red pepper flakes

vegan heavy cream (see Notes for options)

In a large soup pot, cook the vegan sausage crumbles and diced onion over medium heat until the sausage is lightly browned and the onion is translucent.

Add the garlic and cooked until fragrant, about 1 minute.

Add the broth, potatoes, kale and red pepper flakes. Bring to a boil, then reduce heat and simmer uncovered for 14 minutes or until the potatoes are soft.

Stir in the vegan heavy cream and cook for a few minutes. Taste; add more salt and pepper as desired.

Serve with optional vegan parmesan cheese. Enjoy!

Tuscan White Bean Soup Recipe (Vegetarian)

unsalted butter (can sub dairy-free or oil)

onion

carrots (2 to 3 carrots)

celery (3 to 4 ribs)

garlic (minced)

tomato paste (25 g)

Tbsp sun-dried tomatoes (finely chopped)

Italian seasoning

salt

tsp red pepper flakes

vegetable broth (1 L)

cannellini beans (drained, 425 g each)

kale (chopped)

heavy cream (120 mL)

parmesan (35 g)

Flavor base

Flavor Base: In a large pot set over medium, heat 2 Tbsp unsalted butter. Add 1 medium yellow onion, 1 cup diced carrots, 1 cup diced celery, and 4 cloves garlic. Cook until onion is soft and fragrant, about 5 minutes.

Add seasonings

Seasonings: Stir in 2 Tbsp tomato paste, 2 Tbsp sun-dried tomatoes, 1 Tbsp Italian seasoning, 1 tsp salt, and 1 tsp red pepper flakes. Continue cooking for 3 minutes until fragrant.

Add fillings

Fillings: Add 4 cups vegetable broth, 3 15-oz cans cannellini beans, and 2 cups kale. Cover and let simmer for at least 10 minutes, or until kale is soft.

Serve: Remove from heat and stir in ½ cup heavy cream and ½ cup grated parmesan. Serve warm, optionally topped with croutons and fresh herbs.

OMG! Made this for a dinner party and people couldn't stop raving about it! Thank you. I took a few liberties: used liquid aminos to salt it and dumped in a bunch of nutritional yeast. 

We had it with sous vide ribs and an arugula salad. This is definately a new family staple!
