We really, really like soup. Especially this creamy vegetable curry soup, which comes together in 30 minutes, and is vegan to boot.

Vegetable Curry Soup

olive oil

onion, diced

carrot,

celery,diced

jalapeño seeded and minced

tsp fresh ginger, grated

garlic cloves

tbsp yellow Indian curry powder

tbsp garam masala

vegetable stock

tsp salt

coconut milk

tbsp cilantro, roughly chopped (extra for garnish)

oz mushrooms

eggplant,

broccoli,

red bell pepper, diced

zucchini,

In a large heavy bottomed pot over medium heat add olive oil and heat for 1 minute

Add onions, celery, carrots and jalapeños and cook until vegetables are tender

Add garlic and ginger and cook for 2 more minutes

Add curry and garam masala and stir until fragrant.Add to the pot the vegetable stock and coconut milk and salt and stir until coconut milk in fully incorporated

Serve warm with cilantro or green onions and flat bread.

Nut butter make an unusual and rich-tasting base for a soup. With notes of ginger, curry, and citrus, this soup is good hot or at room temperature.

Curried Nut Butter-Vegetable Soup

peanut (cashew, or almond butter, at room temperature)

lemon juice (or more to taste)

orange juice (preferably fresh)

green vegetables

Salt and pepper

Heat the oil in a soup pot. Add the onions, garlic, and celery and sauté over medium-low heat until all are lightly browned.

Transfer the onion mixture to a food processor or blender with 1 cup water and process until smoothly pureed, then transfer to the soup pot. Or, simply add 1 cup water to the pot and process with an immersion blender until pureed.

Add 3 cups water and bring to a rapid simmer. Whisk in the nut butter, about 1/3 cup at a time.

Stir in the curry powder, cumin, nutmeg, lemon juice, and orange juice. Bring to a rapid simmer, then lower the heat. Cover and simmer gently for 15 minutes.

Stir in the steamed vegetables. If the soup is too thick, add a bit more water. The soup should have a slightly thick consistency.

Season with salt and pepper, then serve hot or allow to cool to room temperature. Garnish each serving with a sprinkling of scallion and, if desired, chopped nuts

A warmly satisfying curry soup with a silky, golden broth. Easy to prepare and so nourishing. Great served with cooked rice or naan bread!

Coconut Curry Vegetable Soup (Vegan!)

onion

carrots

garlic

ginger,

vegetable broth

coconut milk (regular, unsweetened)

cauliflower florets (about 3 cups)

gold potato (1 medium)

sweet peas

curry powder (1 Tbsp. + 1 tsp.)

baby spinach (optional)

Fresh cilantro, cooked rice, naan, pita bread

Dice onion and carrots. Mince garlic and grate ginger, then set aside.

In a large pot, sauté onion and carrot for 7-8 minutes. (I use 3 Tbsp. water/broth for no-oil sauté method, adding more as needed.)

Meanwhile, dice potato and cut cauliflower into small florets.

When onion is translucent, add garlic, ginger, and curry powder. Stir and sauté for 1 minute.

Then add the vegetable broth, coconut milk, cauliflower, potato, and peas.

Bring to a light boil. Then reduce heat, cover, and simmer for 15-20 minutes.

Stir in spinach (if using) during the last few minutes of cook time.

Salt and pepper to taste. Then garnish with chopped fresh cilantro, and serve with rice or naan/pita bread if desired.

I made this tonight with a few minor adjustments. I sautéed onion, garlic, and ginger before throwing everything else in the pot. I also threw in 1/2 a bag of spinach in with the peas. My whole family absolutely loved this soup. It was so satisfying and tasty without being overly heavy. Perfect for a cool winter night! Thanks so much for the recipe!
