Vegetable Orzo Soup

14.5 oz can fire roasted tomatoes

Dice the carrots, celery &amp; onion. Heat a large stockpot over medium heat. When it is good &amp; hot, add the olive oil.&nbsp;

Then add the carrots, celery, onion and the spices - Italian seasoning, salt, pepper and red pepper flakes.&nbsp;

Sauté for 4-5 minutes until the vegetables begin to soften. Add in the garlic &amp; sauté for about another minute, until the garlic becomes fragrant.

Run your knife thru the spinach a couple times, chopping it into bite sized pieces. Add it to the soup pot.&nbsp;

Next add the pasta and give everything a good stir. Poor in the tomatoes, stock and water. Increase the heat to high and stir well to combine. Bring to a boil, then reduce the heat to medium - you'll still want to keep it a light bubble and cook until the orzo is cooked thru - about 8-9 minutes.&nbsp;

Continue to stir the soup often. The orzo has a tendency to stick to the bottom of the pan. In addition, stirring it will release the starches in the pasta and help to thicken the soup.

When the orzo is cooked, remove the soup from the heat. Add a squeeze of fresh lemon juice and about a tablespoon of chopped parsley for bright fresh flavor.

Comforting 15-minute lemon orzo soup recipe with pesto!  You can also make this orzo soup your own by adding other vegetables or throwing in shredded cooked chicken for a mean chicken orzo soup. If you don&#039;t have orzo, another tiny pasta or pearl couscous will work. Homemade basil pesto is best here, but if you don&#039;t have the time to prepare it in advance, use a quality store-bought one you like.

Pesto Lemon Orzo Soup

Extra virgin olive oil

In a large Dutch oven or heavy pot, heat 2 tablespoons extra virgin olive oil until shimmering. Add the dry orzo and toss around until toasted to a nice golden brown (1 to 3 minutes)

Pour in the broth and bring to a boil over high heat. Season with kosher salt and black pepper. Turn the heat down and let the orzo soup simmer for 8 minutes or until the orzo is cooked to al dente.

Stir in the tomatoes and baby spinach.

Remove the pot from the heat and stir in the lemon juice, milk, and pesto.

To finish, add about ¼ cup grated parmesan (or to your liking), and a sprinkle of red pepper flakes, if you want some heat. Taste and adjust seasoning. Serve hot.

Dice onion and carrot. Mince garlic. Dice potato in small bite-sized pieces.

In a stockpot over medium-high heat, sauté onion and carrot for 7-8 minutes. (I use 3 Tbsp. water/broth for oil-free sauté method, adding more as needed.)

When onion is soft, add garlic, potato, peas, corn, and Italian seasoning. Stir and sauté for 2-3 minutes.

Add broth and tomatoes. Bring to a light boil. Then reduce heat, cover, and simmer for 5 minutes.

Add orzo. Simmer for about 10 minutes, stirring often. (I find orzo has a tendency to stick to the bottom so it's best to stir often.) When orzo is just tender, turn off heat.

Stir in apple cider vinegar and fresh parsley. Serve with salt & pepper to taste if needed. (Be aware the soup continues to thicken as it sits and the orzo soaks up more broth. It's best not to overcook the orzo.)
