Pan-fried ocean perch fillet is covered with a thick vegetable sauce and has a savoury flavour. It might look complicated, but it is quite easy to make. The ocean perch goes so well with the Thickened Vegetable Sauce.Don&#x27;t forget to see the section &#x27;MEAL IDEAS&#x27; below the recipe card! Ocean Perch with Thickened Vegetable Sauce (Vegetable Ankake)

ocean perch fillet ((note1))

salt

onion

grams/0.9 ounces carrot (,

mushrooms

snow peas (, diagonally sliced)

dashi stock

mirin

soy sauce

tsp cooking sake

1½ tsp cornflour/corn starch diluted in 2 tsp water

On the skin side of the fillet, score diagonally in a few places where the flesh is thick. This will allow the fillet to cook evenly.

Sprinkle salt on both sides of the fillet.

Heat a frypan with oil over medium heat.

Put the fillet skin side down. Press down the fillet for a while to prevent it from curling.

Cook for 3 minutes, turn it over and cook for about 3 minutes until the flesh is just cooked and no longer translucent (note 2).

Transfer the fish to a serving plate, skin side up.

Pour the Vegetable Sauce over the fish. Serve immediately.

Add dashi stock and all the vegetables, excluding snow peas, to a saucepan and bring it to a boil. Cook for a couple of minutes.

Add the snow peas and the remaining Sauce ingredients except cornflour/corn starch to the pan.

When it starts boiling again, add the cornflour/corn starch in a swirling motion and quickly mix the sauce. The sauce should thicken.

As soon as it starts boiling, turn the heat off.

Vegetable Sauce

This healthy vegetable sauce is loaded with SEVEN different veggies (including a legume for extra protein) and blended into a creamy hidden veggie pasta sauce. It is so delicious and smooth. I guarantee you that even your picky eaters will lick the bowl. This is by far our daughters&#39; favorite sauce for spaghetti.

Vegetable Pasta Sauce (7 Hidden Veggies)

Olive oil

Onion (medium)

Garlic

Zucchini (350 g)

Carrots (medium) (100 g)

Celery (35 g)

Sieved tomato puree aka Tomato sauce (700 g)

½ tsp Oregano (dried)

½ tsp Basil (dried)

+ ½ cup Chickpeas (canned)

Tbsp Nutritional yeast

Salt and Pepper to taste

Peel and chop onion and garlic.

Wash and chop celery.

Wash, peel, and chop carrots and zucchini.

Prepare the ingredients

Heat a stockpot or a Dutch oven to medium heat and add olive oil.

Cook chopped onion for 1-2 minutes, add chopped garlic and cook for a few seconds.

Add sliced carrots. Stir and cook for 5-6 minutes.

Add zucchini cubes with salt (it will help to release the moisture in the zucchini).

Add black pepper, dried basil, and oregano and stir until combined.

Add celery stalk and stir again.

Add tomato sauce and cook veggies until soft. 

Finally, add canned chickpeas without water and cook for 1-2 minutes until they warm up. Add nutritional yeast (optional) and stir. Now, the veggies are ready for blending. 

Add all veggies to a blender and blend until you get a creamy veggie pasta sauce.

It's delicious and guilt free! I'm trying to incorperate more vegetables into my diet. I'm not sure, maybe my measuring was off but it was missing a touch of acidity or brightness, so I added a squeeze of fresh lemon. I do have one question regarding portion size. 196 calories per serving, but what is the serving size?

Healthy Vegetable Pasta Sauce

This healthy veggie pasta sauce is loaded with hidden veggies and dairy-free cream cheese for a creamy, flavorful, and nutritious vegetable sauce the entire family will love!

Healthy Veggie Pasta Sauce

300 g tomatoes (chopped)

g bell pepper (chopped)

zucchini (chopped)

garlic

tsp Italian spice blend

Salt & black pepper (to taste)

cream cheese

vegetable broth

200 g uncooked pasta (gluten-free, if needed)

basil (for garnish)

You can watch the short video in the post for visual instructions.Preheat the oven to 390 °F (200 °C) and grease a medium baking dish with a little oil.

Add the tomatoes, bell pepper, zucchini, onion, garlic, Italian spice blend, salt, and black pepper. Stir to combine.

Next, add the vegan cream cheese and pour in the veggie broth.

Bake for 20-22 minutes, or until the cream cheese is starting to turn golden.

Meanwhile, cook pasta according to package directions, then drain most of the pasta water, but keep a small amount (see notes).

Remove the baking dish from the oven and blend the veggies using an immersion blender or regular blender.

Add the cooked pasta to the veggie sauce and stir to combine.

Serve in bowls, garnish with chopped basil and enjoy!
