Grilled vegetable skewers are a fun way to serve tender-crisp, flavorful veggies, that can be customized to your liking. They&#39;re an easy-to-make side dish perfect for any outdoor meal!

Vegetable Skewers

olive oil

Italian seasoning

Kosher salt

zucchinis (, sliced)

yellow squash (, sliced)

Thread

If using wooden skewers, soak in water for 10 minutes. Preheat the grill to medium heat (about 350°F) and close the lid. Chop the vegetables and then thread through skewers in desired pattern. Place skewers on a baking sheet.

Whisk

Whisk together the olive oil, Italian seasoning, salt and pepper in a bowl. Then brush on top of the vegetables.

Grill

Place the skewers on preheated grill. Turn the skewers until nicely browned on all sides, about 10 to 15 minutes. Season with salt and pepper before serving, if desired.

These easy Grilled Vegetable Tofu Skewers are made with cubed tofu and a rainbow of fresh veggies marinated in flavorful chimichurri sauce.

Grilled Vegetable Tofu Skewers with Chimichurri Sauce

parsley

poblano pepper, (chopped into ½-inch pieces)

zucchini,

red onion,

cherry tomatoes

cilantro leaves

Whisk parsley, cilantro, garlic, crushed red pepper, grapeseed oil, red wine vinegar, and salt until evenly mixed.

Mix the Chimichurri Sauce:

If using wood skewers, soak them in water for 10 minutes before using.

Build the skewers, alternating between the bell pepper, poblano pepper, zucchini, red onion, cherry tomatoes, and cubed tofu. (Use peppers or onion on the ends of the skewers to prevent pieces from breaking.)

Brush half of the chimichurri sauce on both sides of the assembled skewers. Set the skewers aside to marinate for about 30 minutes. You can marinate the skewers while the grill is preheating.

Build the Skewers:

Preheat the grill to high heat.

Once preheated, spread the skewers directly on the grill grates, cover, and cook for 10 minutes, or until grill marks appear on the bottom of the tofu and it easily releases from the grill. If the tofu is sticking to the grill grates, cook for 2 additional minutes and then check again. The skewers should be easy to flip and should not stick to the grill.

Flip and rotate the skewers and cook for 10 additional minutes, or until the tofu and vegetables are browned on both sides. (20 minutes total cooking time.)

Transfer the skewers back to the baking sheet or to a serving dish and brush with the remaining chimichurri sauce. Serve with additional fresh parsley and cilantro leaves if desired.

Marinated Tofu Veggie Skewers

rice vinegar

maple syrup (or use brown sugar)

Drain the tofu and cut it into 1.5-inch square chunks. Set aside.

Combine the garlic, ginger, soy sauce, sriracha, rice vinegar, sesame oil, maple syrup, lemon juice, and Worcestershire sauce in a small bowl or container and whisk them together.

Add the chunks of tofu, cover and refrigerate for about an hour or more.

Soak your wooden skewers for about 10 minutes before assembling so they don&#039;t catch fire when cooking.

Assemble the skewers by sliding the veggies and tofu chunks onto the skewers, alternating the veggies and tofu.

Grill on an outdoor grill over medium-high heat for about 3 minutes per side, or cook indoors on a hot skillet.

Brush with some leftover marinade while grilling.
