Smoky, spicy and sweet, these Vegetarian Baked Beans start with a base of slow roasted caramelized onion, carrot and garlic, then BBQ sauce and fire roasted tomatoes are added to make up this saucy, mouthwatering recipe. This recipe is vegan and vegetarian. Smoky Vegetarian BBQ Baked Beans

C (200 grams) Dry Beans

C (260 grams) Purple Onion (about

C (215 grams) Carrots (sliced, about 4 medium)

Cloves Garlic (large, minced)

Red Chili Flakes ((if you

tsp Smoked Paprika

tsp Fine Sea Salt

Tbs Coconut Oil (unrefined cold-pressed, or olive oil)

C (350 grams) Fire-Roasted Tomatoes (crushed, one can)

C (275 grams) Smoky Bourbon Homemade BBQ Sauce

If using canned beans, drain them and move on to #2. Otherwise, soak dry beans overnight, or at least 8 hours, making sure water covers the beans by 3&quot;. Drain and rinse the beans. In a medium saucepan, add beans and enough fresh water to cover beans by 3&quot;. Add a pinch of salt and bring to a boil. Turn heat to medium-low and simmer for about 30-60 minutes. Start checking the beans at around 30 minutes. The beans are done when they are tender. (How long it takes for the beans to cook depends on the age and type of the beans used). Drain and set aside.

Preheat oven to 350F (177C).

In a large roasting pan, add the onion, carrots, garlic, chili flakes, cumin, paprika, salt and coconut or olive oil. Stir. Roast for 20 minutes, stirring after 5 minutes to evenly distribute the coconut or olive oil.

To the onion mixture, add the cooked beans, fire-roasted tomatoes, and BBQ sauce. Gently stir.

Bake, uncovered, at 350F for 45 minutes. Allow to rest for 5 minutes before sharing.

Store leftovers in a covered container for up to two days or freeze for up to two weeks.  When reheating, add additional BBQ sauce or water to thin the beans as they tend to thicken.

Preheat the oven to 350 degrees F.

In a large pot, warm the olive oil over medium heat. Add the chopped onion and stir for about 5 minutes, until soft. Then add the garlic and cook for 1 more minute.

To the pot, add the molasses, brown sugar, ketchup, salt, apple cider vinegar, vegan Worcestershire sauce and Sriracha hot sauce. Stir well, then add the drained and rinsed beans.

Transfer to a large casserole dish (I used a 9 x 13 inch dish) and cover with foil. Bake for 1 hour. The sauce should thicken a bit.

Keep warm until ready to serve.

Place a saucepan over a medium heat and add the olive oil and onion. Add a pinch of salt and cook the onion until soft. Add the garlic and cook for 1 to 2 minutes.

Add the remaining ingredients and bring to a simmer and reduce the heat to low. Cook for 45 minutes to an hour. Adjust the seasonings as necessary.

Heat the oil in a large skillet. Add the onion and sauté over medium-low heat until translucent. Add the garlic and continue to sauté until the onion is golden.

Add the remaining ingredients to the skillet, plus 3 tablespoons water, stir together.

Continue to cook for 10 to 15 minutes over low heat, stirring occasionally. The sauce should be nicely thickened and enveloping the beans. Serve at once.
