Bean & pepper chilli

olive oil

tbsp cumin

chilli powder

tbsp sweet smoked paprika

kidney bean

can mixed bean

can chopped tomato

Heat the oil in a large pan. Add the onion and peppers, and cook for 8 mins until softened. Tip in the spices and cook for 1 min.

Tip in the beans and tomatoes, bring to the boil and simmer for 15 mins or until the chilli is thickened. Season and serve with rice, if you like.

One Pot Vegetarian Chilli Mac

tomato soup or passata ((~ 2 cups))

tbsp oil

onions

g peppers

mild red chilli, (finely chopped)

mushrooms, (diced)

kidney beans

tsp smoked paprika

tsp mild chilli powder ((more

tsp cumin

Salt

Black pepper

150 ml water ((~ 1/2 cup))

pasta

To garnish: fresh coriander ((cilantro), chopped spring onions)

If using Iceland’s frozen tomato soup, put it in the microwave for around 10 minutes to defrost.

Meanwhile, heat the oil in a large saucepan. Add the onions, peppers, finely chopped chilli, and diced mushrooms. Cook over a medium heat for a few minutes, until the vegetables are fairly soft.

Add the kidney beans and spices, and season well. Next add the tomato soup, water, and raw pasta. Mix well, and bring to a simmer. Cook over a medium-low heat for around 15 minutes, stirring regularly, until the pasta is cooked. Add another dash of water if you need to.

When the pasta is ready, add about half of the grated cheese, and mix to combine. Sprinkle the remaining cheese on top, and cook over a low heat until the cheese melts (place it under a grill / broiler if you prefer).

Serve hot, preferably with fresh coriander (cilantro) and chopped spring onions.

Slow cooker vegetarian chilli. Made with Quorn mince, beans and vegetables. This delicious healthy chilli is easy to make. Meat lovers will love it too!

Slow Cooker Vegetarian Chilli

(diced)

Red Pepper (diced)

300 g Quorn meat free mince

salt

tbsp chilli powder

½ tsp ground cumin

vegetable stock

coriander (freshly chopped)

In a slow cooker combine all the ingredients, except the vegetable stock. Stir well and place in the fridge overnight.

The next morning add the vegetable stock and stir well.

Cook on high for 3 – 4 hours.

Serve on basmati rice with the coriander sprinkled over.

Batch-cook this chilli on a chilly evening and keep some in the freezer to heat up after a long day. Serve with rice, lime wedges, avocado and soured cream

Three-bean chilli

vegetable oil

onions, finely chopped

garlic cloves, finely chopped

yellow peppers, deseeded and roughly chopped

red peppers, drained and roughly chopped

coriander,

tsp coriander

cinnamon

oregano

sugar

chipotle paste (optional)

can black beans

cannellini beans

can chopped tomatoes

dark chocolate, roughly chopped

lime

Heat the oil in a deep pan or flameproof casserole dish over a medium-low heat. Stir in the onion with a pinch of salt and cook for 10-12 mins until softened. Tip in the garlic and peppers and cook for 5 mins. Mix in the coriander stalks, spices, oregano, sugar and chipotle paste if using. Cook for a further 5 mins, until everything is well combined and softened. Pour in the beans, along with their liquid, the tomatoes and stock. Season well and bring to a simmer.

Leave to simmer on a low heat for 1 hr-1 hr 10 mins until thickened and reduced. Stir in the dark chocolate and season to taste. Serve over rice with lime wedges, avocado, soured cream and coriander on top.
