Homemade onion bhajis are well worth the effort, they're great as a starter for an Indian feast.

Onion bhaji

free-range eggs

onions, sliced

flour

tsp coriander

cumin seeds

tbsp vegetable oil, plus extra if required

While devilled eggs had their moment in the UK – at about the same time the hostess trolley held sway – they are an essential part of the American entertaining tradition. There’s not much that can get me squeezing a fancy-nozzled piping bag, but this recipe – even if mine diverges somewhat – compelled me to. Although they are a bit fiddly to make, they’re not difficult, and they are always a major hit. And I’m talking about genuine enjoyment not ironic amusement. As many as I make, I never have a single one left over.

Equipment: You will need a piping bag fitted with a star nozzle.

mayonnaise

1–2 tsp English mustard

tsp sea salt flakes

¼ paprika, plus extra for sprinkling

Tabasco

tbsp extra virgin olive oil

water

tsp finely chopped chives

Veggie sausage rolls are easy to make and ideal for serving at a party or keeping in the fridge for a festive treat. These are packed with savoury cheesy stuffing and cranberries.

Veggie Sausage Rolls

175 grams/6 ounces crustless day-old wholemeal bread, torn into pieces

butter,

leeks (150 grams/5½oz trimmed weight), thinly sliced

sage leaves, finely chopped

thyme leaves

free-range eggs, 1 beaten for egg wash

120 grams/4 ounces Parmesan (or alternative vegetarian hard cheese), grated

grams/3½oz manchego (or alternative vegetarian hard cheese), grated

500 grams/1lb 2 ounces pack all-butter puff pastry

tsp plain flour,

grams/1¾oz cranberries

salt and black pepper

Make up a batch of these blinis for a party – if the recipe gives you too many you can freeze them. Delicious served with smoked salmon and soured cream, or maybe a spot of caviar.

350 grams/12 ounces plain flour, sifted

285 milliliters/½ pint milk, lukewarm

145 milliliters/¼ pint milk, tepid

free-range egg whites, whisked

A great side dish for al fresco lunches. Lettuce usually takes a back seat but, when cooked well, its flavour is worth celebrating on its own.

boxes camembert (or vacherin Mont D’or, or Tunworth)

I go into auto-Parmesan-shortbread mode whenever I have friends coming for supper, as not only is it perfect with drinks, but it can be made in advance. Indeed you can make the dough, wrap it and then leave it in the fridge for up to three days before slicing an baking, although you will need to let these cheese-scented cylinders sit out on a kitchen surface just long enough to get the fridge-chill off them before slicing.

grams/3½oz unsalted butter, softened

These tarts make a beautiful vegetarian starter when served aside some simple salad leaves. They are also perfect for a picnic.


Equipment and preparation: For this recipe you will need two four-hole Yorkshire pudding tins.
