You're looking at the ultimate vegetarian nachos recipe! No meat here—just tortilla chips, beans, veggies, lots of cheese and simple, creamy avocado sauce. Recipe yields 6 servings.

Loaded Veggie Nachos

sturdy tortilla chips

(15 ounces) pinto beans, rinsed and drained, or 1 ½ cups cooked pinto beans

(4 ounces) shredded cheddar cheese

(4 ounces) shredded Monterey Jack cheese, or additional cheddar

red bell pepper, finely chopped

feta cheese

jalapeños,

Avocado dip, thinned

green onions

radishes, chopped

cilantro

Your favorite salsa (here’s my red salsa and salsa verde)

Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper. Place handfuls of chips on the baking sheet and distribute evenly, minimizing the gaps between chips. Set aside.

Sprinkle the prepared pan of chips generously and evenly with the beans, followed by the shredded cheese, bell pepper, crumbled feta and pickled jalapeños (use more if you really love jalapeños, less if you don’t). Bake until the cheese is melted and bubbling, about 9 to 13 minutes. Remove the nachos from the oven and set aside.

While the nachos are baking, make the avocado sauce and prepare the garnishes.

Once the nachos are out of the oven, drizzle avocado sauce on top as shown—any extra can be served on the side. (If using guacamole instead, dollop the guacamole over the nachos like polka dots.) Sprinkle the nachos with chopped green onion, radish and cilantro. Serve immediately, with salsa on the side.

Kate, I made your Homemade Vegetarian Chili recipe with very minor changes. The changes were made only because I was taking care of my husband's mother and father, in their home, and I used what they had. My father-in-law had hip surgery. A couple of days after he was home, he started to fall and my mother-in-law tried to catch him. They both ended up in the floor and she ended up with a broken shoulder. They are in their late 80's. I wanted something healthy for them to eat. I have used a couple of your recipes in the past; but, this is the first time that I left a comment. It was a huge hit. Yummy!  I made the Loaded Veggie Nachos and my company loved them, even took a photo of the recipe home with them!  I did all of the prep work early in the day so there was little last-minute busyness.  Also like serving them right out of the oven and out-to-the-porch:)

We made this as appetizer for a birthday party. There were no leftovers. We changed the recipe by smearing refried beans as well as spreading pinto beans. Great nachos and the vegetarians and gluten free people in my family loved it.

We love this recipe.  I asked my husband what he wanted for dinner this Friday, the start of the baseball American League Division Series.  He replied "the food of victory".  So this is what he's getting.  :-)

I altered a smidge: I added diced red onion (didn't have green on hand); added olives to my kids' side (5 and 8 years)...blah); used diced avocado because I was too lazy (and hungry) to make the sauce or gauc; and finally, topped it all with a squeeze of lime and "Karam's Garlic Sauce"...freaking delish. I’m eating this as I type - so good! I modified a tad, using  ancient grain organic tortilla chips, adding black beans, omitting pickled jalapeños and cilantro bc I use them in my homemade green salsa and substituting all the cheeses with just goat cheese cheddar cheese. It’s unbelievable how good these nachos taste!

Yes, it's a "nachos" recipe. But, let not the name fool ya, we have loads of Mediterranean flavors going on!

Mediterranean Roasted Tomato "Nachos" Recipe

lb grape tomatoes

extra virgin olive oil, more for later

garlic cloves, crushed

Salt

Package Flatout® Flatbread Traditional Thin Pizza Crust (6 flatbreads)

tsp za'atar spice

artichokes,

herbs (parsley, dill and mint)

Kalamata olives

In a large bowl, place tomatoes and crushed garlic. Add a generous pinch of salt. Drizzle with the olive oil. Toss to combine.

Spread tomatoes on a baking sheet. Roast in the heated oven for 30 minutes. Remove and set aside to cool.

Switch oven to broil. Brush the flatbread lightly with extra virgin olive oil, then cut into triangles. Broil for 1-3 minutes, watching carefully, until the flatbread triangles turn into golden brown crispy chips.

Place the flatbread chips on a serving board or a platter. Top with roasted tomatoes.

Sprinkle with za'atar spice, then add the remaining toppings. Serve immediately.

I love the idea of Mediterranean nachos! Any excuse for more feta and olive sin my diet is good with me :)  And this is so pretty!  It would definitely make a great party app.

Healthy Loaded Sweet Potato Fries

sweet potatoes

cherry tomatoes, halved

Cut sweet potatoes into fry shapes. Toss in olive oil and spices. Spread out on a cookie sheet covered with foil and sprayed with nonstick spray. Bake for 20-22 minutes. Flip and bake for an addition 20 minutes.

While the fries are baking, drain and rinse black beans and chop the onion, jalapeno, and tomatoes. Add the beans and chopped veggies to a small bowl. Season with the juice of 1 lime, 1 tsp chili powder, and crushed garlic clove.

When the fries come out of the oven, top with the veggie mix and sprinkle with cheese. Return to oven and bake for 3-5 minutes or until the cheese melts.

Fully Loaded Black Beans Nachos

jalapeño (thinly sliced)

Heat oil in a large skillet over medium-high heat. Add onion, garlic, and jalapeño and cook, stirring often, until softened, about 3 minutes.

Transfer onion mixture to a food processor and add black beans, lime juice, and ¼ cup water. Season with salt and pepper and process until smooth.

For the Black Beans

Preheat oven to 425 degrees.

Arrange half of chips on a baking sheet. Top with half of beans, then half of each cheese.

Repeat layering with remaining chips, beans, and cheese and corn.

Bake until cheese is melted and gooey, about 5 minutes.

Serve nachos topped with pico de gallo, sliced jalapeño, scallions, cilantro and radishes.
