Creamy Spinach and Feta Cheese Tortilla Wraps

cream cheese

bag ((6 to 8 ounces) baby spinach leaves)

salt and fresh ground pepper (,

green onions (, thinly sliced)

parmesan cheese

Cooking Spray

Preheat oven to 350.

Grease a baking dish with cooking spray and set aside.

Place cream cheese in a medium sized mixing bowl and set aside.

Heat olive oil in a large skillet; add onions and pepper strips.

Season with salt and cook for 3 to 4 minutes, or until tender.

Stir in garlic and continue to cook for 30 seconds.

Add spinach; season with salt and fresh ground pepper and continue to cook and stir for 3 minutes, or until spinach is cooked down.

Remove from heat and add spinach mixture to the cream cheese.

Add green onions and cheeses; mix and stir until creamy and well incorporated.

Place about 1/4-cup filling onto each tortilla; roll it up.

Arrange tortilla wraps in the previously prepared baking dish.

Lightly coat each tortilla wrap with cooking spray.

Bake for 15 minutes, or until lightly browned and heated through.

Cut each roll in half and serve.

Make the pickled radishes: Slice the radishes and place them in a jar or cup. In a bowl, whisk together the vinegar, sugar, and salt until the sugar and salt dissolve. Pour over the sliced radishes. Let sit at room temperature for at least 30 minutes, or 1 hour if time. You can make this a day or 2 ahead of time and store it in the fridge or in a sealed container or jar.

Make the roasted peppers: Preheat the broiler to high. Slice the peppers. Rub the pepper slices with the olive oil and place them on a baking sheet, skin side up. Broil the peppers until the skin becomes blackened and charred, about 8 to 10 minutes. Remove from the oven and sprinkle with a few pinches of kosher salt.

Make the herb goat cheese spread: In a bowl, stir together the goat cheese, olive oil, basil, and oregano until combined.

Prep the other veggies: If desired, soak the red onion in cold water for a few minutes to remove the bit. Wash the lettuce. Slice the avocado. Slice the bread.

Assemble the sandwiches: Spread 2 slices of the bread with the goat cheese spread. Top with red onion, lettuce, avocado, yellow and red peppers, pickled radishes, and the remaining pieces of bread.

arugula leaves (packed tightly)

walnut pieces (toasted)

Preheat Oven

Broil Peppers

Line a small baking sheet with foil. Put the pepper on the baking sheet and broil until the skin is beginning to char, using tongs to turn occasionally, about 10 minutes. Remove the baking sheet from the oven and wrap the foil around the pepper. (Use oven mitts!) Let the pepper steam in the foil for 10 minutes.

Slice Peppers

Remove the pepper from the foil and transfer it to a cutting board. Peel off the skin, cut off the stem, pull out the seeds, and discard them. Cut the rest of the pepper into thick strips.

Assemble Sandwiches

Spread 1 tablespoon of pesto onto the bottoms of the ciabatta bread. Divide the pepper strips onto the bread, then place the mozzarella slices on top of the pepper strips. Top with the remaining slices of bread and brush the tops with olive oil. (If you're going to serve the sandwiches cold, don't brush them with oil—just eat them!)

Grill Sandwiches

Heat a grill pan or griddle over medium heat. Flip the sandwiches over and place them on the grill pan oiled-side down, then brush the other side of the sandwich with oil. Use a spatula to press the sandwiches down slightly, but don&#39;t press too hard or you&#39;ll have a mess of mozzarella everywhere! Cook 5–8 minutes on each side, or until golden brown.

Make Pesto

Combine arugula, walnut pieces, cheese, and garlic in the large bowl of a food processor. Pulse until finely chopped, then pour olive oil through the feed tube and continue to process until almost smooth. Season with salt and pepper to taste.

Cut the tomato into 1/4- inch slices. Then pat dry with a paper towel.

Toast the bread until crisp or to your liking.

Spread butter on both slices, and then spread mayo on top.

Place the tomato slices on top of one slice. Sprinkle salt and pepper to taste,

Add lettuce on top.

Place the second slice of bread on top and press down slightly. Serve and enjoy!
