This vegetarian taco meat is made with cauliflower, walnuts, and chipotle peppers. It's so easy: just mix and bake. Meatless miracle!

Cauliflower Walnut Vegetarian Taco Meat

cauliflower florets

whole walnuts

individual chipotles in adobo sauce

chili powder

cumin

salt

lime juice

garlic or onion powder

cayenne

Preheat the oven to 375 degrees. Pulse all ingredients in a food processor until the mixture is evenly ground (see picture).

Transfer to a greased baking sheet. Bake for 30 minutes, stirring halfway through to prevent over-browning.

Serve in tacos, burritos, quesadillas, bowls, and the like!

I made these tonight as I had some accidently over-roasted walnuts I added into it after the initial baking period. Even with this alteration it was delicious! I used some jalapeno rather than the abodo chiles. With some Daiya cheese, salsa, black beans and guacamole on top they were grubbin' as we used to say.

I make this once a week. My husband and I love it. He thinks it tastes like real meat which is saying a lot. Anyway I forgot to get walnuts today. I’m guessing it won’t be the same without them?? Are they needed to get that consistency? Thanks!

I made this with the few walnuts I had on hand and subbed in roasted, no salt pistachios for the balance. It was yummy!!!!

I saw this on your instagram and I already made it for my family over the weekend.  It was a hit!  They were skeptical at first, but everyone happily ate it.  I bought some more cauliflower this morning so I can make another batch to have in the fridge this week.  Yum!

As soon as this recipe hit my inbox, I was off to the store to get the ingredients. This was SO EASY to make and it came together really fast! My ever-skeptical-of-vegan-food mother rolled her eyes when she saw the recipe, scoffing "I don't see how that could possibly taste good". When it was all done I was able to persuade her to try "just a bite" and  WOW! Both of us were plowing through the meatless delight faster than Grant took Richmond (as my Grammy says). Such a brilliant, easy and delicious recipe. THANK YOU for sharing this. I can't wait to feed everyone I know with this, I'm practically giddy!

These smoky and savory Tempeh Tacos are loaded with seasoned tempeh and a variety of toppings. Whip them up ahead of time for an easy weeknight meal!

Tempeh Tacos

tempeh

olive oil

yellow onion, diced small

soy sauce

smoked paprika

garlic powder

cayenne pepper (1/8th teaspoon)

tomato paste

water

corn or flour tortillas

chopped lettuce

tomatoes

avocado slices

salsa

Vegan Nacho Cheese (or vegan shredded cheese)

Vegan Sour Cream

Remove the tempeh from the packages, and cut into a few rough pieces. Place in a food processor, and pulse several times until it&#039;s a bit crumbly. Don&#039;t over process into a paste! Alternatively, you can grate it or chop it small.

In a large sauté pan, heat the olive oil over medium heat. Add the onion and sauté for 3-4 minutes, until translucent.

Add the tempeh and sauté for about 5 minutes, until the tempeh is golden.

Now add the soy sauce, cumin, smoked paprika, chili powder, garlic powder, cayenne pepper, tomato paste and water. Stir well and bring to simmer. Cook for about 5 minutes, stirring constantly. If the mixture gets too dry, add a little bit of water until the consistency is just right.
