These chewy chocolate balls are great as a treat and the filling in the middle can be adjusted to include any variety of nuts or spices. 

Coconut and chocolate balls

grams/¾oz palm sugar, grated

225 milliliters/8fl oz just boiled water or coconut water

300 grams/10½oz glutinous rice flour

100 grams/3½oz sesame seeds

vegetable oil,

grams/1½oz cocoa powder

grams/1½oz desiccated coconut, toasted

sesame seeds

tsp toasted sesame oil

palm sugar, grated

4–5 tbsp coconut milk

Cook these veggie kebabs on the barbecue or under the grill.  If you're short on time use teriyaki sauce instead of the marinade and ready-made satay sauce in place of the dressing.

red pepper, de-seeded and cubed

yellow pepper, de-seeded and cubed

cherry tomatoes

salad onions topped, tailed and cut into 5cm/2in lengths

baby courgettes,

groundnut oil oil,

kebab skewers

basmati rice, to serve

soy sauce

garlic clove, crushed

tsp sugar

ginger

salt and black pepper

shallot, finely chopped

½ tsp hot chilli powder

dark brown sugar

110 grams/4 ounces unsalted roasted peanuts, ground

150 milliliters/5fl oz coconut milk

½ lemon, juice only
