Garden Vegetable Cream Cheese

oz cream cheese

diced bell peppers

red onions

carrots

cherry tomatoes

garlic powder

onion powder

pepper

Wash and dice your fresh vegetables and set aside.

In a large mixing bowl, use a hand or stand mixer to whip your cream cheese for about 2-3 minutes.

Now mix in your garlic powder, onion powder, salt and pepper.

Fold in your fresh veggies and scoop into a small container with a lid.

Toast and slice your bagels and spread some cream cheese on each half.

Peel and cut the carrot into 1-inch chunks. Roughly chop the dark and light green parts of the green onion into chunks. Cut the 1/4 red pepper into chunks.

Place the veggies (and fresh herb add-ins, if using) in a food processor and pulse until chopped. Add the cream cheese, Parmesan cheese, dried dill, garlic powder, and salt. Taste and add another pinch of salt (we like to add 1/8 teaspoon more). Dip with veggies or spread on bagels. Refrigerate 1 week, or freeze in dollops on a baking sheet, then transfer the dollops to a sealed container (you can place them right into lunch boxes and they defrost over a few hours).

I was so happy to find this recipe since I've been unable to find an organic veggie cream cheese locally.  This was so easy to make, and I was able to use any cream cheese I wanted.  I almost couldn't stop eating it by itself!  I finally decided to share it with a bagel.

Homemade Veggie Cream Cheese Spread

8 oz block of cream cheese, softened*

red bell pepper, finely chopped*

tbsp grated carrot

chives

parsley

tsp finely chopped celery leaves

tsp minced garlic*

onion soup mix powder

Chop herbs and veggies as specified in ingredients list, and add to a medium mixing bowl with softened cream cheese (leave cream cheese out on counter for 30 minutes to an hour). Stir to combine until all ingredients are well incorporated. Serve immediately, or transfer to an airtight container and refrigerate up to 5 days.
