These veggie fritters with corn, chickpeas, and bell pepper are super easy to make, they are vegan, gluten-free, protein-rich and perfect as a snack, side dish, lunch or dinner.

Veggie Fritters

chickpeas

onion

garlic

lime

onion powder

tsp cumin

tsp oregano

tsp smoked paprika

tsp red pepper flakes

Sea salt & pepper

rice flour ((see notes))

corn ((or canned))

bell pepper (chopped)

tbsp parsley (chopped)

Vegetable oil (for frying)

Vegan cheese ((optional))

Cashew dip ((optional))

Process chickpeas, onion, garlic, lime juice, and all spices in a food processor.

Add rice flour and mix again.

Put the mixture into a bowl and add the chopped pepper, corn, and parsley. Stir with a spoon or use your hands.

Form 8 patties and fry them with some oil in a skillet from both sides (about 5 minutes each) until golden brown.

Serve with a cashew dip. Enjoy!

Salty-sweet beet fritters with a tangy and herby yogurt dill sauce! A super versatile, plant-based side perfect for your next brunch, lunch, or dinner! Just 7 ingredients required.

Easy Beet Fritters with Dill Yogurt Sauce

shredded raw beets ((2 medium-large beets yield ~3 cups))

shallot*

Tbsp flaxseed meal ((ground flax seeds))

tsp sea salt

tsp black pepper

chickpea flour*

Tbsp avocado oil

plain unsweetened dairy-free yogurt

Tbsp freshly chopped dill*

sea salt

olive oil

Shred cleaned and peeled beets using a box grater or grater attachment on the food processor, then transfer to a large mixing bowl. Stir in the chopped shallot, flaxseed meal, salt, and pepper, and set aside for 10 minutes.

If serving with dill yogurt sauce (optional), add dairy-free yogurt, fresh dill, salt, and olive oil to a small bowl and whisk to combine. Place in the refrigerator to keep the sauce cool.

To the beet mixture, add the chickpea flour and stir until well combined. Get out a large plate or tray to hold the patties. Form into patties using 1/4 cup (50 g) of the beetroot mixture per patty. Press together in the palm of your hands to form a thin, flat patty. Recipe as written makes ~8 patties.

Heat a large cast iron skillet over medium / medium-high heat for a minute or two and then add 1 Tbsp (15 ml) avocado oil.

Once the oil is hot, swirl to coat the pan. Add only as many fritters as will fit comfortably in the pan. You should hear a sizzling sound that indicates the oil is hot enough. If the oil is splattering, reduce the heat.

Cook for 2-4 minutes, or until underside is browned. Then flip carefully, flatten with the back of a metal spatula, and cook for 2-3 minutes more. Transfer to a plate and repeat with remaining 1 Tbsp (15 ml) avocado oil and fritters.

Serve warm with dill yogurt sauce (optional). Store leftover fritters covered in the refrigerator for up to 3-4 days, or in the freezer up to 1 month. Reheat on the stovetop over medium heat, in a 350 degree F (176 C) oven, or in the microwave until hot. If frozen, thaw slightly before reheating.

Easy Beet Fritters with Dill Yogurt Sauce | Minimalist Baker Recipes

These cheesy veggie fritters are the perfect easy vegetarian lunch, with plenty of vegetables and crispy cheese! A great fridge clearer.

Cheesy Veggie Fritters

70 g cheddar cheese, (grated (~ 2/3 cup when grated))

60 g (~ 1/3 cup) tinned sweetcorn

bell pepper, (finely diced (I used orange))

eggs, (lightly beaten)

100 g (~ 3/4 cup) plain flour

Black pepper

tbsp oil

Grate the courgette (zucchini), and spread it out on a double sheet of kitchen paper. Use another couple of sheets to press out any excess water. You don't need to be super thorough.

Add the grated courgette to a mixing bowl, and add the remaining ingredients (not including oil). Mix thoroughly until well combined.

Heat a dash of oil in a large frying pan, add dollops of the fritter mixture (1-2 tablespoons per fritter), and gently flatten each dollop into a fritter shape. Don't overcrowd the pan - you'll need to cook in batches (I cooked 3 at a time). I made 12 fritters in total, but this will depend on how big you make them.

Cook the fritters over a medium heat for a few minutes each side, until golden brown and crispy. You can add a little more oil to the pan in between batches, if needed.

If you need to keep the fritters warm while you're cooking the next few batches, place them on a plate in a warm oven.
