In need of a light vegetarian lunch, side dish, or dinner? Mediterranean Orzo Pasta Salad is just the colorful, healthy salad recipe for all three jobs!

Mediterranean Orzo Pasta Salad

olive oil

red wine vinegar

lemon juice (about ½ lemon)

oregano

garlic (minced)

Salt and pepper (to taste)

orzo pasta

cucumber

cherry tomatoes (sliced in halves)

½ red onion (diced)

Kalamata olives (sliced)

feta cheese

baby bell peppers (sliced (or one regular bell pepper))

Cook the orzo according to package directions. Drain and set aside to cool, about 10 minutes.

Mix all the dressing ingredients in a small bowl or jar. Whisk or shake with lid on vigorously to combine.

In a large bowl, mix cooled orzo, vegetables, Kalamata olives and cheese. Add about half of the dressing and toss to coat. Keep refrigerated for about 2 to 3 hours and add remaining dressing before serving.

This Mediterranean orzo salad is a 20 minute recipe you won&#039;t want to miss!! It&#039;s easy to throw together with my special trick, and doesn&#039;t skimp on flavor. Plus, easily make it vegan using your favorite dairy free cheese!

Vegan Mediterranean Orzo Salad

spinach (, sliced)

mushrooms (, about 12-13 mushrooms (I use crimini))

tomatoes

orzo (, gluten-free if needed)

chickpeas (,

olive oil (, oil

basil (, sliced)

garlic powder

thyme

lemon pepper

vegan feta (,

Place

Place spinach, basil, mushrooms and sun dried tomatoes in the bottom of a pasta strainer.

Cook

Cook the orzo according to package directions.&nbsp;

Drain

When ready to drain, pour the whole pot of orzo with the water over the veggies in the bottom of the pasta strainer. This will slightly cook them. 

Put the pot top over the strainer to steam the veggies. Allow to sit for 3-5 minutes.

Rinse

Rinse with hot water to remove starchiness from the pasta then drain well and place everything in a big bowl or back in the pot.

Add the chickpeas, oil, basil, seasonings, and feta into the bowl/pot and mix until well combined.
