How to Make Vietnamese Coffee

We used the Trung Nguyen brand of ground coffee for this Vietnamese coffee recipe, but you can use any good French roast coffee, too.

Our Phin Vietnamese coffee filters are the 6-ounce size, but they come in different sizes depending upon your brewing needs. Alternatively, you can use a French coffee press or your favorite drip coffee method.

Measure 3 tablespoons of ground coffee, and distribute it evenly into the filter.

DO NOT shake the filters or compress the coffee, or the coffee grounds will drop into the holes of the coffee filter and plug up the holes! The result will be that the coffee takes forever to drip, or the grounds may clog the filter entirely. Place the metal filter gently on top of the coffee.

Pour your desired amount of condensed milk into a mug or heatproof glass.

Measure out 6 ounces of near boiling water. Use 8 ounces if you don’t like your coffee with such a strong kick in the pants.

With the filter placed over the glass, pour two tablespoons of hot water into the filter and wait for 5 seconds to "bloom" the coffee. The bloom is the part of the coffee brewing process when the water releases CO2 from the coffee, and the grounds expand.

Next, press on the filter gently to compress the bloomed coffee. This helps slow down the drip rate when you use all of your water, and also makes for a more flavorful coffee.

With these steps, you’ll be able to achieve the optimum brewing time. That said, now slowly pour the rest of the water into the filter, and the coffee will begin dripping into your cup or glass.

Wait about 5 minutes for the coffee to finish drip brewing!

Remove the filter, and stir to mix in the condensed milk.

This fast and delicious ice-blended Vietnamese coconut coffee recipe is great for anytime of day.

Ice-Blended Vietnamese Coconut Coffee Recipe

Use a Vietnamese coffee filter (phin) to brew the Vietnamese coffee, OR

Use a French press. I like using this for tripling the recipe above for larger parties. Boil water to 205 F, add the coffee grounds to the press, pour in the water and put the French press lid on. Wait 3-6 minutes (longer = darker), slowly press, and pour out the coffee so it stops steeping.

Chill the coffee in the refrigerator for 15-30 minutes before assembling to slow the melting of the slushy.

Brewing coffee

Add the coconut cream, ice, and condensed milk into a blender and blend until thick and frothy. Consistency should be thick. Taste and adjust sweetness and thickness. Add more ice or cream if it needs more thickener, add more condensed milk for sweetness, or coconut milk if you want to thin it out.

Place the slushy back into the freezer for 30 minutes to one hour to get an extra thick consistency.

To assemble, pour chilled Vietnamese coffee into two glasses and top with the coconut slushy.

Mix and enjoy!

Coconut Slushy

Three main factors effect the taste of the Vietnamese iced coffee. The quality and grind of the coffee and the quantity of the sweetened condensed milk. Find a good coffee and adjust the grind as needed for your filter. Adjust the sweetened condensed milk to your preferred sweetness. We will often mix the sweetened condensed milk with some half and half to reduce it&#039;s sweetness a bit. For a quick version, use a shot of espresso instead of the coffee brewed in the traditional filter.

Add Sweetnened Condensed Milk

Pour the sweetened condensed milk into an 8-10 oz glass.

Pack Coffee Grinds

Remove the top screen from the coffee filter. Put the ground coffee in the filter, screw screen back on, compacting the grounds. Place filter on the glass with the sweetened condensed milk. Pour just enough hot water to cover the grounds and let sit for 30 seconds.

Add Water

Loosen the filter screen screw at least 2 full rotations. Pour hot water to top of filter, cover and let sit until water has gone all the way through filter (should be @ 5 min. at a rate of 3-4 drips/sec. If it is faster, coffee&#039;s grind is too coarse. If slower, coffee&#039;s grind is too fine.)

Stir

When water has passed though filter, remove filter from glass. Stir coffee and sweetened condensed milk together. Add ice and enjoy.

Vietnamese cold brew coffee is constantly in my fridge all summer long.  Its easy to make and the sweetened condensed milk adds just the right amount of sweetness to strong yet smooth coffee.

Combine the cold brew concentrate and water in a large container or pitcher if making a batch.  Start with 2 cups of water.  After mixing in the condensed milk, if the coffee is still too strong for your liking mix in 1 additional cup at a time until it suits your tastes.  If making just one serving, prepare it right in your drinking glass.

Whisk in the sweetened condensed milk until completely combined.  Serve over ice or just chilled straight from the fridge.

If making a batch, transfer the coffee to an air tight container and keep in the fridge for up 7 to 10 days.

How to Make Vietnamese Coffee (Vegan)

Pour the sweetened condensed milk into a tall glass.

Bring about 1/2 cup of water to a boil. In the meantime, place the Vietnamese coffee filter on top of the glass. Add the ground coffee to the filter, and place the small press that goes inside on top of the ground coffee. Pour about 2 tbsp of boiling water into the filter and wait for about 20 seconds.

Next, pour in the rest of the water to fill the filter cup to the top. Cover with the lid and let it drip for about 5 minutes or until the coffee is not dripping anymore.

Remove the coffee filter from the top of the glass and use a spoon to mix the condensed milk with the coffee. Add the ice and serve immediately!
