Garlic Chili Noodles

11 oz Dried Ribbon Noodles(300 grams) ((Note1))

1½ Tbsp Cooking Oil ((Note2))

½ Cup Scallion(white part) (thinly sliced)

¼ Cup Vegetable Broth(low-sodium)

Tbsp Light Soy Sauce ((Note4))

Tbsp Dark Soy Sauce

Tbsp Chinese Black Vinegar ((Note5))

Tbsp Korean Chilli Powder/Flakes ((Note6))

¼ Cup Scallion(green part) (thinly sliced)

Tbsp Toasted Sesame Seeds

Chilli Flakes (optional)

1. Heat a small frying pan( my frying pan is 6″/18cm diameter) over very low heat. Add cooking oil along with thinly sliced scallion( white part) and minced garlic. Sauté for 5 minutes on very low heat and constantly stir. (we don’t want to burn them, if you see they start burning, turn the heat lower)

2.Turn on the kettle with water for the noodles. After sautéing our aromatics for 5 minutes, we add vegetable broth, light and dark soy sauce, black vinegar, and Korean chilli powder/flakes( Gochugaru) into the sauce pan and stir. Turn the heat up to medium-low and let the sauce simmer away for 5 minutes without a lid on. (If you sauce is ready but the noodles are not ready yet, just turn off the heat and leave the sauce on the stove).

3. Meanwhile , we gonna cook dried noodles while the sauce is simmering. Cook the noodles in a pot according to package instruction.

4. Drain the noodles very well then pour the garlic chilli sauce over and mix well until the noodles are well coated with the sauce. Finish with more scallion(green part), toasted sesame seeds, and more chilli powder/flakes. Serve when hot and enjoy!

Garlic Chilli Noodles

Vietnamese Garlic Noodles, or Mì Xào Tỏi, are the ultimate side dish! Plump chewy noodles are coated in a buttery, garlicky, umami-rich sauce that enhances any dish it&#39;s paired with. It&#39;s a crowd favorite for a reason!

Vietnamese Garlic Noodles (Mì Xào Tỏi)

lb refrigerated lo mein noodles ((see notes))

unsalted butter

garlic (minced)

tsp oyster sauce

soy sauce (I recommend low sodium)

tsp fish sauce

tsp white granulated sugar

Parmesan cheese

onion

Salt and pepper (to taste)

In a small bowl, whisk together oyster sauce, soy sauce, fish sauce, and sugar. Set aside.

Bring a large pot of salted water to a boil. Have it boiling and ready while you work on the sauce.

In a large skillet or wok, melt butter over medium heat. Add garlic and cook for 1 minute until fragrant, stirring often. Make sure to not brown the garlic, you just want it lightly cooked.

Drop the noodles into the boiling water. Lightly agitate the noodles to separate them but don&#39;t overwork and break them. Boil for 30 seconds maximum, then use tongs to quickly transfer the noodles to the garlic butter.

Give the sauce a whisk and add to the noodles in the skillet, making sure to get all the sugar. Lightly season the noodles with salt and pepper, then toss and stir to evenly coat the noodles in the sauce.

Turn off the heat. Add the Parmesan cheese and green onion. Toss to combine and season to taste.

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. Save ¼ cup (60 ml) of pasta water, then drain.

In a large bowl, combine the shrimp with salt, pepper, paprika, and garlic powder. Set aside.

In a hot wok, melt the butter over medium-high heat. Add in the scallions, garlic, and shallots. Stir fry until fragrant, about 1 minute.

Add in the shrimp, and stir fry, until pink and opaque, about 4 minutes.

Stir in the oyster sauce, soy sauce, sugar, and fish sauce.

Toss in the cooked spaghetti. Mix until well coated. If the sauce seems dry, add the pasta water as needed until the desired consistency is reached. Top with shaved Parmesan.

Bring a small pot of water to boil over a stove. Add in fresh chow mein noodles and with a fork, gently stir the noodles until they separate. It should take about 2 minutes. Drain noodles and set aside. (If you are using another kind of noodles, always follow the cooking instructions on the package.)

In a large sauce pan or wok, heat butter or oil. If using butter, heat the pan on low heat in order not to burn the butter. When the oil starts to shimmer or the butter has melted, add in minced garlic. When the garlic starts to brown and become fragrant, add in fish sauce, oyster sauce, sugar, and Maggi seasoning. Then add the noodles and stir for a minute to combine.

Turn off heat and add parmesan cheese to the noodles. Stir well. Serve while hot.

this is the only recipe i have found that comes close to thanh long....

We used to live in San Francisco, and ate these noodles many times. This recipe was pretty darn close. I didn’t have oyster sauce and used tonkatsu sauce instead, but followed the recipe otherwise. I made them with butter, which I really think makes a big difference. thank you for posting this. Brought back some good memories

I've been to Than Long and Crustacean many times and have also worked to recreate the recipe for many years. This is the closest I've found so far. Congratulations! My one suggested change would be to replace raw garlic with an equal amount of roasted garlic. This seems to get the garlic flavor closer to the original.

Amazing recipe!  Very, very, close to my favorite spot in the East Bay (never been to Thanh Long's).  I added a little olive oil for sheen, a squeeze of lime for lift, and chives for color.  Nearly identical!!!

This was delicious!  The noodle texture was excellent and there was a lot of flavor.  I made the mistake of sneaking in a bite before donning my face mask - don't do it! - this stuff is LEGIT GARLIC.  :oP  I wonder if the parm cheese needs to be this shelf stable kind in a can?  Or can it be like from a fresh block?

Spaghetti CAN work in a pinch

Into your water, you dissolve baking soda and boil your noodles in that. The baking soda changes the alkalinity of the water and will change the texture of the noodle.

Nom nom nom. The noodles were perfectly cooked and the ideal  combination of slippery and sticky. Comforting and tasty flavor without overpowering garlic. It was even toddler approved - my kids gobbled it up and couldn't stop asking for more.

This was so delicious!!!!  I made this with 2 changes,  I used bucatini noodles, and added sauté’ mushrooms!

Try microwave it for 1.5 to 2 minutes, remember to poke a hole in the center of the packet then rinse under running cold water, now you can stir fry or used it in noodles soup, Bon appetit!

Boil spaghetti. Bring a large pot of lightly salted water to a boil. Boil the spaghetti al dente according to the package instructions. Save 1/4 cup of pasta water.

Saute the sauce. In a large skillet over medium-low heat, melt the butter and add the minced garlic. Saute the garlic until golden brown and fragrant about 3-4 minutes. Then stir in the oyster sauce, fish sauce, maggi seasoning (or soy sauce), sesame oil, msg, and brown sugar. Stir until combined. Add the green onion and saute for 30 seconds or until lightly wilted.

Add the pasta. Toss the pasta in the sauce and add the freshly grated parmesan cheese. Add 1-2 tablespoons of pasta water if the sauce is too thick. Remove from heat and serve. Enjoy!
