Traditional Vietnamese Beef Pho Recipe by Tasty

oz ginger, 2 large hands, halved lengthwise

garlic,

kg medium yellow onion, halved lengthwise

lb flat rice noodle,

red onion, very thinly sliced lengthwise

jalapeño, sliced into thin rounds

Tasty

Place the beef bones in a large stock pot, then add enough cold water to cover by 2 inches (5 cm). Bring the mixture to a boil over high heat and cook for 10 minutes to blanch the bones and remove any impurities.

Set a rack in the upper third of the oven and preheat the broiler.

Drain the bones in a colander and rinse under cold running water. Return the blanched bones to the stockpot.

Meanwhile, arrange the ginger, garlic, and onions cut-side up on a rimmed baking sheet and broil on high until the aromatics are deeply charred in spots, 5 minutes. Remove from the oven and add to the stockpot with the bones.

Meanwhile, combine the cinnamon sticks, peppercorns, and star anise in a medium skillet over medium-high heat and toast, shaking the pan occasionally, until the spices are darkened in spots and extremely fragrant, about 5 minutes. Add the toasted spices to the stockpot.

Season the brisket liberally with salt and add it to the stockpot.

Fill the pot with enough cold water to cover everything by 1 inch (2 cm). Bring to a boil over high heat, then reduce the heat to medium to maintain a gentle simmer, skimming off and discarding any fat that floats to the top as needed, until the brisket is fork-tender, 2-3 hours.

Using tongs, transfer the brisket to a plate and let cool completely. Refrigerate the brisket until ready to serve.

Continue to simmer the broth to get as much flavor out of the bones as possible, 3-4 hours more.

Using tongs, remove and discard the bones and aromatics. Slowly strain the broth through a fine mesh strainer set over a large pot. Skim and discard the fat from the broth, then stir in the fish sauce. Taste and add more as desired.

Thinly slice the brisket. Very thinly slice the raw sirloin steak against the grain.

Divide the noodles among 6-8 large bowls, then top with the brisket and raw steak. Ladle the hot broth over the noodles and meat and serve immediately with the bean sprouts, onion, jalapeño, Thai basil, lime wedges, hoisin sauce, and Sriracha alongside.

This is one of my siganture recipes - it&#x27;s as delicious as it is healthy, ideal for making ahead, for midweek meals and a cheap (impressive) meal idea for large groups. DON&#x27;T BE DAUNTED by the list of ingredients - the ingredients for the marinade and sauce are largely the same!

Vietnamese Noodles with Lemongrass Chicken

lemongrass

garlic (, finely chopped or minced)

lime juice

tbsp fish sauce ((Note 2))

soy sauce ((all purpose or light, NOT dark soy))

brown sugar

vegetable oil

fish sauce ((Note 3))

tbsp rice vinegar

tbsp white sugar

water

garlic (, finely chopped)

red birds eye chilli (, finely chopped (Note 4))

tbsp oil

200 g / 7 oz vermicelli noodles (, dried)

carrots (, julienned)

cucumbers (, julienned (optional: remove seeds))

iceberg lettuce (, finely sliced)

bean sprouts

mint leaves

cilantro/coriander

Lime wedges ((to serve

Combine Chicken and Marinade ingredients and set aside for at least 1 hour, up to 24 hours. (Note 4)

Heat 1/2 tbsp oil in a fry pan over medium heat (or heat the BBQ). Remove chicken from marinade, shaking off large bits of lemongrass (small bits should fall off during cooking).

Place chicken in the pan and cook each side until dark golden brown and chicken is just cooked through - about 6 to 8 minutes in total.

Remove from pan, shaking off any remaining bits of visible lemongrass and set aside to rest for 5 minutes. Then slice into thin pieces.

Lemongrass Chicken

Combine the Nuoc Cham ingredients and mix well to dissolve the sugar. Adjust to your taste (spiciness, lime, sweetness) and set aside for at least 20 minutes.

Nuoc Cham Sauce

Soak the vermicelli noodles in hot water for 3 minutes (or according to packet instructions), then drain and rinse under cold water to stop the noodles from sticking together.

Individual servings: Place noodles in bowl. Top with vegetables and herbs, and sliced chicken pieces. Drizzle with a few tablespoons of Nuoc Cham Sauce (be generous, ~ 4 tbsp per serving) and serve with lime wedges.

DIY (my preferred way): Place chicken, vegetables, herbs, noodles and sauce in separate bowls / piled on platters. Then let everyone make their own bowls!

Assemble

Vietnamese Vermicelli  Noodle Bowl w/ lemongrass chicken (or shrimp or tofu) served over rice vermicelli noodles, with veggies and herbs  &amp; flavorful Vietnamese dressing, called Nuoc Cham.

Vietnamese Vermicelli Noodle Bowl

-1 1/4 lbs chicken thighs (boneless, skinless), tofu or large prawns

shallots,

garlic

tsp kosher salt

tsp sugar

½ tsp ground Chinese five spice

oz vermicelli rice noodles, cooked and cooled

Red Bell pepper

cucumber,

daikon radish- grated or

basil basil

additions: cilantro crushed peanuts, bean sprouts, microgreens

lime juice (or sub part rice vinegar)

tablespoon fish sauce (or sub soy sauce, or make vegan fish sauce)

tablespoon sugar

red chile- medium spicy

Make the marinade

 Chop lemongrass into thin slices and place in a food processor and pulse repeatedly until very finely chopped. Add the remaining ingredients- shallot, garlic, salt, sugar, five spice, and pulse until very finely chopped, add the oil and pulse to create a paste.

Massage the chicken thighs ( coat tofu or shrimp) with the marinade.  Let marinate 30 minutes, several hours or up to 48 hours for the most flavor!

Cook noodles

according to package directions. Drain, rinse with cold water. Or if you prefer your noodles warm, rinse with hot water. 

Prep all the Veggies

slice the bell pepper, cucumber, and daikon radishes.

Make Nuoc Cham Dressing

&#8211; mix lime juice, fish sauce, water, sugar until sugar dissolves then top with a few sliced chilies in a small bowl. Set aside.

Grill

Preheat grill to medium-high.  Grill the chicken until deep grill marks appear, lower the heat, and cook all the way through. Place in a warm oven until ready to use. Slice.  Alternatively, you can cut the chicken into bite-sized pieces and cook on a grill pan. 

Assemble bowls

Place cooked noodles, fresh veggies, fresh herbs, grilled chicken, grouped together in a wide bowl, and spoon a little of the dressing over the noodles and veggies. Enjoy!!

I made this based on the recipe and it was really good. I had cashews though instead of peanuts so used them. The Thai basil makes this dish! My recommendation is to double or triple the sauce but that’s a personal preference though.

Healthy Vietnamese Vermicelli Noodle Bowl with your choice of lemongrass chicken, shrimp or tofu served over vermicelli rice noodles, w/ fresh veggies and basil & flavorful Vietnamese dressing. Video.

 Vermicelli Noodle Bowls

This is a quick and easy Mi Quang recipe. I used fresh rice noodle and dyed yellow using tumeric. You can opt to buy the dried flat rice noodle version that is already yellow and is made specifically for mi quang. Just follow the instruction on the package to prepare.

Mi Quang

5-6 lbs Pork Ribs (Cleaned and chopped to cubes/chunks.)

lbs Pork Belly (Cleaned and sliced square pieces.)

lbs Shrimps (head on) (Cleaned

tbsp Garlic (Finely Minced.)

tbsp Large Shallots (FInely Minced.)

tbsp sugar

tsp Turmeric Powder

tsp Ground Black pepper

6-8 tbsp Fish Sauce

tbsp Chicken Granulated Seasoning ((1 tbsp MSG))

Boiled Quail Eggs

Liters Coconut Water

VEgetable Broth

oz Dried Shrimp (soak

Vegetable Oil

Flat Rice Noodles ((Dyed yellow with turmeric))

Lettuce & Mints (chopped to strings.)

Toasted Peanuts

Black Sesame Toasted Rice Crackers

Shredded Banana Flowers

Marinade pork ribs chunks with: 2 oz Mi Quang Seasoning (or half of the mixture using the separate ingredients)1/2 of minced garlic, 1/2 of minced shallots, 2 tbsp sugar, 3 tbsp fish sauce, 1 tsp ground black peppers, 2 tsp turmeric powder, 2 tsp chicken granulated seasoning.

Give good mix, then add a bit of cooking oil to keep meat moist. cover and let marinade outside for 1 hour.

Marinade Pork Ribs

Marinade the same for each SEPARATELY. Different cooking time.1 oz mi quang seasoning, 1/4 minced garlic, 1/4 minced shallots, 1 tbsp sugar, 1.5 tbsp fish sauce, 1 tsp ground black peppers, 1 tsp turmeric powder, 1 tsp chicken granulated seasoning.

mix well, then add bit of oil and mix again. Cover and let marinade for at least 1 hr.

Marinade Pork Belly and Shrimp

In a pot, add a bit of oil and fry up some minced shallots and garlic till aromatic.

Add in the marinated pork ribs and stir fry until evely seared.

add in 2 liters coconut water

add in 2 cans vegetable broth

add in 1 liter of water

bring to boil and add in dried shrimp (in container pod/pouch).skim off any foam that comes to the top.

Let simmer on Medium heat for 1 hr

add in 1 cans boiled quail eggs.Taste and adjust broth to your taste. (add fish sauce, chicken granulate, water if too salty, ect.)simmer for another 30 min or until ribs is tender to your liking. (don&#39;t let it be too tender)

Broth

In a deep pan,add a bit of oil, minced shallots, and garlic - fry till aromatic.

add in the marinated pork belly slices.stir fry until pork is evenly cooked. Add in the marinated shrimps. Make sure the pork is about cooked first before adding the shrimp since shrimps cook very fast.stir fry until all shrimps have turned a solid orange.

add in 1 cups of our cooked broth. taste and adjust to your liking.simmer on medium for another 2-3 min.turn off heat and ready to serve!

Toppings

Put flat wide rice noodles in bowl.Top off with the stir fried sliced pork and shrimps.Add in broth. Traditionally the broth for this dish is not abundant. Only pour broth a bit under the noodles. You can add more broth if you choose to after you start eating.Top off with crushed peanuts, lettuce, banana flower shreds, mints, and rice crackers. (chili oil or spicy if you wish)ENJOY!

Excellent DIY spread for gatherings - lay it all out on tables and let everyone put their own bowls together. Chicken version here. Slightly different toppings because chicken is a white meat, pork is richer. :)

Vietnamese pork noodle bowls (bun thit nuong)

lemongrass marinated pork ((it's marinated overnight. 8 pieces, serves 4))

200 grams/ 7 ounces dried vermicelli noodles ((Note 1))

lettuce

cucumbers (, halved lengthwise then

unsalted peanuts

carrots

white radish (daikon) (, peeled,

white sugar

tsp cooking salt (kosher salt)

rice vinegar ((sub apple cider vinegar))

tbsp fish sauce ((Note 3))

tbsp rice wine vinegar

birds eye chilli

Pickle – In a large bowl, dissolve the salt and sugar in the hot water. Stir in vinegar. Add carrots and daikon – they should just about be covered.

2 hours – Leave for 2 hours until slightly floppy. Drain well then use per recipe.

Make pickled vegetables:

Nuoc cham sauce - Mix ingredients together. Until sugar is dissolved.

Vermicelli noodles - Soak in boiling water for 5 minutes (or per packet directions). Drain, rinse under tap water, then cool and drain thoroughly (nobody likes watery noodles!).

Toppings - Prepare all the other toppings, ready to use.

Cook pork per the recipe.

Assemble bowls - Place noodles in a bowl. Top with lettuce, pickled vegetables, cucumber and bean sprouts. Slice pork, place 2 steaks on each bowl. Top with herbs, sprinkle with peanuts and sliced chilli. Add a lime wedge.

Serve with nuoc cham on the side so everybody can help themselves. Douse generously! Dive in and eat!
