Grinder Salad Sandwiches

Add all of the ingredients except banana peppers, onion, and lettuce to large mixing bowl. Whisk together until smooth &amp; creamy.

Add the remaining salad ingredients to the mixing bowl. Stir until evenly combined. Chill in the refrigerator while preparing the subs.

To Make The Grinder Salad

Using a serrated bread knife, cut your hoagie rolls evenly in half (lengthwise). Lay them out on a large sheet pan. To the tops of the hoagie buns, layer on your cheeses- we tore our slices in half to ensure better coverage. To the bottom side, arrange/layer on your chosen meats.

Bake the prepared sandwiches at 350° for roughly 5 minutes, just until the cheeses have melted and the meat&#39;s begun to crisp on the edges. Carefully remove the pan from the oven, and let the sandwiches cool.

Top the meat with grinder salad, spreading it out evenly to coat. Add the top half to close the sandwich. Slice in half, and serve immediately.

Repeat until all sandwiches have been served. Serve any additional grinder salad on the side.

Upside Down Apple Tart

puff pastry (thawed)

apple

brown sugar

apple pie spice (*see notes)

egg (beaten (optional for egg wash) *see notes)

Turbinado sugar ((optional for topping))

Prepare ingredients:Preheat the oven to 400°F (205°C) and prepare a large sheet pan lined with parchment paper.

Peel and remove the apple core. Cut the apple into 24 thin slices per half an apple.

In a bowl, mix together the brown sugar and spices until evenly combined.

For the puff pastry, cut it into 6 equal pieces, about 3in x 4.5in (7.5cm x 11.5cm) each. You may need to slightly roll out the puff pastry sheet and dust off excess flour if needed.

Assemble:Place about 1 teaspoon of the spiced brown sugar mixture onto the prepared sheet pan. Top it with 4 slices of apple, slightly shingled, followed by another teaspoon or so of the spiced brown sugar. Lastly place a sheet of the puff pastry on top. Press the edges down and use a fork to make indentations along the edges. Repeat with remaining apple slices, brown sugar, and puff pastry.

Optional: Brush the tops of each puff pastry with egg wash and top with some turbinado sugar.

Bake:Bake the apple puff pastry for about 18 to 20 minutes or until the tops of the puff pastries are golden brown.

Remove the pastries from the oven and let them cool for a couple of minutes. Flip the pastries over and enjoy warm by themselves or with a scoop of ice cream!

The not so secret ingredient in these easy mayonnaise roasted potatoes yields the crispiest results. These crispy baby potatoes make the perfect side dish for a simple supper when paired with virtually any meaty entree.

Mayonnaise Roasted Potatoes

16 oz pkgs nibblet potatoes (roughly 5-6 cups)

mayonnaise

parsley

garlic powder

paprika

onion powder

salt & pepper (to taste)

Wash the potatoes. Then pat them dry and set aside.

To a mixing bowl add the mayonnaise &amp; seasonings, whisking together until smooth &amp; evenly combined.

Add the potatoes, tossing evenly to coat.

Spread the mayonnaise coated potatoes out onto a rimmed baking sheet in an even layer.

Bake at 425° for 20-25 minutes, just until the potatoes are fork tender.

Turn the oven to broil, and watching carefully, cook just until the skins have crisped up.

Let the potatoes rest for a couple minutes, then season with salt &amp; pepper, to taste.

Using a slotted spoon transfer them to a serving dish, or directly onto plates.

I use peeled yukon golds but otherwise do the same thing with the mayo &amp; spices and it's so insanely delicious! I also make a batch of caramelized Vidalias and add them to the roasted potatoes and it's simply sublime lol!

easy to prepare but next time I'll try cutting the potatoes in half so more of the seasoning soak into the potatoes.
