Refreshing Cucumber Mint Vodka Cocktail is sweetened with mint simple syrup. Easy to make and  so refreshing

Cucumber Mint Cocktail

Tbsp Cucumber, finely diced

Tbsp Mint Simple Syrup (recipe above)

Lime juice,

oz Vodka

oz Sparkling water

Mint sprigs,

Cucumber,

In a small heavy-bottom saucepan add sugar and water. Bring to a low boil, and cook until sugar dissolves.

Turn off heat, stir in mint leaves, and cover the pan. Allow mixture to steep for at least 15 minutes. Strain into a glass jar and cool.

This recipe makes 1 cup of syrup so there will be leftover. The Syrup can be kept sealed in refrigerator for 1-month.

Mint Simple Syrup

Finely dice 2 Tbsp cucumber. Cut 2 extra round or long slices for garnish.

Add diced cucumber, 2 tablespoons cooled simple syrup and lime juice to a cocktail shaker. Muddle (smash) the cucumber for about 1-minute with a muddler or the back of a wooden spoon.

Add vodka and crushed ice to the shaker. Shake vigorously for about 30-seconds.

Remove the lid of the shaker and pour evenly into two cocktail glasses, including ice and cucumber pieces. (Strain if you don&#039;t want the cucumber pieces in the glasses).

Top each glass to the top with sparkling water.

Garnish with cucumber slices or rounds and a mint sprig.

Cucumber Mint Vodka Cocktail

A pineapple vodka cocktail with fresh lime juice, and a sugared rim, is like sunshine in a glass! Easy to make with just 4 ingredients.

Pineapple Vodka Cocktail

Vanilla Vodka

Pineapple Juice

Lime Juice

Sugar,

pineapple slices,

ice for cocktail shaker

vanilla beans

Chill all ingredients ahead of time if possible

Place 2 tablespoons of sugar on a plate. Run a piece of cut pineapple around the edge of a chilled glass. Dip the rim of the glass into the sugar, gently turn to coat and allow to dry while you prepare the martinis.

In a large cocktail shaker add vanilla vodka, pineapple juice, and lime juice. Fill with ice and seal.

Shake vigorously to combine. Strain liquid equally into sugar rimmed glasses.

Add pineapple wedge garnish to each cocktail and serve

For One Cocktails:

Pour the vodka in a resealable bottle

Split open the vanilla beans and drop into the vodka

Seal and shake well. Shake off and on over 3-5 days for best flavor. Store in the freezer. This vodka will keep for a few months.
