A refreshing watermelon salad with tomatoes and a spicy dressing inspired from Asian flavours.

Spicy Watermelon Salad

watermelon triangles

nos medium sized tomatoes

tbsp chopped coriander leaves

nos chopped green chillies

peanuts

onion

soy sauce

sugar

Chinese rice wine vinegar

tsp sea salt

It&#039;s important to cut the watermelon in thin triangles (about 1.5 inches long). You can cube then as well. De seed the tomatoes and then cut them in triagles or cut them in cubes.

Place all the vegetables in a salad bowl.

Make a dressing of soy sauce, vinegar, sugar and salt. Now you can balance the dressing as per your choice. For Chinese rice wine vinegar, you can use regualr white vinegar as well.

Drizzle the dressing over the vegetables and toss them a bit. Pop in the refrigerator for 15 to 20 minutes and serve chilled.

This watermelon fruit salad features a refreshing, colorful mix of watermelon, cherries, and berries tossed with a handful of fresh mint in a sweet, tangy honey lime dressing.

Watermelon Fruit Salad

cherries

strawberries (quartered)

blueberries

blackberries

mint leaves (roughly torn)

lime juice

salt

Combine the watermelon, cherries, strawberries, blueberries, blackberries, and mint in a medium-sized bowl.

Whisk together the lime juice, honey, and salt. Drizzle over the fruit. Toss to coat. Chill until ready to serve.

Watermelon Fruit Salad with Lime Mint Dressing

strawberries,

raspberries

cherries, pitted and halved

tbsp lime juice

tsp lime zest

tbsp agave syrup

tbsp of fresh mint, finely chopped

Whisk together agave, lime juice, lime zest and mint. 

Prep watermelon and berries and place in a large bowl. Drizzle dressing over top and lightly toss. 

This salad is so very delicious, and everyone loved all of the flavors. I substitute basil, for the mint. Added a little honey dew,  another time I made it.

I did not like the lime dressing.  Fortunately, I tasted it before putting it on the salad.  Used orange juice and homey instead.  Everyone loved the salad, especially the addition of mint.

Excellent! Exactly what I hoped it would be — refreshing, unusual, and aesthetically pleasing. I ended up with pomegranate because I couldn’t find cherries, and I think I’d do it again! Definitely a great summer dish.

Lovely summer salad.  I did change the Cherries for Blackberries (I don't like Cherries) I also add Prawns and Parma Ham for a full summer meal!

Made a double-batch for a get-together and everyone loved it. Followed the recipe as written except I added a little extra lime juice and mint at the end. Perfect, refreshing treat on a hot summer day.

I made this salad for a weeknight dinner and it was a big hit.  The dressing  kicks it up a notch and makes it an outstanding dish.  I didn't have agave syrup so used honey as suggested.  I also had blueberries on hand so I threw in a handful.  This was a wonderful summer salad.  I'm probably going to make it again for a larger group!  Thanks for sharing!!
