Crispy Tofu with Wafu Green Beans

tbsp (45 ml) soy sauce

tbsp (30 ml) mirin

tbsp (30 ml) water

tbsp (15 ml) toasted sesame oil

tbsp finely chopped fresh ginger

tsp (10 ml) sambal oelek

garlic,

(125 ml) mayonnaise

(70 g) unbleached all-purpose flour

onion powder

cayenne pepper

eggs, lightly beaten

(100 g) panko bread crumbs

tbsp (45 ml) canola oil

lb (450 g) green beans, blanched

shallot, thinly sliced

In a bowl, combine all the ingredients, except for 
the mayonnaise.

Reserve 1/4 cup of the mixture. Add the mayonnaise to the remaining mixture. Refrigerate until ready to serve.

Wafu Dressing

In a shallow dish, place the flour. In a second shallow dish, lightly beat the eggs. In a third shallow dish, combine the bread crumbs, onion powder and cayenne pepper.

Dredge the tofu strips in the flour. Dip into the beaten eggs, allowing excess to drip off. Finally, press the sticks into the bread crumbs to coat them evenly.

In a non-stick skillet over medium heat, brown one-third of the tofu in 1 tbsp of the oil. Repeat with the remaining tofu, taking care to clean the skillet between batches. Season with salt and pepper. Keep warm.

In the same skillet over medium heat, soften the shallot in the reserved dressing mixture (1/4 cup). Add the beans and toss well. Continue cooking for a few minutes or until the beans are warmed through.

Divide the beans among serving plates. Top with the tofu. Serve with the wafu dressing and white rice.

Tofu and Green Beans

Délicieux! J’ai utilisé du tofu au gingembre. A part ça j’ai suivi la recette à la lettre. La sauce est bien relevée. Vraiment le meilleur tofu que j’ai mangé.

Un gros hit depuis toujours avec toute la famille! Je les fais cuire au four à 400° pendant 20 minutes (tourner après 10 minutes) avec une base d’huile dans la plaque! Et je fais des brocoli au lieu des haricots vert! On trouve que les brocoli absorbent mieux la sauce qui est DÉLICIEUSE! Un must a chaque mois ici!

Le tofu et les haricots étaient bons, mais nous avons troqué la trempette pour une sauce BBQ en cours de repas car on la trouvait vraiment trop salée. Somme toute, cette recette a généré plus de vaisselle que de satisfaction.

J'ai congelé et fait chauffer à 350 10minutes .Ils étaient croustillants et très bons

Combien de temps on peut conserver au frigidaire.

Excellente recette !  J'ai aussi fait cuire au four sur papier parchemin huilé à 400 degrés- 16/17 minutes (retourné après 
10 minutes) .  J'ai fait un mélange  de légumes brocoli, choux-fleur et poivrons de couleur que j'ai fait rôtir dans la petite vinaigrette.  Bon et beau !

Flank Steak with Potatoes & Green Beans

oz Flank steak

Shallot

Green beans (fresh)

Dab Butter (unsalted)

lb Baby potatoes

Wash the baby potatoes. Add them to a pot of salted boiling water. Cook for 10 min, or until fork-tender. Remove the potatoes with a slotted spoon. Keep the pot over heat.

Wash & trim the green beans. Add the green beans to the same pot of water. Cook for 2-3 min.

Melt a dab of butter in a pan over medium heat. Add the shallots. Cook, stirring for 2 min.

Add another dab of butter & the steak to the pan. Cook the steak for 3 min on each side, basting it with the shallot butter.

When the steak is cooked to your liking, remove it from the pan. Add a splash of water to the pan to deglaze it & stir. 

Serve the steak alongside the green beans & potatoes. Season with salt & pepper. Pour the shallot-butter sauce over all! Enjoy!

You'll never eat couscous without spicy merguez sausage again...or the other way around!

Couscous & Spicy Merguez Sausage

150 g Carrots (fresh)

g Couscous

g Chickpeas (canned)

Merguez spicy sausage

g tomatoes

tsp Spice mix for couscous

Add a drizzle of olive oil to a frying pan on high heat. Add the carrots, spices, salt and pepper. 

Add 8.5 ounces of water per person, salt and pepper, and cover. Let cook for 30 minutes. 

After 30 minutes has passed, add the semolina to a bowl with just enough hot stock to cover it. 

Add salt and pepper to the semolina and cover with plastic wrap. Allow to absorb the liquid for 5 minutes. 

Add the diced tomatoes and garbanzo beans to the carrots. Mix and let cook for 5 more minutes. 

During this time, prick the sausages a few times with a fork and cook in a frying pan for 4 minutes, turning halfway through.
