This classic Succotash recipe is a great way to infuse vegetables into any meal! It's a healthy side dish with a long history.

Easy Succotash

olive oil

white onion,

corn (or fresh corn cut off the cob)

lima beans

red pepper, finely diced

cherry tomatoes, halved

garlic powder

smoked paprika

sage

kosher salt,

black pepper

salted butter (or olive oil)

parsley,

Heat the olive oil in a large skillet over medium high heat. Add the onion and cook for 2 minutes, until translucent.

Add the corn, beans, red pepper, tomatoes, garlic powder,  smoked paprika, dried sage, salt, and the fresh ground black pepper. Cook, stirring occasionally until all vegetables are tender and nearly cooked, about 5 to 6 minutes.

Stir in the salted butter and parsley (if using) and cook 1 minute more, until the butter is melted. Taste and add the additional salt if desired. Serve warm.

A quintessential American dish that&#039;s chock-full of vegetables -- onion, corn, pepper, and tomatoes -- with just a bit of bacon for taste. Serve this succotash as a side or load it up with more goodies for a savory entree.

Classic Succotash Recipe

bacon

½ brown onion (finely diced)

corn kernels

cherry tomatoes (sliced)

red pepper (diced)

tsp smoked paprika

sage (chopped)

parsley (chopped)

basil leaves

salted butter

salt and pepper

Pour olive oil into a large pan. Over MEDIUM heat, fry the bacon and onion for 6 – 8 minutes, until the onion is translucent and the bacon is a little crispy.

Add the lima beans, corn, tomatoes, peppers, garlic powder, and smoked paprika, and fry for another 5 minutes. 

Add the fresh herbs, butter, salt, and pepper, and serve warm.
