Roasted Beet Hummus with White Beans is an ultra thick and creamy vegan hummus with nourishing beets, beans and kale. It has a spicy Thai chili kick and works well as a dip or spread.

Roasted Beet Hummus (with White Beans)

beets,

extra virgin olive oil (divided)

packed,

tahini

lemon, juiced

garlic

red Thai chili pepper, with seeds

salt

black pepper

Preheat oven to 400F and line a baking sheet with parchment paper.

Add the beets to a small bowl and toss with 1/2 tablespoon of oil. Spread out on baking sheet and roast for 30-35 minutes, or until the beets are tender. Stir or flip a few times to ensure they don&#8217;t burn. Remove from oven and let cool enough to handle.

Add the beets and remaining ingredients to a food processor bowl, and process on high until the mixture is smooth and creamy. You may need to stop the food processor a few times to scrape down the sides.

Scoop the hummus into a bowl and serve immediately, or place in the refrigerator to allow it to cool and firm up.

Store any leftovers in an airtight container in the refrigerator and enjoy within 4-5 days.

It's a strange time for sure, my friend - I hope you're keeping well. This hummus sounds SO good! My Mum is a huge fan of roasted beets - I am definitely going to have to make this for her soon.

This Creamy White Bean Dip is light, tasty, &amp; packed with flavor from spring herbs &amp; tahini. You’ll only need 5 ingredients to make this oil-free recipe!

Creamy White Bean Dip with Spring Herbs

parsley, thick stems discarded

(8 grams) chives,

(4 grams) loosely packed mint leaves

lemon (3

15.5-ounce

(140 g) high-quality, runny tahini (I recommend this one)

– 1 cup (175-235 ml) ice-cold water*

Herbs

Prepare your ice water, if you haven&#8217;t already (see note). Add the parsley, chives, mint, garlic, lemon juice, and salt to a food processor with the S-blade attached. Process for 45-60 seconds, until the herbs are roughly chopped. Stop every 15-20 seconds to scrape down the sides of the machine with a spatula.

Beans

Add the drained beans to the food processor and process until they are mostly broken down, 30 to 45 seconds.

Blend

Pour the tahini over the beans, then seal the food processor and begin to run. Slowly stream the ice water into the food processor while it is running, then continue to blend for 5 minutes, continuously. Use 3/4 cup of water for a thicker spread, and 1 cup of water for a smooth, creamy dip.

Serve

taste the dip and add any salt to taste, if necessary. Use a spatula to transfer the dip to a serving bowl and top with additional fresh herbs and/or olive oil, if desired. Or, store in an airtight container in the fridge for up to one week; note that the dip will thicken once refrigerated.

Great dip!  I didn't have fresh parsley so I used the mint and 1/2 bunch of cilantro which worked out surprisingly well! The reason I didn't give this 5 stars is because I added 1/2 cup of ice water right off the bat and it came out so thin for us! I measured all ingredients and the only variable was the official size of a "bunch" but I think even adding more cilantro wouldn't have thickened this up.  I will make this again with the listed ingredients, but slowly add my ice cold water a little at a time.  Using 1/2 c. water for us made a very runny dressing right off the bat.  Tastes great!!  But I thought there was some magic with the processing for 5  minutes that would make this thicken up, which is what we were going for.

White bean hummus, and specifically, navy bean hummus is one of the best alternative hummus recipes. Chickpeas are swapped out for white beans while the rest of the recipe stays the same. The result is a super creamy, protein packed white bean dip.

Navy Bean Hummus

tbsp tahini

tbsp extra virgin olive oil + extra as optional garnishment

lemon juice

tsp salt

water (as needed)

cilantro (washed and torn, as optional garnishment)

paprika (as optional garnishment)

pine nuts (as optional garnishment

Soak the dried navy beans overnight in 1 quart of cold water combined with ¾ tbsp salt. I usually do this on my counter in a glass bowl covered with a clean kitchen towel.

In the morning, drain and rinse the soaked navy beans and add them to a slow-cooker or medium-sized saucepan. Add enough water to the slow cooker (or sauce pan) to cover the beans by ~2 inches. Bring to a low simmer and allow the beans to cook until soft. About 1 ½ - 2 hours. Check the pot periodically and add additional water if needed.

Drain the cooked beans and combine the beans, tahini, olive oil, lemon juice, garlic and salt in a high-speed blender. Blend until creamy. If additional moisture is needed to get the desired consistency, add water ¼ cup at a time. I usually add ~1/2 cup of water.

Serve topped with a drizzle of extra virgin olive oil, cilantro, paprika, za’atar and toasted pine nuts.

(15 ounce) can cannellini beans, rinsed and drained

garlic*, chopped

basil leaves

Make your hummus: add beans, garlic, lemon juice, basil, salt and pepper in the bowl of a food processor. Pulse a couple of times until the mixture looks somewhat chopped. Add in the 3 tablespoons of olive oil while the machine is still running. Let process until the mixture is creamy.

If the mixture appears to be too thick, add in a tablespoon of water at a time to thin it out. Add more salt and pepper to taste, as necessary. Drizzle the top with a tiny bit of olive oil. Serve with extra basil on top and pita chips.
