Copycat Chipotle queso blanco is an easy recipe to make to get that famous authentic, restaurant-style look and taste.  Learn how to make this homemade Mexican white cheese sauce on your stovetop with no Velveeta and no Rotel.  It's the perfect vegetarian and gluten free game day dip!

Copycat Chipotle Queso Blanco

unsalted butter

white onion (finely chopped)

poblano pepper (finely chopped)

serrano pepper (finely chopped)

garlic (minced)

roma tomatoes (seeded and finely chopped)

milk

heavy cream

chipotle chili powder

cornstarch

Monterey Jack cheese (coarsely grated)

white cheddar (coarsely grated)

Melt the butter in a heavy-bottomed Dutch oven over medium heat.  Saute the onion and peppers until they are soft, roughly 5 minutes, stirring occasionally with a large wooden spoon.

Add the minced garlic and the tomatoes and cook until fragrant, roughly a minute, while constantly stirring.

Pour in the whole milk and heavy cream while whisking, then sprinkle in the chipotle pepper powder.

In a small bowl, make a cornstarch slurry by mixing equal parts water to cornstarch.  Mix with a fork until smooth, then gradually add it to the hot milk mixture, whisking constantly.  The cornstarch will make the sauce glossy and gluten free.

Bring the sauce to a near boil, then reduce the heat and let it simmer until thickened, whisking constantly to prevent lumps or burnt spots.  This will take roughly 10 to 12 minutes.

Remove the Dutch oven from the heat and stir in the grated cheese in batches until it is melted.

Taste then add enough salt to your liking.  Adjust other seasonings, if necessary.

Serve while warm.  Keep the sauce warm by turning the stove to the lowest setting or transfer the queso blanco to a small crockpot and keep on the warm setting.

lb Queso Blanco Velveeta

10 oz can Original Rotel diced tomatoes and green chiles (undrained)

tsp fresh cilantro (chopped (optional))

Put all the ingredients in a small slow cooker.

Heat on high, stirring occasionally, until cheese is melted and mixture is smooth.

Preparation in a slow cooker

Put all the ingredients in a medium saucepan.

Heat on low/medium-low, stirring often, until cheese is melted and mixture is smooth.

Preparation on the stove-top

Put all the ingredients in a microwave safe dish or bowl.

Heat on high for 1 minute, stir, and repeat until cheese is melted and mixture is smooth.

Preparation in the microwave

This quick and easy appetizer is perfect for any occasion. A creamy, fluffy dip made with whipped salty feta, paired with a honey blend of chili flakes and garlic. Serve alongside crispy pita bread, crackers or a veggie platter for a delightful starter.

ricotta (full fat)

sour cream (full fat)

salt (to taste)

black pepper (to taste)

lemon juice

tsp crushed red chili flakes

chives (for topping (optional))

tsp za’atar (for topping)

tsp black & white sesame seeds (for topping)

pita chips (for serving)

naan (for serving)

raw veggies (for serving)

blending

Add feta, ricotta and sour cream to a food processor. Season with salt and pepper. Blend on high until smooth, about 2-3 minutes. Taste, add salt and pepper.

sautéing

In a saucepan, heat olive oil over low. Add garlic, sauté until fragrant, about 1 minute. Turn off the heat. Stir in honey, lemon juice and chili flakes. Season with salt and pepper.

serving

Serve the whipped feta drizzled with spicy honey. Top with chives, za’atar, sesame seeds, some extra freshly ground black pepper and chili flakes. Enjoy with pita chips, naan or on a veggie platter.

Feta, ricotta and sour cream should be at room temperature.

This was absolutely to die for! I keep thinking about the flavors and how I might use this in other recipes. It’s that good!

This was a winning recipe! It was absolutely delicious. Rave reviews as well from guests. The only thing I struggled with is the honey mixture was quite runny and so made the dip a bit soupy. Is there a fix for this? I followed the recipe exactly so I’m not sure what I did wrong.

Have made this dip before but this time after putting into serving dish, and spooning honey mixture, dip turned into a watery mess that would not even grab onto pita chips.  It was like I poured water into the dish.  Have no idea what could have cause this.  Has this happened to anyone else?  Please email me if it has or if you have any suggestions - love this dip!!

I made this and the taste was amazing. But the dip was very “liquidy.”  Then it did not look appealing. I wonder why?  Was it the consistency of the honey or any other ideas?  I do want to make it again with the correction. Thanks
