Four Cheese Garlic White Cream Pasta Sauce

olive oil

butter

garlic

spaghetti

pasta water

chicken bouillon cube

heavy cream

parsley (finely chopped (or use green onions))

Heat olive oil and butter on medium heat in a large skillet, add minced garlic and coo for about 1 minute on medium heat, without burning.

Cook pasta in a separate pan, drain.  Reserve some of cooked pasta water.  Dissolve 1 cube of chicken broth bullion in 1 cup of hot pasta water.

Add pasta water (with the dissolved chicken broth bullion cube in it), heavy cream, and cooked spaghetti to the skillet with cooked garlic.  Bring to boil, stirring.  Once the liquids are boiling, immediately add cheese and keep stirring everything together (spaghetti and the cream), while boiling, until cheese melts and coats pasta, for about 1 minute.  Reduce to simmer and continue to cook, constantly stirring, to thicken the sauce - for another minute or two.

To serve, top each serving with finely chopped parsley or green onions.

Start by preheating the oven to 425F.

In a medium sauce pan, cook the frozen spinach on medium heat until all the water has evaporated. Season with salt and pepper to taste then set aside.

Place the pizza dough on a baking sheet or a pizza pan then evenly spread the white pizza sauce on top. Top it with the cooked spinach, and the diced sun dried tomatoes.  Place in the oven and bake for 15-20 minutes or until the crust is golden brown.

Pull our of the oven, stop with parmesan and red pepper flakes, slice and serve immediately.

This white cheese sauce is creamy and smooth with a distinct cheddar flavor. Perfect for serving with steamed vegetables or as a cheese dip!

White Cheese Sauce

all-purpose flour

butter (unsalted butter recommended)

milk (hot milk recommended)

cheddar cheese (grated (100 grams/4 oz))

paprika

Prepare all ingredients and set aside. Heat the milk using the microwave or stovetop until hot but not boiling and set aside.

Place a medium saucepan over medium-low heat. Add the butter and let it melt completely. Immediately add the flour and whisk rapidly to form a bubbly paste, less than 1 minute.

Add the milk 1/3 cup at a time, whisking continuously until the sauce starts thickening before adding the next batch. (If this takes longer than a minute or two, raise the heat slightly.) Scrape the bottom and sides of the saucepan with the whisk to prevent sticking.

Once all of the milk has been added, set the whisk aside and switch to a wooden spoon. Stir until the sauce starts bubble or becomes thick enough to coat the back of the spoon.

Remove the saucepan from the heat. Stir in the cheese and optional seasonings until the sauce is creamy and smooth. Serve immediately.
