These Peppermint Truffles are made with a sweet and creamy dark chocolate peppermint ball coated in white chocolate and topped with crushed candy canes. Line a baking sheet with parchment paper. Set aside.

In a medium pot or over a double-boiler, combine the chocolate and coconut cream on low heat, while stirring constantly until the chocolate is melted and the mixture is smooth and combined. Stir in the nut butter and maple syrup. Remove the pot from the heat and add the peppermint, vanilla, salt and optoinal protein powder (if using) and whisk again until very smooth. Taste and add more sweetener or peppermint extract to taste.Chill in the refrigerator for at least 20 minutes, or until firm enough to roll into balls

Scoop out 1/2 - 1 tablespoon-sized dough and roll it into a ball, repeating with the remaining dough. Place your truffles onto the prepared baking sheet and place the pan in the freezer for 10 minutes, or until firm.

Meanwhile, add white chocolate and coconut oil into a heat-safe bowl and melt over a double-boiler. Or, heat in the microwave in 20 second increments, mixing well in between, until smooth.Use a spoon to dip the truffles into the melted chocolate, then return them to the lined pan.Drizzle in a zig zag any remaining chocolate over the truffles and top each with a sprinkle of crushed candy canes.Return the pan to the fridge or freezer, for 10-15 minutes, or until the chocolate is set. Store leftovers in an airtight container in the fridge or freezer.

Set up a double boiler by placing a medium heatproof bowl over a small pot of simmering water. Add chocolate chips and heavy cream and stir until melted.&nbsp;

Turn off heat and stir in Baileys and salt. Refrigerate until chocolate mixture is firm enough to roll into balls, about 1 hour.&nbsp;

In a medium heatproof bowl, microwave white chocolate and coconut oil together in 20-second intervals until melted.

Using a small cookie scoop, roll chocolate into 1-inch balls then place on a parchment-lined baking sheet. Using a fork, dip each truffle into white chocolate, turning to coat. Place back on baking sheet and sprinkle with cinnamon sugar.&nbsp;

Terrible recipe. The semisweet chocolate was still liquid after an hour in the fridge and when left longer was impossible to shape. Once it was dipped into the white chocolate it immediately began to melt and discolour the white chocolate. I'm honestly mad at the ingredients I wasted trying to follow this impossible recipe.

I have made these a few times, they are amazing! A definite crowd pleaser.

Create homemade edible sugar cookie dough.

Using clean hands, scoop and roll the sugar cookie dough into balls.

In a microwave safe bowl, add white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between, until melted through.

Dip each ball of sugar cookie dough in the melted white chocolate. Toss to evenly coat, then tap off any excess. Add sprinkles on top to decorate. Set aside until the chocolate sets. Enjoy!

Easy White Chocolate Truffles Recipe

unsalted butter

condensed milk

Melt 2 cups of the white chocolate chips and set aside 1/2 cup.

Pour melted chocolate into a silicone candy mold and let excess drip off. Using an offset spatula or bench scraper, scrape off excess chocolate—place in the fridge for 5 minutes to harden.

While the chocolate mold is setting up, make the ganache. Place the butter, the remaining 1 cup of chocolate chips, and the condensed milk in a medium-sized heatproof bowl.

Microwave on high for one minute. Let stand one minute. Stir until smooth and combined, this may take a few minutes.

Pour into a pastry bag and cut off a very small amount from the tip.

Fill the molds almost all the way to the top with the ganache, leaving a small space to add more melted chocolate—place truffles in the fridge for 10 minutes to set.

Once set, pour the remaining melted white chocolate from step 1 on top. Using an offset spatula or bench scraper, scrape off the excess chocolate.

Place in the fridge for 5 minutes to set. Then, pop the chocolates out of the mold and enjoy!
