Morning Glory Muffins made with wholesome ingredients, are low in sugar and high in fiber. Nutty and hearty moist muffins with crispy edges for healthy breakfast or a snack.

Morning Glory Muffins

almond milk (unsweetened)

applesauce (unsweetened)

maple syrup

avocado oil

tsp pure vanilla extract

cinnamon

tsp baking powder (aluminum free)

tsp baking soda

tsp salt

whole wheat flour

raisins (unsweetened)

cranberries (sweetened)

coconut flakes (unsweetened)

walnuts (roughly crumbled)

Cooking spray (I use Misto)

Preheat oven to 350 degrees F and spray non-stick 12 muffin tin with cooking spray. Set aside.

In a medium bowl, combine oat bran and milk and stir. Set aside and let soak.

In the meanwhile, in a large mixing bowl add egg and whisk for 15 seconds. Add applesauce, maple syrup, avocado oil, vanilla extract, cinnamon, baking powder, baking soda and salt; whisk well to combine.

Add soaked oat bran and whole wheat flour; gently mix until combined. Do not over mix. Stir in raisins, cranberries, coconut flakes and nuts.

Distribute batter evenly between 12 openings of a tin (I used regular ice cream scoop) and bake for 22 minutes or until a toothpick inserted in the centre comes out clean. Let muffins cool for a few minutes and transfer to a cooling rack to cool off completely.

These healthy fudgy brownies are made with only three ingredients! They&#x27;re vegan, gluten-free, paleo, and budget-friendly.

3-Ingredient Fudgy Brownies

bananas (extra ripe)

organic creamy almond butter (salted or unsalted)

cocoa powder

Heat oven to 350-degrees

In a large mixing bowl, mash bananas until lump-free.

Mix in the almond butter, and cocoa powder.

Grease a baking sheet, and evenly distribute the batter into the pan.

Bake 17-20 minutes. Use the toothpick method to determine if they&#x27;re done.

Let the brownies chill in the refrigerator for 45-minutes.

Store in the refrigerator for best results.

This healthy veggie chilli makes for a quick and satisfying supper, crammed with pulses and colourful fresh vegetables

Heat the oil in a large pan. Cook the garlic, ginger, onion, courgettes and peppers for about 5 mins until starting to soften. Add the chilli powder and cook for 1 min more.

Stir in the lentils, tomato purée, tomatoes and 250ml water. Bring to the boil and cook for 15-20 mins.

Add the sweetcorn and beans, and cook for a further 10 mins.

If you are a bit turned off by green salads then this is your recipe! It is super packed with protein, and it will be your perfect work lunch, quick meal on the go, and potluck favorite!

Southwest Quinoa Salad

quinoa

black beans,

garbanzo beans, drained

½ cup of finely diced red onion

red bell pepper

halved cherry or grape tomatoes

cilantro

Salt, (about 1 to 2 teaspoons)

lime (optional)

In a large bowl, combine all the ingredients.

Chill to let the flavors meld.

This kiwi fruit chia seed jam is perfectly sweet and tasty.

Kiwi Fruit Chia Seed Jam

kiwi (peeled)

lime juice

Tbsp chia seeds

Peel and cut your kiwi into chunks. You can also slice and scoop the kiwi.

Mix the peeled kiwi fruit along with the lime juice and maple syrup in a saucepan over low-medium heat.

As the mixture heats, use a potato masher to break the kiwi up. Allow the mixture to heat, stirring occasionally for about 15 minutes. It should become thicker and syrup-like.

Mix your chia seeds into the mixture and remove from heat.

Allow the mixture to cool for about 15-20 minutes. Then, scoop it into your jar or container of choice to set in the fridge.

This jam tastes best when it is allowed to cool and set overnight. But, you can enjoy it right away! It will thicken up a bit as well.

Oil free Vegan Fresh Herbs Ratatouille

eggplant (sliced)

zucchini (sliced)

tomatoes (sliced)

½ tsp thyme (dried & chopped,

tbsp dill (fresh, chopped)

tbsp flax seeds (ground)

Preheat the oven to 350°F/ 180°C.

Place the sliced eggplant and zucchini in a bowl. Add pressed garlic, soy sauce, oregano, thyme, dill, ground flax seeds, and salt. Stir well.

Layer the vegetables in a baking pan, starting with a slice of zucchini, eggplant, tomato, onion. Sprinkle with salt.

Bake for 50 minutes, you may cover the dish with foil.
