This Healthy Cornbread Recipe takes about 5 minutes to stir together and bakes up light, fluffy and nutritious! It is 100% whole-grain and lightly sweetened with honey.

Healthy Cornbread

cornmeal

whole wheat flour

baking powder

baking soda

salt

buttermilk *see ingredient note

honey

neutral cooking oil oil

Preheat oven to 350 degrees F. Coat an 8 by 8-inch baking pan with cooking spray.

Whisk cornmeal, whole-wheat flour, baking powder, baking soda and salt in a medium bowl. Make a well in the center.

Whisk egg in a medium bowl. Add buttermilk, honey and oil and whisk until thoroughly combined.

Pour wet mix into the well in the dry mix and stir together until evenly moistened.

Bake until the top springs back when lightly touched and a toothpick inserted in the center comes out clean, 28 to 30 minutes. Cool 20 minutes, slice and serve warm.

I made this last Sunday with our dinner and it turned out perfect. It was so moist and flavorful. Saving for Thanksgiving.

So easy to make, and we absolutely loved the sweetness of the honey in this bread! Delicious with lots of butter and a drizzle of honey on top! Reheats well too!

I have never had cornbread before, but this looks easy to make. And delicious too.

Healthy Cornbread Recipe (whole wheat)

maple syrup

skim milk

olive oil

Preheat oven to 400°F. Spray a 8- or 9-inch pie plate with nonstick cooking or baking spray.

In a medium mixing bowl, whisk together maple syrup, milk, olive oil and egg whites.

On top of wet ingredients, add dry ingredients and whisk together until combined. Don’t overmix.

Pour batter into prepared pan. Bake for 20-25 minutes or until golden brown and a knife inserted in the center comes out clean.
