These whole30 stuffed bell peppers combine ground beef, veggies, and marinara sauce for an easy and healthy allergy-friendly dinner any night of the week.

Whole30 Dairy-Free Stuffed Peppers

Tbsp. Coconut, Avocado, or Olive Oil

Lb. Ground Beef (preferably organic and grass fed)

Medium Onion (diced)

Bell Peppers (any color)

Cloves Garlic (minced)

Zucchini (finely chopped)

Mushrooms (chopped)

Salt and Pepper (to taste)

Cup + Extra For topping Marinara Sauce

Cheese,

Preheat oven

Bake bell peppers

Cut the tops off of the bell peppers and take out the seeds. Place cut side down on a large baking sheet and bake for 10 minutes.

Heat oil

Heat the oil over medium heat in a large skillet.

Cook onion and beef

Once hot, add the onion and ground beef and cook until browned. Drain off fat if desired.

Add veggies

Then, add the mushroom, garlic, and zucchini. Saute until veggies are tender, 5 - 8 minutes.

Season

Add marinara

Stir in 1 Cup of marinara sauce and mix to combine. Taste and add more salt and pepper if needed.

Add filling to peppers

Arrange bell peppers in a medium-sized baking dish and spoon the filling into each bell pepper. Spoon additional marinara sauce over each bell pepper to keep them from drying out. Then, lightly sprinkle with dairy-free mozzarella cheese if desired.

Spicy Southwest Whole30 Stuffed Peppers

lb turkey

spinach

tsp ground pepper

cayenne

paprika

tsp chili powder

tsp garlic

tsp cumin

whole peppers

Tbsp crushed pine nuts

Preheat oven to 425 degrees.

Cook the ground turkey.

While the ground turkey is cooking, cut the peppers in halves and clean out the middle of each one.

Set one pepper aside and finely chop.

When the turkey is almost finished cooking, add in the spinach and finely chopped pepper.

Add in the ground pepper, cayenne, paprika, chili powder, garlic, and cumin.

Stuff each pepper half with the turkey mixture and top with pine nuts.

Bake for 20 minutes (or until peppers are nearly soft).

Serve hot and enjoy!
