This recipe is out of this world. I made it for the first time a couple weeks ago. This one is a definite keeper. It turned out fantastic and directions were so easy to follow. Thanks for a great recipe I will use over and over again

It was delicious! My family loved it.  There wasn't enough sauce, however. Next time I'll triple the sauce and use 12 oz mushrooms. I warmed the cream and didn't have any curdling. Added cornstarch to thicken sauce but don't think that was really necessary. Served it with pasta and peas on side.

This is amazing. I used the suggestion to add a couple tablespoons of the hot liquid to the cold cream. Also used ginger ale instead of white wine or cider vinger ( didn’t have any). I would add 1/2 cup chicken stock and 1/2 cream for more liquid. I like lots. It was soooo good. I added some adobo for extra flavor. This will go into the family cookbook.

Leave the lemon out! We would no doubt give this four or five stars without the lemon.

I’m 15 and was able to make this for my mom and dad! We all loved it and agreed we’d have to make it again!

This is perfect the way it is . Been stuck inside here with this virus thing floating around so i had to substitute some things for lobys and steamers but it takes up the same space on a plate , sooooo

When adding the cream it curdled somewhat. Nice flavor but I’ve had better. Would like to ya e had the calories for this dish as my husband always keeps count. Also to help recipe I added capers- which really helped the dish

I have made this twice and the second time I just couldn't get the sauce to thicken.....I was afraid to cook it any longer for fear there wouldn't be any sauce left....any suggestions on how to thicken it??

This chicken scallopini is out of this world!  I am the opposite of a natural cook.  Normally, I hate cooking but this recipe looked so good and it really delivered!! First time and it was spectacular!!

This Chicken Scallopini Will Make You Feel Like A Masterchef

Nothing   compares to rich brisket. This brisket and wine sauce recipe from JOY of   KOSHER couldn't be easier to prepare and is a guaranteed crowd-pleaser.

Brisket in Wine Sauce

(2½-pound) beef brisket, thick-cut

paprika

basil

salt

onions,

garlic cloves,

ketchup

dry red wine

water

Scallops of Veal in Madeira Sauce

veal scaloppini slices, about 1/4" thick

Madeira wine

lemon juice

salt and pepper

beef broth

button mushrooms sliced fresh

cornstarch

not set

Seasonal vegetables get front-row attention in this vegetarian spaghetti with wine sauce. A versatile, vegetarian weeknight meal in 30 minutes with grilled or roasted veggies that you can make ahead.

Vegetarian Spaghetti with Wine Sauce (30 Minutes)

salt and black pepper

dry spaghetti, Note 1

garlic

red pepper flakes (medium spicy) (optional)

white wine (e.g. Sauvignon Blanc, Pinot Grigio or Chardonnay)

butter ((or vegan butter))

kosher salt (start

ground pepper

Parmesan cheese, Optional

parsley

HEAT GRILL to Medium-high to High heat (about 475-500F/246-260C).  Spray grill basket with oil. Note 2 for option with no grill or grill basket.

GRILL VEGETABLES (see Note 2 to roast veggies): Place chopped vegetables in grill basket. Drizzle with oil and sprinkle with salt and pepper. Toss to coat evenly. Place basket directly on grill for 9-12 minutes, stirring occasionally, until veggies are slightly charred and tender the way you like them. I find if your basket is on the smaller side, the vegetables may take a bit longer to cook. Set aside.

BOIL PASTA: Boil pasta in salted water according to package directions. Drain AND reserve 1/2 cup/188 ml pasta water to thin it to the consistency you like, especially if you are adding Parmesan. TIP: Try to time cooking the pasta to be ready when sauce is ready. If not, set aside and keep warm.

MAKE SAUCE:  While pasta is boiling and veggies are grilling, heat oil on medium-high in a large pan or skillet. Add garlic and chili flakes and stir for a minute. Add the 1/2 cup of wine (118 ml), salt and pepper. Cook for 2-3 minutes. Turn off heat. Add butter in pieces and stir just until melted.

ASSEMBLE AND SERVE:  Add pasta and toss. Add Parmesan cheese if using (reserving a little for passing if desired). Use reserved pasta water to thin it out if needed. Add parsley and grilled vegetables. Toss all together. Taste and adjust seasonings. Serve.

Ravioli in Creamy Parmesan Sauce

mushroom ravioli (or with your favorite filling)

unsalted butter

cream 20% fat (or half-and-half, at room temperature)

Parmesan

dry white wine (or chicken broth)

tsp black pepper

¼ tsp red pepper flakes

sage leaves

walnuts (roughly chopped)

Get all the prep done before you start cooking: mince the garlic and chop the walnuts.

Bring a large pot filled with salted water to a boil.

Heat oil in a skillet over medium. Add walnuts, toast until fragrant, about 2 minutes. Add sage leaves, cook until crispy, about 1 minute. Transfer to a plate layered with paper towel.

Reduce the heat to low and add butter. When butter is melted, add garlic and cook until soft and fragrant, about 1 minute. Stir in lemon juice. Add white wine and simmer for 2 minutes. Season with salt and pepper.

Pour in cream and bring to a boil, let simmer over low heat for 3 minutes. 

In the meantime, add ravioli to the pot with boiling water and cook, for about 3 minutes. Drain, reserving 1/4 cup cooking water.

tossing

Add Parmesan to the cream sauce, stir until combined. Simmer for 1 minute. Add ravioli and gently stir to coat ravioli with sauce. Add a splash of cooking water to thin out the sauce, if needed. Taste and adjust salt.

serving

Serve topped with walnuts, crispy sage, red pepper flakes and some extra black pepper. Enjoy!

Made it twice already, absolutely fantastic, very tasty with the walnuts and sage.
Used 200ml cream otherwise it wasn’t thick enough, but maybe it needed more simmering!

Had to throw out this attempt. The lemon addition prior to adding the half and half was the problem. Shouldn’t the lemon be added to the end since it doesn’t fair well to heat and loses the fresh flavor.

This was excellent. I subscribe to the NYT cooking and have yet to find such a divine recipe. Thank you! I will be trying more of your recipes in the future
