Wisconsin Brandy Old Fashioned

orange

maraschino cherry + 1 teaspoon cherry juice

sugar cube

Angostura bitters

brandy

Lemon-lime, grapefruit soda or seltzer water

In an old fashioned glass, muddle orange slice, cherry, cherry juice, sugar cube and bitters.

50/50 and squirt are just fine, but let's not forget Jolly Good sour pow'r!

The mid-West seems to be the place to find an unusual burger! Well how about trying the Wisconsin Butter Burger!

Wisconsin Butter Burger

Salt and Pepper

Start with some good, angus beef. Use about 1/4 pound for each burger. Make a ball of beef. Press about 1 tablespoons of butter into the center and form a flat patty around it. Season the outsides with salt and pepper.

Add 2 Tablespoons of butter to a heavy skillet. Sauté the onions until they are just translucent.

Add the patty on top of the onions and cook that baby up, turning once, to the desired doneness (we like rare). Make sure you get some of the onions with the burger.

Brush the buns with 2 Tablespoons of melted butter and toast them on a grill or in the oven. Place a big slice of cheese on the bottom of the bun and top it with the burger. Add some condiments (the original has stewed onions and that recipe is a family secret).

Have a milk shake on the side and dig in! Pure, buttery, goodness.

How to Grill Brats to Perfection

Light charcoal and spread it evenly across the bottom of one-half of the grill. If using propane, light burners only on one side of the grill.

Place grill grates over the charcoal and oil grates with paper towel soaked in vegetable oil to prevent sticking.

Place brats on grates directly over charcoal and grill on each side until browned. If the casing bursts or burns move brats further from the coals to reduce cooking temperature.

Turn the brats every couple of minutes to prevent burning, moving them further away from the hot coals if needed, and cook brats for 15-20 minutes or until internal temperature reaches 160 degrees. Cooked brats are firm to the touch.

Keep bratwursts warm in a Brat Bath until ready to serve.

Serve on buns with onions, sauerkraut, and brat sauce.

Fairy Food 

corn syrup

sugar

white vinegar

baking soda

10-15 oz chocolate candy coating

Wisconsin Fairy Food

Line a large sheet pan with parchment paper, then set aside.

Add corn syrup, sugar, and vinegar to a medium-sized saucepan and stir to combine. Place pan over medium-high heat and do not stir. Bring temperature to 300 degrees F.

Remove pan from heat and and mix in baking soda until mixture begins to expand.

Transfer to the prepared baking sheet and allow mixture to pool out, don’t worry about spreading it out.

Allow candy to fully cool, then break into small pieces.

Place chocolate coating in a small bowl and microwave in 30 second increments until fully melted. Dip candy in chocolate and place back on parchment to set.

Once fully set, store in an airtight container.
