Keto Tortilla Recipe with 0 Net Carbs

2.5 Cups (250 grams) Shredded mozarella

Tablespoons (50 grams) Oat fiber

Prepare ingredients

Prepare your ingredients to make amazing keto and gluten-free tortillas. That is oat fiber, eggs, and mozzarella.

Heat up mozzarella

On your stove, heat up to mozzarella on medium heat. Using a wooden spoon, gently stir from time to time for all of the cheese to melt. Keep heating up until you have a smooth melted cheese.

Add oat fiber and eggs

Switch the heat off and add oat fiber. Blend it in. Add eggs and mix thoroughly. Keep mixing until you get a combined uniformed smooth dough. If you feel mozzarella needs to be melted again, switch the heat on low and keep blending.

Work out the dough

Once you have the dough similar to my in the video, place it all on a silicone rolling sheet and using your hands keep working the dough. As you see on the video, I stretch and fold the dough several times. Keep stretching and folding until you get a really smooth consistency. The process might take somewhere between 5 to 8 minutes.

Shape tortillas

Once you are happy with the consistency, split your dough into 8 pieces. That is how many I managed to make. If you want to make smaller or larger tortillas, decide on the amount. Using a roller, roll one piece into a round flat sheet. Shape your tortillas using either a round, sharp bowl or anything similar. Place each wrap onto a baking sheet covered with parchment paper. At this time, you can heat the oven to 350 Fahrenheit or 180 Celsius. Once you have all the tortillas ready, place them into a preheated oven and bake the tortillas for 8 to 10 minutes until you see the edges starting to brown. I managed to fit 4 tortillas on each baking sheet.

How to Make Keto Stabilized Whipped Cream

gelatin

tsp vanilla extract

tsp xanthan gum

Place the gelatin and cold water in a microwave-safe bowl. Let stand for two minutes.

Place gelatin in a double boiler or microwave for a 10-sec interval until all the gelatin granules are dissolved.

Set aside to cool but not set. This is very important. Take note that the gelatin is completely dissolved - no visible gelatin granules and no cloud. If you have any foam on top skim it out with a spoon. Otherwise, piping the whipped cream will be an issue later.

Pour the whipped cream into a mixer bowl with the sweetener and vanilla.

Once the cream has reached between soft and stiff peaks - add a tablespoon or two of whipped cream to the gelatin to equalize the temperature. (This is called tempering the gelatin)

Now pour the gelatin mixture into the mixer bowl and continue to whip.

Do not overbeat at this point. You will see the cream will hold stiff peaks.

This whipped cream can be used immediately.

I have never heard of stabilized whipped cream. Mine always deflates. Thanks - this worked perfectly.

Prepare all of the ingredients, you are going to need.

Instant Pot and oil

Switch your Instant Pot on stew and let it heat up. When you finish heating up, add olive oil.

Onions and Garlic

First, add all of your chopped onions and let them cook until golden brown. Once they are done, add chopped garlic and let it simmer for a while.

Beef

Cut your beef into similar sizes. Add the beef into the Pot. With a gentle and regular mixing, brown the beef and let the meat crust on the outside from all sides.

Instant Pot OFF

Switch the Instant Pot off. This step is crucial; otherwise, your paprika spice will burn and taste bitter. 

Paprika and Turmeric

Once the Instant Pot is switched off and the meat has cooled for about a minute, add paprika and turmeric. Mix it thoroughly, ensuring all the meat gets coated with paprika and turmeric spices.

Vegetables

Add the chopped mushrooms, carrot, and parsley, and mix the beef and vegetables.

Bone Broth

Add bone broth and scrape the brown bits from the bottom of the Pot.Depending on what you are planning to cook, add the amount accordingly. Soup – 1 liter (4 Cups) of bone broth. Stew – half a liter (2 Cups) of bone broth. 

Pressure Cook

Close the lid. Make sure the valve on the top is closed. Switch on the pressure and cook on high for 25 minutes. Once it's done, let the pot release the pressure gradually. Sprinkle with freshly chopped parsley or dry onions and serve.

Gluten Free Cinnamon Roll Recipe

Grease a 9-inch x 13-inch casserole dish and set it aside.

In the bowl of a stand mixer fitted with the paddle, whisk together the flour, xanthan gum, tapioca starch, milk powder, yeast, cream of tartar, baking soda, and sugar. Add the salt and whisk again.

Add the vinegar, butter, egg, and milk, and mix to combine.

Increase the mixer speed to high and beat for about 3 minutes, until the dough is smooth and pulling away from the sides.

Transfer the dough to a sealed container and refrigerate for 30 minutes to make it easier to handle.

Make the dough

Turn the chilled dough onto a lightly floured surface and knead gently to smooth.

Divide in half, keeping one half covered. Roll the other into a 9x12-inch rectangle about ½ inch thick, dusting with flour as needed.

Roll out the dough

Spread half the softened butter over the dough, leaving a 1-inch border. Sprinkle with half the brown sugar, pat it down, then sprinkle with cinnamon.

Starting from a short side, roll the dough tightly into a coil. Slice into 6 rolls using floss or a sharp knife.

Place in a greased 9x13-inch pan, 1 inch apart. Press each roll down about ⅓ of the way to flatten slightly.

Repeat with the second half of the dough and filling.

Add the filling and shape

Cover the pan with lightly oiled plastic wrap. Let rise in a warm spot until the rolls are about 50% larger—about 45 minutes.

Let rise

Preheat oven to 350°F.

Remove plastic wrap and bake for 20 minutes, until risen, lightly golden, and baked through.

Let cool for 5 to 10 minutes before icing or frosting, but no longer.

Bake

Whisk together confectioners’ sugar and milk until thick but pourable. Add more milk ¼ teaspoon at a time if needed.
