Golden Century's pipis in xo sauce is a cult classic, we're showing you how to make it.

Pipis in xo and 'nduja

(60 milliliters) sunflower oil

green shallots, chopped

garlic shoots, chopped

(10 grams) ginger, finely chopped

’nduja (spreadable spicy salami)

21/2 tbs good-quality XO sauce

tsp each cornflour and caster sugar

Chinese rice wine (shaohsing – from Asian food shops)

1kg pot-ready pipis

XO crab fried rice recipe

vegetable oil

tsp sesame oil

onion, halved, thinly sliced

garlic cloves, finely chopped

eggs, whisked

picked crab meat (such as blue swimmer

jasmine rice

xo sauce

20.00 ml light soy sauce

tsp oyster sauce

Lebanese cucumber, thinly sliced

Coriander sprigs and sliced long red chilli, to serve

皿うどんの麺 3人分

※具は牡蛎、ｲｶ団子、干椎茸など 好きなものを♪

■水 800cc

■だしの素 大さじ1

■混合削り節(鰹＋サバ) 一掴み

■玉葱(みじん切り) 1/4個

■生姜(すりおろし) 小さじ1

■オイスターソース 大さじ1

■みりん 大さじ1

■XO醤 大さじ1弱

■白胡椒 小さじ1/2

■黒酢 大さじ1

水溶き片栗粉 適量

香菜(パクチー) 適量

沙茶醤 適量

豆板醤 適量

黒酢 適量

初麺線。美味しい^_^本場で食べたい^ ^

カツオ出汁のお味がしっかりとついていて、おいしくいただきました。

モツたっぷりで。台湾で食べた味と似ていて美味しかったです。

香菜たっぷり、沙茶醤入れると一気に台湾風味に！美味しかったです！

台湾で食べた味を再現できて感動です！ありがとうございます♪

スープを作るため、■の調味料をお鍋に入れ、煮たたせる。 
(自分好みの味に調整してください！)

スープの味が決まったら、豚ﾓﾂを入れ、
10分程弱火で煮る。

スープの中に皿うどんの麺を加え、くたくたに馴染むまで
5～10分くらい煮る。

火を中火にし、
水溶き片栗粉を加え、トロミを調整しながら煮る。 
(ダマにならないように常にかき混ぜること！)

トロミが馴染んだら器に盛り、パクチーとお好みの調味料をトッピングして完成～☆★
