Easy Thai Yellow Curry Paste

shallots

garlic

ginger

5-20 whole dried Thai chili peppers** (they’re very small and usually found in the spice section)

salt

turmeric

curry powder

coriander

lemongrass paste (I use Gourmet Garden which they sell at my regular grocery store)

cilantro leaves

Prep the aromatics

Peel the shallots &#8211; then drizzle with oil and wrap in foil. Peel the ginger and cut into thin slices. Arrange in a single layer, drizzle with oil, and wrap in foil. Pull the outer paper off the garlic. Cut the pointy tops off the heads of garlic so the cloves are partially exposed. Drizzle with oil, and wrap each head of garlic in foil.

Bake the aromatics

Place all the foil packets on a baking sheet. Bake for 15 minutes. Remove the ginger (it should be soft), increase the temperature to 400, and roast the shallots and garlic for another 30 minutes until golden brown and very fragrant. When cooled, you can squeeze the garlic cloves out of the rest of the paper.

Soak the chilis

While the aromatics are roasting, pour boiling water over the chili peppers to rehydrate them. Let them soak for 15 minutes. Drain the water.

Make the paste

Put everything in a food processor or very strong blender. Pulse or puree until the yellow curry paste reaches your desired consistency. The recipe should make about 1 1/2 &#8211; 2 cups of curry paste, and I use about 1/3 cup or more in each of my yellow curry recipes, so usually I can get 4-5 batches of curry out of this yellow curry paste recipe. The paste keeps for about a week in the fridge and it freezes well!

This was really good! I'm not someone who normally leaves reviews on recipes, but here were my thoughts. I couldn't find lemongrass paste so I used fresh lemongrass. I've never used lemongrass before so I had to research how to buy one and how to prepare it. It really wasn't that difficult and would recommend anyone to try using it if they can't find the paste. The only challenge was knowing how much to get to make 3tbsp; I didn't get enough but lesson learned and the flavor wasn't negatively affected. I also couldn't find dried Thai chili peppers but my Asian grocery store had fresh Thai peppers for very cheap ($2/lb). They had both red and green and I didn't know which one to get until I saw the video. I chickened out and only did 5 peppers but it was way too mild. Which is fine I had lots of extra peppers so I cut the stems off and knocked the seeds out. Then I added an extra 5 whole peppers to the pot while my curry simmered. I took them out before serving. The extra 5 peppers made the heat just noticable, I could have done more still. I won't be getting 4-5 meals from this, I think I'll get about 3 which is perfectly fine. Ohh and I only did 1 tbsp of salt because "you can always add more...". The paste did freeze wonderfully and I used it frozen in my meals. Overall I'm very impressed and have added this to my collection of favorite recipes.

This is amazing! I always thought making my own curry paste would be difficult, time consuming and expensive, but this sounds so doable! I'm a huge red curry fan, so I'm jazzed to try this! Thanks for the creativity and congrats on your TV spot!

Brb too busy pinning EVERY picture in this post! I am always wary of buying storebought curry pastes or powders, because I always feel like I'm making ramen or boxed mac and cheese when I tear open the little packet and shake it into what should be homemade curry. This is an awesome base recipe to have on hand! :)

Thai Yellow Curry is one such magnificent example, with its rich yellow colour, incredible depth of flavour and a heady combination of both fresh and ground herbs and spices.This is made from scratch with a homemade Yellow Curry Paste. Thai Yellow Curry (from scratch!)

lemongrass stems ((Note 3))

garlic (, roughly chopped)

tbsp Thai shrimp paste in bean oil ((Note 7))

tsp coriander

tbsp vegetable oil ((or canola or peanut oil))

potato

carrot (, peeled, sliced into 5mm / 0.2" slices on the diagonal)

chicken stock (, low sodium)

coconut cream ((Note 10))

fish sauce

tsp white sugar

tamarind puree ((Note 12))

bamboo shoots (, canned, drained, loosely packed (Note 14))

Thai basil leaves ((highly recommended, Note 15))

Red chilli (, finely sliced (optional, use large for not spicy))

tbsp Crispy fried shallots ((optional, store bought, Note 16))

Jasmine rice

Soak dried chillis: Roughly chop chillies and transfer to bowl, leaving behind seeds. Cover with boiling water and soak for 30 minutes then drain (reserve soaking water).

Prepare lemongrass: Remove woody top half and outer layers of lemongrass. Grate with microplane. (See in post or video for preparation demo)

Make curry paste: Place chillis, lemongrass and all remaining curry paste ingredients in a jar just wide enough to fit a stick blender. Add 3 tablespoons chilli soaking water. Blitz with stick blender until smooth so there&#39;s no hard grit - rub between your fingers to check - about 15 seconds on high. (Or use small food processor or Nutribullet, scraping down sides well).

Curry Paste:

Cook off curry paste: Heat oil in a medium heavy based skillet over medium heat. (Mine is a 26cm / 10.5&quot; Lodget cast iron) Add curry paste and cook for 3 to 4 minutes until it dries out a bit a smells fragrant.

Reduce stock: Add chicken stock, stir to dissolve paste, then simmer for 1 minute.

Cook curry:

Add remaining curry sauce ingredients: Reduce heat to medium low. Add tamarind, fish sauce and sugar. Stir until tamarind is dissolved. Then stir in coconut, carrot and potato.

Simmer: Bring to simmer, then simmer gently for 15 minutes or until potato is almost fully soft. Pierce with knife to check, it might take 20 minutes.

Prawns and bamboo shoots: Add prawns and bamboo shoots. Stir, then cook for 3 minutes until prawns are just cooked.

ADJUST sauce: Taste and adjust the curry sauce at this point. Thin sauce with stock or water, add salt, fish sauce or sugar if needed. See Note 17.

Serve! Transfer curry to serving bowl. Garnish with Thai Basil, fresh chilli and crispy shallots. Serve with jasmine rice.

Thai Yellow Curry with Beef and Potatoes - made from scratch! Perfect creamy comfort food with huge flavor and a kick of spice.

Thai Yellow Curry with Beef and Potatoes

red Thai chiles

water, divided

coconut cream (canned)*

Yukon gold potatoes, cut into bite-sized pieces

shallot, thinly sliced

brown sugar

CURRY PASTE (one hour)

Heat a cast-iron pan over medium high heat. Wrap the garlic and shallots in foil (with their paper on) and place on the skillet for 25 minutes, flipping once half way through. Remove from heat and cool, and roughly chop. Set aside. Layer the ginger and galangal in a single layer and wrap with foil. Place in the skillet and heat for about 10 minutes flipping once halfway through. Place garlic, shallots, ginger, galangal, and all other ingredients for the curry paste in a blender or food processor. Pulse until mostly smooth. Use water from the chiles to help the mixture run through the blender as needed. This will make a little more than 2 cups &#8211; set 3/4 cup aside for this recipe and freeze or refrigerate the rest for later.

BEEF (one hour)

Heat the light coconut milk in a deep pot. Add the beef and simmer for 45 minutes. Add 1 cup water and simmer another 15-20 minutes. Set aside; do not drain.

CURRY (one hour)

Heat the coconut cream in a deep pot until bubbling and starting to thicken a bit. Add about 3/4 cup curry paste and simmer for 5 minutes. Add the potatoes, shallots, beef, and 1/2 cup of the reserved coconut milk from step two. Stir in 3 cups water. Simmer for 30-45 minutes until potatoes are tender. Add the sugar, fish sauce, cilantro. Serve over jasmine rice.

Goat curry is actually really delicious; better than Lamb some would say (like me) - Cook it as a Rogan Josh, Korma, or Chettinad

A recipe after my own heart!
I love making my own curry pastes... you only have to do it every once in a while (in a big batch!) and then I usually freeze the leftovers in an ice cube tray so I have little pieces ready to go to toss into whatever I'm making. I would totally make this any day of the week! Can't wait to give it a go.

Ice cube trays are great  for freezing sauces as well as fresh squeezed limes or lemons or ice cubes with grated citrus peel, then remove cubes store in containers in freezer zip lock bags or tubs,1 full cube is about 2 tablespoons,but measure yours to be sure

Making authentic Thai yellow curry paste is more simple than it sounds. The bright yellow color with the bold taste of the curry paste requires a few aromatic spices, fragrant herbs, and Thai seasonings will give your homemade paste the most delicious and fresh paste for your Thai curry recipes.

Authentic Thai Yellow Curry Paste, แกงกะหรี่

whole white peppercorn

tablespoon coriander seeds

tablespoon cumin seeds

tablespoon fennel seeds

turmeric turmeric powder

galangal, chopped small

lemongrass, finely chopped

tablespoon garlic, chopped small

shallot, diced small

lime lime leaves

shrimp paste

-2 teaspoon water *as needed only

Remove the stems and seeds of the chilis then soak all the chilis in warm water for 15-20 minutes or until soft. Or microwave the chilis with water on high for 3 minutes. Carefully drain the hot liquid, pat dry the chilis and use a&nbsp;kitchen scissors to cut the soaked chilis into 1-inch pieces, and place them in the mortar.&nbsp;

On a small skillet, toast white peppercorn, coriander, cumin and fennel seeds on medium heat until fragrant. One you hear a few seeds popping&nbsp;from the pan, turn the heat off and remove from the pan, let cool. Once cooled, use a spice grinder to turn it into powder. Set aside for pounding in a minute.&nbsp;

Add all the ingredients into a small food processor and blend until your paste is smooth.&nbsp;&nbsp;Add a very tiny amount of water if your paste is too dry. You shouldn't need to, but don't use more than two tablespoon for the recipe.&nbsp;

Remove the paste for use. Done!&nbsp;Store unused paste in a glass jar, in the fridge for up to 10 days, and the freezer for up to 3-4 months.&nbsp;

In a food processor

Add the chilis and salt into a mortar and pestle and pound into a paste.&nbsp;

Add galangal, lemongrass and kaffir lime zest, keep on pounding!

Add garlic and shallot, you guess it, pound pound pound into a paste. (;

Add turmeric and the ground toasted spices, keep going, almost done!

Last one, add the shrimp paste and pound everything well until nice paste forms. Remove the paste and use it immediately for a curry. Refrigerate for up to 10 days. Refrigerate for up to 10 days. You can freeze the paste for up to 4-6 months.&nbsp;

Thai Yellow Chicken Curry

tbsp avocado oil

chicken

onion (12 ounces)

carrots (about 12 ounces)

potatoes

tbsp yellow curry paste

full fat coconut milk

tbsp lime zest (or 2 kaffir lime leaves if available)

lime juice (or to taste)

peanut butter (or to taste, or cashew butter

tbsp fish sauce (optional)

tsp sea salt (more or less to taste if you use the fish sauce)

baby spinach (4-6 ounces, chopped)

fresh cilantro

To prepare the onion, slice off both ends, then cut the onion in half from the top to the bottom. Peel away the tough outer layer, and place both halves flat side down on the cutting board. Then cut across the rounded top into 1/4&quot; thick half-moon slices. Set the onion aside along with the thinly sliced carrots, and assemble the rest of the ingredients.

Place a 12&quot; skillet or medium-sized pot, (5 1/2 quarts) over medium-high heat. When the pan is hot, add the avocado oil and cubed chicken thighs. Sauté the chicken until it&#39;s just done and browned, and remove the chicken from the pan and set it aside.

Add the onion and carrots to the pan, and cook just until crisp-tender, about 6-8 minutes. Then add the curry paste, potatoes, and turmeric. Stir to combine, breaking up the curry paste, about 1 minute. Finally, add the coconut milk and lime zest.

Bring the mixture to a boil, then lower the heat to maintain a simmer. Cook until the curry has thickened and the veggies are tender, 10-15 minutes.

To finish the curry add the chicken back to the pan along with the lime juice, nut butter of choice, and fish sauce if you&#39;re using it. Stir to combine, then add sea salt to your taste.

Turn the heat off and add the chopped baby spinach. Stir to combine and let the curry sit just long enough for the spinach to wilt, about 3-4 minutes.

Serve the curry with your choice of toppings, and your choice of veggie noodles/rice/cauliflower rice.

This Slow-cooked Coconut Beef Curry is rich, hearty and full of flavour, thanks to tender slow-cooked beef, creamy coconut milk and fragrant spices. It’s a versatile dish that can be customised to suit your spice preference and is perfect for make-ahead meals.

Slow-cooked Coconut Beef Curry

olive oil oil

lemongrass stalk, finely chopped (optional)

brown onion, finely diced

tbsp ginger

(115 g) yellow curry paste (see note 1)

600 ml (20½ fl oz) canned coconut milk (see note 2)

fish sauce (or tamari or all-purpose soy sauce)

jasmine rice

Lime wedges

peanuts

Thai basil, leaves picked (optional)

bird’s eye chilli (optional)

Heat the oil in a large, heavy-based frying pan over medium–high heat.

Cook the beef in batches for 4–5 minutes, turning regularly using tongs, until browned all over. Set aside on a plate.

To the same pan, add the lemongrass, onion, ginger and garlic. Cook, stirring, for 2–3 minutes until fragrant.

Add the curry paste (see note 1 for spice levels) and cook, stirring, for 30 seconds.

Stir through the coconut milk, sugar and fish sauce. Return the beef to the pan and bring to a simmer.

Reduce the heat to low, cover and simmer for 2 hours. Check the sauce at the halfway point, adding ½ cup (125 ml) of water if the sauce is catching on the bottom of the pan. At the end of the 2 hours, the beef should be soft enough to break apart with a fork, if not, continue cooking in 30-minute intervals.

Once the beef is tender, remove the lid, increase the heat to medium–high and simmer, uncovered, for a further 15 minutes or until the sauce is thickened to your liking (see note 3).

Remove from the heat and stir through the lime juice.

Serve with jasmine rice, extra lime wedges, crushed peanuts, and the Thai basil leaves and chilli (if using).
