📋 Yellow Rice Recipe

long grain rice (white

olive oil

butter (optional)

½ teaspoon onion powder (can use white onion, minced)

garlic powder (can use fresh minced garlic)

ginger powder (can use fresh minced ginger)

turmeric

Salt & pepper

Cilantro or parsley

Rinse rice. Place rice in fine mesh strainer or a bowl and rinse it for several times. Rinse by scrubbing rice gently with finger tips.

Heat olive oil in deep bottom pan on medium heat. Add rinsed rice to oil and give a quick stir.

It’s important to saute spice powders in oil to help in bloom. Sauteing spice powders also enhances the taste of the dish. I do not saute spice powders in hot oil directly, but rather add it along with rice or other ingredients like onion, garlic. That way spices won’t get burnt but bloom.

Add onion powder, ginger powder, garlic powder to rice. Saute it for 30 seconds.

Later add turmeric powder, salt and pepper to taste. Saute for 30 seconds more.

Reduce heat to low. Pour in stock or water. Stir well.

Cover pot with lid and let it cool for 15 minutes. Note cooking time mentioned here is for long grain white rice. If you switch to long grain brown rice you have to increase the liquid and time to cook.

Remove from stove, stand 10 minutes with lid on.

After 10 minutes, open lid. Add butter to rice. Butter is optional, but it helps in keeping rice soft and adds rich taste to the dish.

Using silicon spatula fluff rice stirring butter into it.

Garnish yellow rice with cilantro or parsley.

Serve as side dish with curries, seafood or any grilled meat.

Pilau Rice Recipe

vegetable oil

green cardamom pods, crushed

cinnamon stick, approximately 10cm (4in) long

onion, finely chopped

garlic clove, crushed

(2 cups) basmati rice

(1 tsp) ground cumin

(1 tsp) ground turmeric

cloves

bay leaves

water

Heat the oil in a large saucepan and gently fry the cardamom and cinnamon until the spices’ aromas are released, which should take about 5 minutes. 

Add the onion and gently fry for around 5 minutes, or until it has softened and has become translucent.

Add the garlic and stir fry for another 2 minutes.

Tip in the rice, cumin, turmeric, cloves and bay leaves. 

Stir vigorously then pour in the water. 

Turn up the heat, give it another stir then wait for a slow simmering point to be reached. 

Once it slowly simmers, cover the saucepan with a tight-fitting lid and cook for about 15 minutes or until the rice is cooked. 

Fluff up the rice with a fork and serve immediately with your favourite curry. Enjoy!

Drain rice and set aside.

In a pot, over medium heat pour the tap water and bring to a rapid boil.

Add turmeric, oil, spices you are using then rice.

let it cook for another 6-7 minutes then drain rice.

In the same pot add ghee then sauté onion for 2 minutes until it turns light yellow.

Add rice back, salt and the boiling water.

Reduce heat to minimum, cover the pot with a paper kitchen towel then put the lid on. Note4

Keep on cooking for another 10-15 minutes until the rice is cooked.

This is also a fantastic way to use up any leftovers especially in holidays. Think turkey, steak, chicken or may be even green beans and brussel sprouts. Use oil/avocado or coconut oil instead of ghee for a complete vegan side dish.

This authentic, Latin-style yellow rice, or Arroz Amarillo, pairs long grain basmati rice with simple spices and is ready in under 30 minutes.

In a dutch over, or in a large stove pot, heat the butter, turmeric, garlic, cumin, and cinnamon over medium heat until the butter has melted.

Once the butter's melted, stir the spices into it and add the rice to the pot, stirring again until the rice is evenly coated and cooking over medium heat for about 2 minutes, lightly toasting the rice and spices.

Pour the chicken broth into the pot and add the bay leaf.

Put the pot's lid on, and bring the pot to a rolling boil, stirring occasionally to prevent sticking to the bottom.

As soon as the broth reaches a full boil, reduce the heat to the lowest setting and let it simmer, covered, for about 20 minutes. Be careful not to stir too often and let the heat escape.

After simmering for 20 minutes, turn the heat off, but leave the lid on and let the rice 'rest' for 10 minutes.

Remove the bay leaf. Fluff the cooked rice with a fork and serve it warm.

Spanish Yellow Rice (Easy Arroz Amarillo)

black pepper (or to taste)

In a Dutch oven or saucepan with a lid, heat oil over medium-high heat. Add onion and green bell pepper. Sauté for 4 minutes.

Add garlic and sliced pimentos. Sauté for 1 minute.

Add rice and saute 1 minute.

Then add tomato sauce, chicken broth (or water &amp; large bouillon cube), Bijol, bay leaf, salt, and pepper to taste (you can start less to fit your taste, maybe ¼ to ½ teaspoon then taste and adjust later- I always use 1 teaspoon and then adjust). Bring to a boil.

Reduce heat to low. Cover and simmer (adjust to your stovetop&#39;s setting- you want a low simmer not too high) until liquid is absorbed and rice is tender, about 25 minutes. DO NOT OPEN THE LID. The steam is what cooks the rice.

Remove from heat. Keep the lid on for another 5-10 minutes.

Always fluff with a fork (don’t use a spoon or spatula), and the rice will be fluffy, moist, and not sticky.
